Absolutely you can use fresh pineapple. Watch your cook time. My pan was extra thick, so I had to cook a little longer. Check it at about 35 min and go longer if needed. Do the toothpick test. Mines was a disaster....I did everything right. What she does not tell ous is how long to let the cake sit before we turn it over. Mines fell apart and was more like a custard/cake....I was so disappointed,
