whoa i just made matcha filled doughnuts too! i made crème légère instead of normal pastry cream. i didn't glaze it but i coat them with sugar which ended up making them too sweet (lesson learned!) the brown butter for the dough sounds like a pretty good idea (i used a brioche dough for my doughnut recipe) i'll probably try making your recipe next time thanks for sharing!

If you could explain more about what you're using that is usually uncommon like for instance "matcha" that would be a really good hit for you! And when I say uncommon I mean for people who are learning to bake and do not know certain things. In California matcha is never really used since I believe a lot of people use it in Japan and China. It's just now starting to come to California and it is a wonderful tea! Keep it up!

never browned butter before for a recipe, can you do it with out browning it? also if you can't (or shouldn't) should you mix constantly while it's in the pan and about how long should you go so you dont burn the butter?
No need to stir. Use low to medium heat to have more time and control. When it stops foaming take it off the heat, if your pan isn't too hot (which it shouldn't be because you are on low-medium heat) you have quite a large window of time between browned and black.

For mixing matcha, you should mix it with a little hot water first, it will become to a paste, then you can add it into the mixture ;)
