Taking Cooking food back to basics.
Ingredients:
For the Chocolate Cake:
- 1 and 3/4 cups (220g) all-purpose flour / Plain flour
- 2 cups (400g) sugar
- 3/4 cup (90g) unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
For the Filling and Topping:
- 4 cups (600g) fresh cherries, pitted and halved (reserve some whole cherries for decoration)
- 1/4 cup (50g) sugar (for the cherries)
- 2 tablespoons Kirschwasser (cherry brandy), optional. See note for non-alcohol
- 3 cups (720ml) heavy whipping cream
- 1/3 cup (40g) powdered sugar
- Chocolate shavings or curls for decoration
NOTE:
Cherry Brandy Substitute Recipe:
1/4 cup cherry juice: Provides the cherry flavor base.
1/2 teaspoon almond extract: Adds a depth of flavour that simulates the nuttiness of brandy.
1 teaspoon sugar (optional): If your cherry juice isn't very sweet, you can add a bit of sugar to match the sweetness of cherry brandy.

I’ve just gone back to the 70’s! Prawn cocktail to start, chicken in The basket with chips or steak in peppercorns sauce, and Black Forest gateau to finish!

I went on a Cruise out of New York City years ago to Bermuda. In German night, one if the deserts was Black Forest Cake. That was so unbelievably delicious, so good.

Rik! This is epic! I totally agree, if you’re going to make a cake, go three layers. Having the scale is very helpful, but you can do it without. Sometimes I have used leftover coffee in place of water, it was very good. Your cake is beautiful! 😍

If you haven't got kirsch or cherry brandy to soak the cherries in or to moisten the chocolate cake, dark rum is also a good substitute. An added benefit to soaking the cherries in alcohol is that it also preserves them longer.
However if word gets out that you have such a magnificient cake at your house, your neighbors and friends would find an excuse to "happen to be in the neighborhood and drop in" and it would quickly disappear without a trace, evaporating before your eyes. You would be fighting to get a portion for yourself if you weren't quick enough. There's no manners or honour among adoring cake lovers when it comes to more eyes looking at it than there are slices! 🎂 👀

In Germany or Austria, this would be traditionally served with a stronger brew of high quality coffee (Kaffee und Schwartzwalder Kirsch Torte). Bravo!

That looks great! One of my favourites. The brand Opies do black cherries in a kirsch syrup which are perfect for a black forrest forest gateaux. Great to mix the syrup in the cherry jam on the cake to give it some oomph 😋. About £5 a jar

The only thing that would improve this cake, would be to use tart cherries instead of sweet cherries. And of course, those cherries would have to be soak in Kirsch first.....

Brilliant that Rik, and i realise my mistake making my first cake in the hysapientia. In my standard oven I always do an all in one mix and its perfect all the time. But its the wrong method for the hysa now ive seen this great delicious video i realise i must split the mix and use the 165c temp and minutes as you did here .

Cooking with the air fryer is a challenge sometimes. If there was an variable fan throughout the heat range it would be a game changer. To make the layers not so compact, don't squash them. Just take the top off with a knife when cooled. Thank you. Best, Rik
@@BackyardChef yes definitely either no fan plus option of variable fan would be like you say a game changer as I'd say it's that intense blast of heat circulating makes it a case of keeping an eye on the cakes more. I'll be changing down the actual temperature to compensate. Those heat bars are a bit of a nuisance too I don't see the need as due to the fan action being so high on most modes there isn't the need for them. Cooking sausages etc for instance the fat drips off onto the bars causing smoke which could be an issue. You put a tray above them to stop that and the heat from them is blocked a tad. They fixed both the fan and bar issues and include a manual mode that air fryer oven would be the best on the market. Cheers Rik

Steady! I was extremely lucky they were selling off at 80% reduced because some of the cherries were damaged and turning bad in the container. I look through the one or two and if the rest are ok, a bargain is to be had. Lucky this time. Best, Rik
@@BackyardChef 80% off would never happen here. That actually blows my mind a bit 😯. 30% at best, off a $20 bag of fresh during the season. Right now you can only buy frozen and they’re around $6, so maybe no organ selling needed haha. Might have to settle for grandma’s maraschino cherry bread for the moment though. Those are the $3 cherries
