    Banana pudding with the little vanilla wafers layered in was standard fare for many growing up but is loaded with sugar, dairy, and artificial flavors and colors. This weeks recipe is a whole food plant based twist on this popular dish. Made with real bananas, this pudding whips up into a creamy and delicious pudding that is as good for you as it is for dessert (or breakfast). I like to make it along side my peanut cookies for a tasty treat. This recipe is refined sugar-free, oil-free, gluten-free, vegan, and absolutely delicious!

    I love this recipe! I made it several times already. I have a friend who does not like bananas, so for the first time today I tried it with a different fruit and it turns out it works just as well with defrosted strawberries :o) Thanks Jill for all the great work you do!     I love how mellow you are. Some UA-camrs are way too perky and exaggeratedly energetic. It’s too fake for me. I appreciate the calm low intensity of your videos.

      Yeah!! I thought exactly the same! First day I came across one of ur videos!! Very nice videos, although I have to adapt some recipes bcause here in Argentina they are way too expensive . ☺️blessings!! and I agre..banana +peanut best combination ever! Hehehe

    I tweaked it a bit by soaking the nuts first and also using coconut milk. It turned out amazing

    This pudding is so incredibly delicious 😋. I subbed 1 cup of the water with homemade almond milk and also added 1/3 cup almonds instead of cashews. My favorite pudding ever. So creamy. Thank you so much for this recipe Jill. ❤️

    Hi l made this Banana pudding lam not vegan wanted to try things without oil and l usually dont like sugar glad you use wholefoods like the dates l love them. I do use chia seeds and l bought some flax seeds for the egg for one of your recipes. I eat alot of fiber food not turning vegan but lam loving how its oil free and wholefoods l love that. Difently wanna make more of your recipes. My daughter loves the banana pudding one.

    I made this today and wow, its delicious. I used 6 fresh dates instead of 4 and the sweetness was perfect for us. Also added a bit of almond extract for the aroma. Wonderful recipe, thank you so much for sharing.

    Even though I cooked it on the lowest setting and whisked it constantly, it still got brown on the bottom. I recommend cooking it in a double boiler or make one… a pot inside a pot of boiling water and whisk.

    That might be a wonderful alternative to oatmeal in the morning, rich, nourishing and a sweet start in the day; I'll give it a try next weekend - with the peanutbutter cookies, of course.

    I bet it would be even better if you assembled the pudding with the cookies (alternating layers) and let it set in the fridge for 24 hours. Then the cookies would be super soft, and you can eat it with a spoon. Love the idea of the cream, too -- maybe mixed with the pudding to give you more to layer with.

      Layer of cookies, layer of sliced bananas, layer of pudding/cream -- repeat again and end with a layer of cookies on top. Maybe in a casserole dish? That version may be best for a small crowd, but yum!

      The only place ive heard of a banana cream pie was on Gilligans Island. i think mary ann used to make it when the gang got sick of coconut cream pie. lol

    I am confused. When I soak cashews, there is nothing that Ineed to strain out using my vitamix. I wonder if it is the oats rather than the cashews that makes the solids that need to be strained.

    I tried this recipe and it tastes so good. I noticed that you did not throw away the remnant after sieving. What can it be used for? I stored mine in the refrigerator.

      You can add it to cookie dough, banana bread dough, use it as your breakfast oatmeal by adding some plant milk and heating it up

    This looks good !! I need soft desserts because I have had so much dental work and braces... can't eat hard foods for 6 months (no way to chew with grafting in gums etc) . Besides the peanut butter cookie do you have other "soft" cookie recipes?

      I just use it for demonstration on the show but I wouldn’t recommend it. The whole thing gets crazy hot so you can’t even touch it till it cools down 😐

    Ive tried this recipe twice following the recipe to a tee, and both time it turns brownish not cream color at all. Any idea what I’m doing wrong. No burn either.

      Not sure it would work because of the other additives in store bought milk. I don’t know if it would thicken

    How come my pudding looks light brown but yours looks whitish yellow?

      The photo always looks brighter because of the lighting but mine also turns out a bit tan. It can also be the difference in dates.
