I tried it last evening and was looking forward to enjoying it. My sause never got thick so when I spread it on the cauliflower, it just flowed through and despite baken it twice the 10 minutes, it came out under cooking and flavorless. Maybe my spices were too old, but my versiion didn't work out.
These look delicious! A lot better than the fidgety Gordon Ramsey recipe I just watched and you used all of the cabbage too. Thank you from New Zealand.
He should be using a spatula to turn them like you would with delicate fish and then it’s easier of to break them. Another tip is that if you want your cauliflower steak not to break you should only cut along the middle of the cauliflower over the stem which means a max of two per head of cauliflower- the reason being the closer to the edge you cut the greater the chance it won’t maintain its integrity throughout the cooking process.

I always use for the marinade some soy and Worcester sauce, curry powder, garlic, olive oil, paprika hot and sweet.
Can we swap the olive oil with Greek yoghurt ? To reduce calories

or just cover the whole lot with foil for first 5-7 mins or so then uncover and continue baking.
It'd help with the cooking time, but the steaks risk to break apart, unfortunately.
