    Ingredients:
    - 1 tablespoon Butter / olive oil/oil
    - 1 large onion, finely chopped
    - 2 cloves garlic, minced
    - 2 cups fresh spinach, roughly chopped
    - 6 cups cubed stale bread (a hearty loaf like sourdough or ciabatta works well) mine 500g
    - 1 cup cooked bacon, diced
    - 1 1/2 cups shredded cheese of choice
    - 6 large eggs
    - 1 370 ml can evaporated milk
    - 1 teaspoon salt or to taste
    - 1 tsp garlic powder
    - 1/2 teaspoon black pepper
    - 1/2 teaspoon mustard powder (optional)
    - Fresh herbs (such as parsley or thyme), chopped, for garnish or dried herbs of choice
    oven to 380°F (180°C) 20 mins
    Air fryer 340°F (180°C) 20 mins NOTE: 12 -13 mins and mine was cooked

      Dan you probably haven't heard of cooking with bread as much as I have mate. When I was at rock bottom I learned to cook using bread and adapting bread pudding to savoury dishes to fill me fat belly (it wasn't that fat in those days, but was hungry) I have many adaptions of bread pudding to savoury some are outstanding. Hope no one has to adapt , but can enjoy. Thank you as always. Best, Rik

      Agreed! Same as cheese, its supposed to have mould on. Cut it off and carryon using! Nowt wrong with it. I don't do sell buy's or anything like that. I do buy the sell buy's get some real bargains sometimes. I'm in your team, good on you. Best, Rik

      With cheese, it's fine. With bread, it's actually all got mold "roots" growing in it by the time it's visible and, unfortunately, shouldn't be eaten, or you risk making yourself sick. The more mold you can see, the higher the risk of making yourself ill from eating the bread with no visible mold spots.

      @@MrsBrit1today I ate way past the due date cottage cheese. Then I made a grilled cheese and tomato sandwich, I had to cut mold off the bread, the cheese and black moldy spots off the tomato. Then to wash it all down I made tea and had it with way expired milk. I’ve never felt better and would do it again if I had to 😊

    In her old age my mother has become a picky eater (barely any potatoes, rice or pasta) but she does eat things that have lots of taste and texture. Think I'll make this recipe this week.

    Thanks once again Rik 🙏 and more power to you for understanding that many people in this cost of living crisis (heat v eat) are struggling financially to put food on the table. Your tips such as buying bacon trimmings as opposed to using full rashers for cooking & purchasing greatly reduced/past sell-by date produce are a boon. Like you I always finely chop stalks other cooks throw away, such as broccoli, parsley, coriander they can be just as tasty as the leaves etc, waste not want not is a motto more people should be adopting!
    Love your laid back, easy to follow instructions & guidelines, encouraging people to adapt the recipes to suit their own particular tastes, budgets & what they have available. I’m sure you’re helping to put warm, tasty, nutritious & hearty meals on the tables of many a household who are genuinely struggling - & God bless you for that!🙏👨‍🍳💗 Take care!

      Thank you, David. I have about 100 recipes like this. I was fortunate to have not a penny in my pocket on a couple of occasions, where i worked just for a meal. Hard to believe all true. It was a trying time. Happened again later in life. I understand ingredients and the use of them. I do not dictate what has to be used, we all have our own tastes. As you have said I like to keep it as simple as possible there is enough stress in a household without the hassle in the kitchen too! I really appreciate your comment. Thank you. Best, Rik

      Rik there's an oriental recipe, for white fish in an foil parcel. With ginger and garlic and coconut x a bit like tai Green, my Thai stepmum used to cook us, do you know what's the name x thanks

    What’s about your recipes & the way you present them - is the fact that you let people know it’s not about EXACT amounts or EXACT ingredients as you’re using. It’s about their own flavor preferences & using what they already have in their kitchen.
    I never have cooked with exact amounts, I just use what I have or want. I totally am enjoying you & your recipes, thank you sooo much!

    Wow, I must smack myself for all the times I've wasted bread when I could have been making use of it.     Absolutely love this! I am half Scottish and half Italian so my food menus can vary. I love this approach to cooking, don't get too excited. It does remind me of my Scottish Mom's no nonsense approach to cooking. It was all so good! I love your channel!

    I've been a chef, caterer, and hobby cook for decades. I've probably cooked thousands of quiches. Yet the idea of a savory bread pudding never occurred to me. It's obviously a great idea. Sweet bread puddings are great. I'm looking forward to trying this.

    When you began cutting the crusts off the bread it reminded me of fishing with my Grandparents. We went to Scarborough Mere fishing and bought a fresh load of bread that morning unsliced of course. My Grandma cut the crusts off and we all enjoyed them slathered in butter and a cup of tea - Scarborough Mere early morning is freezing even in Summer, my Grandad used the middle of the loaf as bait. As it was fresh it molded well into bait for him. This sounds like another recipe we will try - thanks for sharing. xx

      Thank you for sharing. I did quite a bit of sea fishing up there, mostly out of Whitby and Brid on the boats. I used top make my own pirks as they called them back then. A piece of chrome pipe with lead in, a coupe of treble hooks on and some plastic squiddy things. Caught many cod over the wrecks. Good old days. Thank you for sharing. Best, Rik

    Thank you, sir! I feel like I'm back in my grandma's kitchen (and I'm older than she was when i was watching her making something very similar to this). She'd probably grate a little nutmeg on top of the cheese-- and use any vegetable lying around. Savory bread pudding as well as garlicky bread soup were regular dishes at home to use up bread going stale. Oh, and croutons to be sprinkled on a creamy veggie or tomato soup, or a salad. And of course, on lucky days, there'd be sweet bread pudding with raisins for dessert. Nothing went to waste in her kitchen, especially not bread, which held a sort of sacredness for her (Give us today our daily bread...) You really brought back some happy memories there...

    I must say this & the Woolton pie are a bit of me..😋..I would ptobably add a little bit of nutmeg to it .
    Made my first bakes in the new fryer Forfor bridies & cinnamonn swirls . Promptly set it on fire after 1 min 😂 using baking parchment for the bridies to sit on..No worries as I was watching it luckily .
    Both turned out fab ..I cooked the bridies for 40 mins on 140 low fan setting ( Bake) shortcrust pastry was stunning & inner ( raw steak mince,black pudding & onion) cooked lovely & moist ..So happy I took your advice on it .

    I love the fact you always help people to understand they can adapt the recipe to what they like. I think too many chefs give the idea that you have to follow exactly and it's actually very liberating for people when they are learning or trying things for the first time to realise that there's actually quite a bit of flexibility and it's going to work.
    Another thing I've just thought of: that's easy, nutritious and cheap and that's true of a lot of your dishes.

      Wow! Thank you for understanding. Yes taste and adjust everything - stuff the tv chefs they are dominated by a crew telling them what the should do in what order. If like me - i see people reflection in cookers, fridges, etc, you can see the crew. Shame when fame strikes and they do not have the fixability to show off how good they can cook. For an example. Ramsay who I admire as a chef look at his video ua-cam.com/video/byJuxZ-H1-w/v-deo.html go to 0205 look in the reflection of the oven. To his left of the microwave. There is a chef with an apron on. Same video go to 0912 the pudding is overflowing move to 1034 when it comes out the pudding is level and no rise. Its all a con. Not on this channel straightforward cooking that everyone can do.     I grew up where bread pudding is always associated with sweets/dessert. What you made is savory and I would definitely eat at breakfast, brunch or dinner time. Although, it would be interesting to make the dessert and savory versions during any meal time. Thanks for sharing this recipe!

    That's a really Smart idea..I think i will add some Peppers& Celery &another Onion &a little more of the popeye food,with a little Hot Sauce..And the Greeks have Spanokopita..( which is basically the same, Spinach&Goats cheese,with layers of Filo Pastry!)

    I've been making my own version of an egg/spinach/bacon casserole for decades and never considered turning it into a savory bread pudding. I might have known. I grew up on my mothers sweet bread puddings and loved them. Slainte'!

    Very delicious brunch/ lunch dish. I have never seen this before. Nice creation Rik. I just happen to have a nuisance stale loaf of marbled rye bread that's been in the fridge for a week that was given to me and part of a slab of bacon that needs using up. Now I know what their fates will be today. I'll be adding mushrooms as well. Thank you for your inspiration.

    Hi Rick.. This looks delicious and definitely mine and my husband’s type of meal. I really love cheese and spinach. My breadmaker makes my bread for me and it is usually half white flour and half Ho.is Granary. It never keeps as well as bought bread and often gets mold on it and I tend to cut it off and just toast the inside of the loaf. But now I will remember to check out your recipes using dry bread. I will always halve your recipes for just the two of us, so this will be perfect for half a loaf. I seem to be finding a new recipe to check out every day… I am still trying to make the apple and pear charlotte but my ‘shopper’ came back without the pears - twice… seems there is a shortage where I live! 😂😂

      @@BackyardChef Got them yesterday! Made it today, and enjoyed it at tea time with single fresh cream. What can I say, I loved it! And I found a springform tin and it turned out of the tin just like yours.. crispy top, lovely and moist inside, put the marmalade in as well and everything else you suggested. Surprised how quickly it was to make. The fruit didnt take long to cook at all. Another regular dish for me I think! Thank you Rik! 🤗

    I made your Savory Bread Pudding…YUM. My husband and I enjoyed the remaining slices the next morning with two fried eggs perched on top of the microwave warmed “pudding”.

    One of my favorite bread puddings has cheese, sausage and onion. My grandmother made it with leftover biscuits and used whatever greens were available. Polk, dandelion, and lambsquarter are my usual go-to, but most anything works.

    I love bread pudding, but have never made a Savory one. I can think of substitutions if I don’t have bacon, I can sauté everything in bacon grease, or use pancetta. Instead of onions, I can use leeks, shallots, or combination of all three with regular onions. Hate spinach, so I could use finely chopped up broccoli, cubed, zucchini, any of the colors of bell peppers I could even include mushrooms. for breads I could use left over rosemary, olive oil, a slice or so of multi grain, some French bread, etc. I like the crust left on if the egg milk mixture doesn’t totally cover all the ingredients the little pokes of bread that stick out are wonderfully toasty and crunchy. Thanks for the entry.

    I love spinach and love bread pudding. I've been told I make the best bread pudding, which is a nice compliment. My secret is replace half the milk with flavored creamer; Amaretto is the best, though I don't seem to see it in the store anymore... I'm definitely making this one; I've experimented and done apple bread pudding, banana bread pudding, etc. and I always cook it in a water bath.
