I needed this for my allergic-to-everything husband and it worked out perfectly! Thank you for your explanation of the corn starch falling out of the cold milk if not constantly stirred... I was starting to believe all my whisking efforts were futile and I'd done something wrong and then my pudding started to thicken! Moral of the story: KEEP WHISKING =D Was delish, thanks again

Attention people using vanilla almond milk. It will stay very liquidy however I have a solution for you: add one more tablespoon of cornstarch and have the heat a little higher. Turned out amazing

Great recipe but I improvised a bit and made it coconut milk and arrowroot starch since I'm allergic to corn and it was amazing

Thank you, thank you so much. This came out so good. I ran out of corn starch, so I had to tapioca, so I had added more milk, but it worked out great. I had tried few vegan puddings from the store and wasnt impressed.

Have you tried making chocolate pudding? Wondering if using the same recipe which would work better, cocoa powder or melted chocolate?
I haven’t, but I have been wanting to! I’d imagine that melted chocolate would work best but haven’t played with it yet.
Thank you for this recipe. My 5 year old wants pudding. I wasn't about to buy that crap at the store for her. We still aren't sure if we are making just vanilla OR banana pudding OR add dark chocolate in place of the sugar, but... more of it and have chocolate pudding. I guess we will decide as we are elbows deep in making pudding.

This looks amazing. I make chocolate vegan pudding this way so I imagine the vanilla will come out great. Have you tried making it with stevia butterscotch drops or other added flavors to the vanilla pudding? I wonder whether it can serve as a good base for that?
Ooh I haven’t tried adding other flavorings but don’t see why not. You will want to back off on the sweeteners, if you’re adding stevia.
Would this pudding be great for a cake filling. Wondering if it will be thick enough
I haven’t tried that, but you could try cooking it down more for cake. It does separate when stored in the fridge, so you’d want to serve the cake same day.

What’s a good way to preserve it in the fridge? So it stays smooth?
It will separate in the fridge, but you can just use a fork to whisk it back together before serving.
Hi, this looks delicious! Just one question. You mention that you use the same base pudding for the Biscoff banana pudding but I noticed the quantity of milk is different. This one uses 2 cups, the banana 3 cups. Is this correct? Perhaps you need a thinner pudding as the cookies will absorb it? I am anxious to try it out!! Thanks!

hmmm I’m not sure if it would work in place of marscapone. The flavor is a bit different, but it might give a similar feel in a tiramisu-like situation!

You can use potato starch instead. I’m not sure arrowroot will work, because it breaks down if it’s too hot for too long.
i use almond breeze original almond milk is it 7 tablespoons of cornstarch and heat a little higher okay
That should work fine! I might start with 6 tablespoons and add another dissolved in a little more almond milk if needed.

If I want to put agar instead of cornstarch, how much do I have to put it in?? Also would it be okay to call vegan if there is agar instead of starch?
I don’t recommend using agar. You can use potato starch, tho! Agar is vegan, because it’s seaweed derived, so no worries there! But texture wise I wouldn’t use it in pudding.

@@glueandglitter hoping on this comment. I used a soy milk I had. I tried twice and whisked for ten minutes then on the second for 20 mins. Just ended up with warm milk.
What about 1 can of full fat coconut milk and 2 cups coconut milk.
I haven’t tested, so it’s hard to say. If you try, definitely report back!
Did she mention the amount of milk? Didn’t hear it.🤷🏼♀️ I’m guessing 2 cups.
