Oat fiber is also a good flower. Unfortunately, a lot of people don't use it, so there aren't really any recipes with it. It's similar to coconut flour, so you can pretty much use it as a substitute. It has no carbs or calories, but it's high in fiber, so don't eat too much lol.
I've just bought coconut flour and tried to bake a cake with it and it didn't work! I didn't know about the measurements and used exactly the same amount as I would use wheat flour!! what a mistake!! Arrowroot flour is around 8g carbs per tablespoon so it would be really hard to incorporate it into keto. Most recipes I've seen use a few tablespoons for it in baked goods, so in my eyes it wouldn't be worth the additional carbs. You can find a good texture with baked goods with a combo of almond flour, coconut flour, and/or flaxseed meal. Sometimes xanthan gum or psyllium husk powder is added to baked goods to give a more chewy texture as well. Personally, I'd skip the arrowroot on keto.
Could you please do a guide for frying with these batters? I'm interested in tweaks similar to the ones you offered here for baking (ratios, binders, temperature, consistency, etc.).

Keto in and of itself is a healthy diet and can be done in the long-term. That said, if you want to use keto desserts in the future when you move to a different diet, you definitely can. Keep in mind that keto desserts are generally very high in fat. If you're combining a diet high in carbs with food high in fat, it will be unhealthy for you in the long run.

I wouldn't say it will ever taste like wheat flour, I just find that a mixture of both taste better and typically produce a nicer texture. I don't think you'll ever find a keto-friendly flour that will taste like regular flour nor bake like regular flour unfortunately.

Thank you for the kind words! In the video, it says that you -can't- just substitute keto flours 1:1 for regular flour. You need some sort of ratio between almond and another type of flour to get a similar texture - although you'll still be missing the gluten element. 1. I haven't heard of too many people using inulin to activate yeast but I did a little bit of reading and it definitely seems people have success with it. Someone said it produces around 80% the gas as sugar would during the rising process. 2. It really depends on what you're looking for. Many of our bread recipes are quite dense and since you're asking about a yeast loaf, most of our recipes probably wouldn't compare that well to that.

I see a lot of recipes for keto cakes that includes baking powder. What is the purpose of adding it if it does not interact with non wheat 'flour'. Or does it??
I need your help. I am trying to convert my grandmothers sour cherry cake recipe. It has 2 eggs, 1 1/3 cups of all purpose flour with 4 teaspoons of baking powder. It also has 1 1/4 cups of milk. The 1 1/12 cups of sugar I know I can use erythritol and use the same amount but I generally put less, probably only a cup. I will be using almond extract. Should I add another egg and use 1/4 cup of coconut flour with maybe 1/2 cup of almond flour. This is kind of a dense cake with 3 lbs of sour cherries. Should I add psyllium husk? Sour cherries are in big right now, I have to have some of this cake and freeze it.
With 3 lb of cherries, it might be a cake that's too high carb to be considered keto anyway. I think all of the things you said sound good. I would use coconut milk and a mix of coconut and almond flour. If you use psyllium, just use a small amount as it can impart a lot of its flavor into baked goods. I would recommend allulose if you're trying to replicate a high-carb recipe - it caramelizes and cooks like normal sugar which erythritol doesn't (it re-crystallizes once it cools).
Oh, this recipe makes 3 - 9 inch cakes. There is no icing either. I have powdered erythritol. I do have coconut milk but I was considering vanilla flavored unsweetened almond milk.
All I am is missing to find a way to make a philo dough. If I manage to do that my whole life is complete. I used to make my own philo and with it make many many delicatessen like spinach pita (not to confuse with regular pita) and cheese pita, mushroom pita and so on

An alternative to cornstarch is xanthan or guar gum. They can act as a thickener, similar to cornstarch, but don't contain the carbs since you use an extremely small amount.

It depends what the serving size is. Typically per 2 tablespoons of coconut flour it's 9g carbs, 5g fiber and 4g net carbs. 3g of those carbs coming from natural sugar.
Next time you make some keto-style bread, try toasting it up. I like to slice pretty thin and toast mine in a pan with some butter on both sides. I've found with some of the more off-putting breads, it works quite well.
I have yet to find a true Keto bread that isn't dense. I miss me a good sandwich with some light and fluffy bread. Toasting it makes it toast. I want bread.

I'm not familiar with almond powder, but almond flour is essentially just ground up almonds (finely ground). With almond flour, it will be with the skins removed. Almond meal is without the skins removed.
I haven't done a lot of experimenting with it but I've seen people mixing it with an even lower carb flour like almond flour to keep the carb counts low.
If this is still experimental, theres a lot of money to be had by those home cooks that resell their tried and trusted baked at home products at farmers markets now claiming its bread that gets you skinny. Really like a wild west gold rush for anyone willing to try every ingredient as the wheat flour alternative. I look forward to eating 5 whole bags instead 1/5 of a loaf and feeling contently stuft full yet still losing weight.
It's around the same price depending on where you purchase from. There's also a slight color/taste difference between almond meal (ground almonds) and almond flour (using blanched almonds). You can get a 3 lb. bag of almond flour from costco for around $12.
From what I've read it's pretty good - though I haven't had the chance to try it out myself. As it's becoming more available to the regular consumer, I'll add it to the list to experiment with and create some recipes with it.

I use buckwheat flower, it`s cheaper, low in carbs and high in proteins
Buckwheat flour has 17g net carbs per 1/4 cup - definitely not something that can easily fit within a ketogenic diet.

It's less effective, but still does leaven the dough/batter. You can add thickeners to help stabilize the leavening, like xanthan gum or similar.

We have meal plans and cookbooks, but they are all digital. We do not have any full-length books that have physical copies.

Yes! It's about 5 net carbs for about 1/4 cup. I recommend buying organic soy flour.

Check out the fathead dough w/5 ingredients which I make bagels out of it. No egg taste at all. I also make focaccia bread using same recipe.

Btw, you can literally just blend your whole almonds and make them into powder instead of buying something that costs 4-5 times more
It's around the same price depending on where you purchase from. There's also a slight color/taste difference between almond meal (ground almonds) and almond flour (using blanched almonds). You can get a 3 lb. bag of almond flour from costco for around $12.

From what I've read it's pretty good - though I haven't had the chance to try it out myself. As it's becoming more available to the regular consumer, I'll add it to the list to experiment with and create some recipes with it.

Flax meal is straight up NASTY! Unless you like slime.
When mixed with other flours it can be pretty great for adding texture to baked goods.
I just wanna let you know the music is getting really irritating and annoying I didn’t notice it at first but as we get towards the end of this video it starts to increase my heart rate and it becomes very very very distracting please don’t play music like this in your videos something soft and quiet in the background is nice but really you don’t need that you just don’t need this music and so many content creators think they have to have music behind them But you don’t need it and honestly you don’t need it
Almond flour tastes gross, sweet and smells sickening when cooked sweets. It makes me gag.
You could try sunflower seed flour or pumpkin seed flour instead if you prefer.

I don't think there's a great difference in baking powder brands, they should all be more or less the same.
