  • Food plays an important role in Christmas celebrations, and In Sweden it's huge! The Julboard is the Christmas meal served in a buffet style and contains a lot of different dishes, each one with its own history!

    Our Christmas table (at home, not restaurant) normally consists of this:
    1st plate: 3-4 versions of herring on some rye bread and maybe half an egg to go with that (and a "snaps" of course)
    2nd plate: "Gravad lax" (cured salmon), possibly on hard bread (I baked this year's batch yesterday), a fish paté, maybe another half egg with whitefish caviar on it
    3rd plate: Time for some cold meat: The ham is a must, then there is an assortment of 3-4 other smoked meat and sausages
    4th plate: Time for the warm stuff! Janssons frestelse (potatoes, onions, some anchovis and cream, all cooked in the oven), meatballs (that we make ourselves of course), the small sausages you cut at the ends and some pork ribs. Usually I get an extra piece of ham too... Maybe some more cured salmon to go with it, why not? :-)
    5th plate: To round it off, some cheese like Stilton and "Västerbotten" (characteristic Swedish hard cheese), grapes and biscuits
    After that, we somehow survive on chocolate, tangerines, ginger biscuits and sweets for the rest of the day! Every family has their own variations, but the herring, ham and meatballs are probably always there. I have probably forgotten a number of items above. It usually takes us about an hour just to set the table...

    I thought Swedes were only blonde and blue eyed. This guy sort of has a Spanish flavor! Amazing!
