Any Instant Pot or pressure cooker brand can be used. I used an Instant Pot Duo Gourmet. Come and watch the video for full recipe and instructions. This is a great Hawaiian dish and very delicious with it's hickory smoke flavoring and it's tender fall apart texture
A little interesting history of this Hawaiian dish
Kalua pig is smoked, shredded pork, often served with cabbage. Kalua means “to cook underground.” The traditional method involves digging a giant dirt pit called an “imu” and cooking the pig in it with koa wood, lava rocks, and banana leaves. A modern variation is to rub the pork with sea salt, and liquid smoke. Historically, kalua pig was only eaten by chiefs and kings, never by commoners or women, and was a dish served at regal feasts.

Ingredients Needed:
Pork shoulder butt roast
Sea salt or kosher salt
Liquid Smoke hickory flavoring
Instructions:
Add 2 cups of water to pot
Add 2 tablespoons of liquid smoke to the water
Rub and or inject liquid smoke into roast
Salt all sides with sea salt or kosher salt
Add roast to pot with fat side facing upwards
close lid and seal your vent
manually set to pressure cook for 1 hour and 30 min, or 90 minutes depending on how your display shows your time. Set to more and high.
when cook time is done turn off keep warm button and allow for natural release of 30 minutes before opening the pot. This ensures your roast will be very tender. after 30 min open and move to cutting board to shred up and separate out the fat. add back into liquid to coat meat. Serve over white rice or with cabbage or with BBQ sauce on buns, with potatoes really anyway you prefer.

I was taught how to make this in a oven by a Hawaiian, I like your recipe, BUT I do not nor do I TRUST MORTONS salt company what you want is Sea salt or Hawaiian Red Sea Salt which is the original, also the push some cloves of Garlic in the Roast ( Optional ) and they had me wrap it with a banana leaf anyway, I believe you can put 1 in your Pressure cooker, it also adds to the flavor.. Mahalo
