  • Cooking a zucchini parmesan with my Kitchen Queen woodstove. This is one of my favorite recipes and a great way to utilize those zucchini's when the garden goes crazy. In stead of canning and freezing the squash, these dishes can be made and frozen for easy meals later on. A wood cookstove allows me to heat my home, cook my food and heat my water all with the same fire. A must have for the homesteader.

    Q: How do you have internet at your cabins? A: I have cell service at both cabins but it is spotty due to foliage and cloud cover. I can access the internet from my cabins but have to drive to a local wifi location to upload videos.
    Q: How old is Frankie? A: Frankie will be 10 in April of 2018
    Q: What video editing software do I use? A: Presently, all I use is Windows Live Movie maker but I’m considering trying imovie, Adobe Elements or SONY VEGAS PRO.
    Q: How do you get your water? Did you dig a well? A: Presently, I haul water to the NY cabin but at the NH cabin, I drop a kettle into an old well that was dug by hand by the settlers in the 1700’s.
    Q:What is your favorite brand of cast iron cookware? A: I prefer using vintage cast iron. My favorites are BSR and Griswold. If I had to buy new I would buy a Lodge Brand. I plan to purchase this dutch oven in the future:
    Q: What do you use for refrigeration? A: We have a small gas refrigerator that we salvaged from an old Shasta camper and a custom icebox that I built into the cabin wall. We make ice on site with a propane freezer.

    Q: What do you use for cooking and heating? A: We use a Kitchen Queen 380 for cooking and heating during the winter months but we also have an antique gas stove in the cabin for when we don't need the heat from the KQ.

    You can feed the world with Zucchini. Stuff grows like a big weed. This Zucchini recipe series is great. More ways to use it the better! Thank You! Since I have become Diabetic no more Lasagna which I love. Now I can have this wonderful Italian dish without a second thought!

      When I eat it ocasionally, I eat whole wheat pasta. Have gone more to the organic whole grains. However, I don't want to limit your intuition as to video creation. You are TheBossoftheSwamp afterall! Just made me feel very good when you pulled out the small dish for Frankie. He is a very special canine, smart as a whip!

    I have one of those BSR #8s as well that my dad handed down to me that was handed down to him by his mother. AWESOME PAN!! I remember when I was a little skokie in the kitchen helping my grandma cook in the same pan!!

    Amazed to see the red mixing bowl in your video. I use the same one which was part of a set bought as a wedding present for my parents in 1955! In England.

    Well I got moved into my cabin that I started about a year ago. Made me a new friend. I have a squirrel that comes every day and scratches on my door to let me know it's time to feed him his corn. I got a deer that comes to get some corn once in a while and then come every day. This is the most fun I've had in a long long Time

    What a delight!, Tonight you have a hearty, & healthy meal to enjoy,with leftovers to spare, I use eggplant in mine, and Ricotta, & fresh Mozzarella cheese,, homemade sauce , fresh sliced tomatoes on top, with fresh grated parmesan cheese, I love all Mediterranean food. I don't eat meat often but I'll be making my mothers Hungarian Goulash tomorrow, I make a meat dish about once a month. I hope you are enjoying the renewal of light, after the winter solstice.       I'll opt fr some garlic bread myself and a glass of red :-) Yep, the KQ bakes about as evenly as a conventional oven. Love it :-)

    Thanks JC. Looks like I have a new recipe to try one night next week. I made a fried rice last week using riced cauliflower instead of rice and I was skeptical at first but it turned out great so I'm gonna look forward to this low carb dish. Cheers till the next one!

    My wife has been making a dish very similar to this for a long time. Best part is that the kids love it! Try some spaghetti squash instead of regular angel hair pasta sometime... it's also a great alternative to the carbs. Great video Boss

    Boss ---picked up a very nice BSR yesterday NO 8.....i saw at a estate sale ~~~set it on the hold table/ came to truck and watched this video. To make sure it was a BSR and it was!!!!!
    As many cast iron pans i have. i bought it to add to my camp collection..LOL But this will be a daily user.

    I actually kept up eating zuccinis from 10 plants. I'll admit giving a few away to my friend. I eat them very small though. Only dried about 4 big ones. Try that! They store beautifully and are great for adding to soups and sauces. I will definitely try this recepe when i hardly know what to do with them! Ohh, zuccini boats you would love too. Scrape out seeds, fill with mixture of minced meat, peas and rice, bit of cheese on top, yum yum yum!

    I am going to have to try this. I have seen it made with Eggplant, but never Zucchini. I don't know why I have never thought of substituting. I do not care for eggplant, but love Zucchini. Yummo!!

    Gotta love those kitchen wood stoves! Your Kitchen Queen is quite larger than our 1930 Home Comfort. There are wonderful features to both. I am a bit envious of your larger wood capacity. If I stoke up the HC in order to bake, I need to pick a very cold day or open windows :-)) That said we do enjoy the stove. Its like having another person in the kitchen...AKA" Matilda". She makes some fine baked beans!Thanks for the great recipe JC. We will be sure to try it instead of our usual eggplant version. Happy cooking!

      I enjoy both the old and the new cook stoves. They both have their pros and cons but the huge firebox on the KQ is certainly a blessing :-)

    Exactly 2 years ago you did the first lasagna in the woodstove vid. Your Italian food nuttiness must get all stirred up this time of year. No Julia Childs imitation on this one, must have been the "oh brother" look you got from Frankie last time. Imitation or not, like you said "it's entirely up to you" this looks really good. My Mom use to cook nearly the same recipe when I was a puppy, (this vid really took me back) I still have the cast iron she cooked it in and it is still in good use today. Damn how time flies.     I just restored two BSR pans that were my Aunts. A number 5 (8 1/8")and a number 8 (10 5/8"). Giving them back to my cousin so she can run her Moms pans for another generation.
