Thanks for making simple lists for your ingredients and putting them with the areas they're assembled in! This is actually how I write recipes into my notes so its not so confusing. This makes things a whole lot easier
Any recipe I made from her came out good. Pay attention to texture and never think the dough is too wet, just keep working it. The more flour you put the more dense it will come out.

omg this is not possible! creme brulee heaven. My Mom assessed every restaurant on their ability to serve up her creme brulee in the French method. She would call the chef if it was not up to scratch. Now that in a doughnut would have been her best dessert. Many wonderful memories Mom!

I got scared AF when the donuts were dipped in the caramel. That caramel is extremely hot and can cause 1st and 2nd degree burns ! People be VERY careful if you attempt to make them!
Full written instructions -- DOUGH PT 1 mix 1 cup milk, ¼ cup sugar, 1 egg, and 2¼ tsp instant yeast together add 3¼ cup flour and 1 tsp salt and mix Place a clean towel on top of the mixing bowl. Cover for 10 min. add 3 tblspn of softened unsalted butter and mix transfer the dough to a light floured counter and knead until smooth and elastic. (can also use stand mixer and dough hook) Place kneaded dough into an oiled bowl, coat the dough with some of the oil as well Cover bowl with plastic wrap until it doubles in size (place near a warm spot to let the dough proof) -- CUSTARD CREME (do while dough is proofing) mix 2 cups milk and 1/2 cup sugar in a saucepan over medium heat in a separate bowl, mix 4 egg yolks, 1/2 cup milk, and 2 tsp vanilla (use electric mixer for this) after mixing the above, add 3 tablespoons cornstarch Mix egg solution until cornstarch is dissolved. Pour in the egg solution into the hot milk solution (do a temper mix) Continue stirring mixture over medium heat until it thickens (use electric mixer). It should start bubbling 2-3 times a sec When it is thick, add 2 tablespoons butter and mix with spatula Transfer the mix into a large glass bowl and cover, let it cool completely (put in fridge) -- DOUGH PT 2 punch out the gas in the dough gather up the dough into a ball and place on a light floured surface roll out the dough to about 1/2 inch thickness use a 3 inch cookie cutter to cut out dough disks (reroll excess dough as needed) cover the cut up dough with a clean towel, let sit for 15 min Place about 2 inches of veg oil in a dutch oven and heat the oil to 360-375F. cook dough in small batches (2-3 at a time). Fry until golden brown on both sides (flip dough regularly) Let donuts cool to room temp and allow custard to continue cooling as well -- FILLING THE DONUTS Fill a piping bag with the custard and have a large metal tip attached to the end of the piping bag Poke a hole into each donut with a small metal rod (a chopstick will do nicely) and move the poker around in each donut to make a small cavity inside each donut interior Inject some custard creme into each donut -- CARAMEL SAUCE Over medium heat, cook 1 and ½ cup sugar and 1/2 cup water, Cook until amber in colour Dip one side of each donut into the caramel mixture. Do this carefully as the caramel sauce will be very hot. Place each donut on a cooling rack, caramel side up, and let cool to have the caramel sauce harden
I kept trying the water and sugar mixture for the glaze and it never darkened and just kept turning into a foamy sugar, so I just cooked straight sugar and it worked! These were so good!

I really hope you'll see this comment : what you made is basically an American adaptation of a French culinary specialty named "chou à la crème" ! The only difference is the dough which is choux pastry and the size because choux à la crème are way smaller. We even make huge sculptures with them (especially for big events such like weddings) ; they're called "croquembouches" 😊

I've had donuts like these before. The coating is so crunchy it reminds me of a candy apple, which isn't my thing at all. If I made these I'd drizzle some store bought caramel sauce to avoid the crunch AND the possibility of horrible burns.

THAT would be my favorite kind of Donut. I love vanilla cream pastries in Germany with also Donut style yeast dough. Instead of powder or regular sugar, this caramell crust is definitely an elevation of it.

Did anyone make this yet? I did yesterday. While my donuts didn't come out as perfect as hers they did come out. It would have been helpful to know what temp the oil needed to be. I had an issue with the pastry cream though. It's not thick like other pastry creams I've made in the past. I tried to fill 1 donut but it basically oozed out of the hole. I'm hoping I can somehow fix it because I used up the last of my eggs and I also put in a good amount of vanilla bean paste. Thank goodness I did because had I only put in the 2 tsps of vanilla extract you wouldn't be able to taste it. Obviously haven't done the glaze yet but after reading the many comments about sugar burns, etc. My plan is to make it then pour the glaze into a measuring cup and pour over the donuts. After all the time it took to make these the last thing I want to deal with is a sugar burn... 😏 EDITED TO ADD.... Thankfully I was able to save my pastry cream. Even though my donuts "came out" when I did go to put the cream in them I couldn't get too much in them. I landed out cutting the tops off a couple, scooping out some of the dough then filling them so basically they turned into a donut/cream puff hybrid, lol. I went on to make the caramel. Here's a tip. If you've made a dry caramel with success I would do that with this recipe. I stood over that stove for what seemed like an hr!! I did pour it over the donuts which while very safe that was a choice, lol. I had shards of caramel dripping off of the donuts that if you're not careful when you go to eat them that could be just as dangerous as dipping them, lol. Final thoughts? This was one hell of an experience. And I think I'll try to make a traditional creme brulee going forth... 😆

As a experienced baker i have found that having it around lukewarm works(80 to 105F)

EDITED TO ADD.... Thankfully I was able to save my pastry cream. Even though my donuts "came out" when I did go to put the cream in them I couldn't get too much in them. I landed out cutting the tops off a couple, scooping out some of the dough then filling them so basically they turned into a donut/cream puff hybrid, lol. I went on to make the caramel. Here's a tip. If you've made a dry caramel with success I would do that with this recipe. I stood over that stove for what seemed like an hr!! I did pour it over the donuts which while very safe that was a choice, lol. I had shards of caramel dripping off of the donuts that if you're not careful when you go to eat them that could be just as dangerous as dipping them, lol. Final thoughts? This was one hell of an experience. And I think I'll try to make a traditional creme brulee going forth... 😆

Funny, about 3 years ago, I woke up one morning with the idea that I wanted to open a shop and sell only creme brulee donuts. I had never heard of them, or had one anywhere, I did not know how to make them. Now here they are! Has anyone else had these before?

Hey you should check out for krispy kreme donut bon appetit... Thats where I learned to make donuts
If you have a stand mixer, let it knead the dough for you. It’s done when the dough pulls away from the sides of the mixing bowl. About 10 minutes.
