Thanks, Arnie! I've fixed these 3 times now and have shared the recipe with others. It's a new favorite! For a low sodium version I marinate overnight in ~1 tsp ea. of: Garlic powder Onion powder Chili powder Cumin Oregano Black pepper 1/4 tsp of salt 2 tbsp olive oil 2 crushed garlic cloves And a few generous shakes of cayenne pepper. 🌶️
Being from Arkansas, I enlisted into the Air Force and was stationed at Lackland AFB in San Antonio and it was there that I was introduced to both brisket and tri-tip, and oh! My gosh! About a year before I left San Antonio a new restaurant opened named Rosa's Cantina and I'd go there most mornings to pick up breakfast for me and several others, and I'd have Carne Guisada. Loved them!
I played principal horn in San Antonio symphony for 5 years 91-95..everyone had their own favorite restaurant and favorite salsa from maybe even a different restaurant. La Fogata had a great roasted salsa, I forget the bigger restaurant we’d go to for fajitas, but we’d order extra limes and squeeze them over the skillet and all the tables around us would order them..smelling that lime hitting the hot skillet, oh..yeah! Ah..Tomatillo’s restaurant? Maybe that was the name..loved the breakfast tacos at Twin Sisters on New Braunfels..

Like do we have a choice? I love Mexican Food too but, there's areas of California that have GREAT stuff, and other areas, that have less than good... I live out in the Palm Springs area now, but I grew up in Orange County (about 2 hrs away) and ALL the people I know, say that OC and LA Mexican food is 10 times better than what we have here...even my 80+ year old Mom says so, it's a sad Day for Mexican Food when an old retired Printer (me) can make Mexican food better than a local Mexican Restaurant.

This is a bit different than what you would see at the restaurants in Houston like Lupe Tortilla or Pappasitos. They use white meat chicken and cut the pieces longer and thinner generally. How do I see your seasoning recipe? Love your channel!
Yeah these are AWESOME, however that Sizzling Serving Platter (Comal) was preheated (like ALL Restaurants do) so that it's still sizzling when served at the table, that's why it's on a Wood Base, otherwise it would burn through the Server's Tray just bringing it to you. "Watch out this is VERY Hot" is what they say every time they set the Comal and Base down in front of you. I DON'T mean to be harsh, I've just known many people that bought a griddle to make Fajitas (it was in fact MY first meal on my Griddle) but everybody wants to know "how do the Restaurants serve these still sizzling?"...well I know.
LOL. Your opening is exactly me! I order something basic like enchiladas, chile relleno, tacos or a burrito.. And while I'm waiting, the damn fajita plate comes rolling by and I always say "Dammit! Why do I always forget about the fajitas?!?"
One good thing about chicken is that it's much more affordable than flank steak. Though if I go to a restaurant and see the two similarly prices I'm always going beef.
If we want to get technical (and I do like to do that) maybe we could call them Rajas de Pollo. Plus I'd rather have them with poblanos, which is strongly associated with rajas.

Allow me to clarify, you know, for other people that might see this. Yes, the dish named rajas is usually strips of poblano in a cream sauce, but the meaning of the word, rajas, is strips/ribbons referring to the shape of the poblanos. Similarly, the meaning of the word fajitas refers to a specific muscle of a cow.
I love Chicken, especially Fried Chicken but when it comes to Fajitas, it’s always Steak and especially Skirt Steak if I can find it. Skirt Steak isn’t very common up here in Michigan. I just never cared for Chicken in my Tex Mex or Mexican dishes.

I judge places on their carne guisada. Surprisingly, Bill Miller BBQ has decent carne guisada as well as breakfast tacos. I skip their BBQ.
