- Cooking Homemade English Muffins, Gorton aka "Creaton" and Pizza dough with my woodfired oven. No off grid homestead is complete without a woodburning cookstove. Here I demonstrate how I use my Kitchen Queen stove to cook my food, heat my home and heat my water all with the same fire.

Q: How do you have internet at your cabins? A: I have cell service at both cabins but it is spotty due to foliage and cloud cover. I can access the internet from my cabins but have to drive to a local wifi location to upload videos.
Q: How old is Frankie? A: Frankie will be 10 in April of 2018
Q: What video editing software do I use? A: Presently, all I use is Windows Live Movie maker but I’m considering trying imovie, Adobe Elements or SONY VEGAS PRO.
Q: How do you get your water? Did you dig a well? A: Presently, I haul water to the NY cabin but at the NH cabin, I drop a kettle into an old well that was dug by hand by the settlers in the 1700’s.
Q:What is your favorite brand of cast iron cookware? A: I prefer using vintage cast iron. My favorites are BSR and Griswold. If I had to buy new I would buy a Lodge Brand. I plan to purchase this dutch oven in the future:
Q: What do you use for refrigeration? A: We have a small gas refrigerator that we salvaged from an old Shasta camper and a custom icebox that I built into the cabin wall. We make ice on site with a propane freezer.

Q: What do you use for cooking and heating? A: We use a Kitchen Queen 380 for cooking and heating during the winter months but we also have an antique gas stove in the cabin for when we don't need the heat from the KQ.

This brings back memories of my grandfather, whose parents were immigrants from Montreal to Connecticut. His recipe has been lost, but I know he had a spice blend and water, and no milk or bread crumbs. I will be making this soon.

I started building my first cabin when I was 18 with a dollar and a dream. This lifestyle of mine is the easiest lifestyle to live. I lived the "normal" life and I'll never go back. i was born near Montreal Quebec and my grand mother had a short cut with today's appliances. She would put a cheap ham in the food processor with chives as it blends she added melted butter. Once it became a paste, in a bowl, she put a little mayo and relish with pepper. she would spread that between two slices of bread and we had our lunch. It takes 15 minutes to make and a few days of leftovers. That's the lazy man way of Creton

Great point about one fire accomplishing several tasks, all working in harmony. Modern life is very inefficient when you look at how many different devices we need - each for a separate task or function.
The old ways are the best - and than you for keeping that knowledge alive/

Amen about modern day living being to inefficient AND wasteful!! We too got rid of the microwave TV and all of that along time ago. We love waking up to our old fashion coffee pot on the stove and the warm radiating heat of the wood! Right now we are getting our seeds ready for our seed trays and we have them above the woodstove where they get a nice warmth to help them germinate..all for free!!!
The best part of this whole thing, is you enjoy what you do, and you make the effort rewarding.

Just finished making my coffee on the wood stove. Cleaning up an old round griddle that belonged to my dad. Gonna season her up. Great video Boss. Being that my roots are french Canadian gotta give that recipe a go. Man that pizza and muffins looked good. I really believe that it does taste better on the wood stove. No greater satisfaction than heating the house, water and cooking with wood that came off the land. Nice to see your sharing the idea to the public. In my 30 years living in Quebec I have never seen or heard of it made with bread, must be a Lac Saint Jean thing like there pies (Different). Thanks Frankie for sharing lol

I made the English Muffins and Pizza and my husband gave the recipe 5 out of 5 stars. Here is the recipe from the video for those of you interested:
Boss of the Swamp English Muffins and Pizza Dough
Ingredients:
Step 1:
Combine the following and wait 15 minutes until frothy:
* 2 t. yeast
* 1 t. sugar
* 1/2 c. warm water
Step 2:
Combine the following in the flour “well”:
* 5c. flour
* 1 T. melted butter
* 2 t. salt
* 1 1/4 c. lukewarm milk
* Add yeast mixture from Step 1.
Step 3:
* Knead 7 - 10 minutes
* Let dough rise for 2 hours
* Divide dough in half (wrap and save the other half for later).
Step 4 - English Muffins:
* Rollout dough to 1/2”
* Cut out muffins using a drinking cup
* Place on pan covered with corn meal.
* Sprinkle tops of muffins with corn meal
* Cover and let rise for 45 minutes
* Cook in an uncreased cast iron skillet, on medium heat.
Step 4 - Pizza:
* Rollout dough
* Add toppings
* Bake in 500 degree oven until done (about 7 minutes depending upon thickness, size, toppings and heat)

I had this at deer camp years ago. About twenty of us used to hunt out of my uncle's cabin in the Berkshires. Aside from my uncles and cousins, there were a bunch of firefighters from Lawrence, MA and over the border in NH--most of them of French Canadian heritage. After poker one night, one of the guys broke out a container of gorton his mom had made. I never had it before, but I really liked it. Problem was, they taught me how to pronounce it, but nobody knew how to spell it! I wasn't able to look it up.
This has been on my mind ever since I saw the video yesterday. I went snowshoeing here in NJ today, built an antler shed trap in the woods, and on the way home, stopped by the store to pick up the fixin's.
Right now, I'm sore as hell from all the snowshoeing, but I've got a batch of gorton simmering on the stove. The house smells great, and I'll let you know how I did!

My grandparents made gorton when I was a kid , it tasted so good , I have an old Findlay cook stove and the bakers choice use them all the time would never have it any other way like you say heats the home cooks and hot water can’t go wrong your a great cook you had my mouth watering, I’m gonna make a batch of gorton this weekend thanks for the great video boss.

***** Gorton's good stuff buddy. Give it a go sometime. Just let it chill overnight before serving because it's not the same otherwise.

Wow JC. Was this really 5 years ago! I ordered ground pork from a neighboring farm in Salisbury. Using your mom's recipe to make a pork pie. Simmering on the stove as I type. Glorious day today! Boys are finishing up with logging this week. Our access road will be posted soon.Starting some seeds this weekend under grow lights. Looking forward to a more sane 2021. Jim and I are looking for a used small camper van with a basic bathroom and tiny kitchen. We all will be fully vaccinated by April and want to do day trips around New Hampshire. I placed a metal plate over my ash hole in my wood stove so that I can now cook my sweet potatoes right in the ash pan. The ash pan can also accommodate pies or just be used as a food warmer.
With an Eco Fan located on the griddle top, the warm air is circulated throughout the room. Life is good.

I really enjoy all your videos. I have been looking for a long time at wood cook stoves and if I can ever get to build my cabin it was a must have. I always had some apprehension about cooking with one, but your videos make it look easy. I just got the land a few months ago. Over the next few years I hope to make forward progress. With any luck as my daughter finishes school I can move on to the simple life. Thank you for sharing your videos are an inspiration to those of us that long for a simpler life. Also like the trapping videos her in Colorado they have outlawed all traps except box traps. I see so many fur bearers when hunting or fishing but not interested in wasting fur or spooking my actual quarry shooting them with a high caliber rifle.
