I don’t think you understand how thankful I am for your videos. Growing up without my mom I was lost in the kitchen. So when I became a mom I was completely clueless. I used to hate cooking because I always messed up the recipe lol. I eventually perfected about 9 dishes but didn’t like to try new ones to avoid wasting food. Anyway I tried this recipe tonight with a side of white rice and all I could hear was “mmm mom, this is soooo good.” Thanks so much I can’t wait to try your other recipes 🤗

We didn't want to eat the same boring stuff but I didn't really know what I was doing and nobody wants to eat burnt/overcooked/ruined food and even if you sit there and pretend it's not messed up well it is. So you can get stuck in a rut well I know I won't mess this up.
Pro-tip: Make a bigger batch of the marinade (like X4 or X6 the size specified) and put it in a mason jar in your fridge. Do that a day before you're even going to make these so when you marinade your chix it'll get a marinade with well-melded flavors. Marinade like this will keep for like 1+ year in your fridge no problem (essentially it's just a salad dressing) and just keep getting better and better for later times you want to make these with the marinade you already have handy :) Also, thighs are way better-tasting for fajitas than breasts. And if you aren't going to marinade for at least 2 hours, don't bother, make something else that night. I like about an 8 hour marinade myself.
After cooking this I did a taste test. I doubled the marinade spices at the last minute for the same amount of chicken and veggies to get a little extra boost on the flavor and added a little mesquite seasoning to get a little more “grilled” kick. 👍🏻👍🏻👍🏻

I'll have to make these. I used your marinade to make the steak fajitas. I've made fajitas a couple dozen times at least. The marinade made them so good and helped the meat sear better I think maybe the honey? I don't think my family believes I made them but there's nowhere in town who makes fajitas that good so they probably think I hired some kind of chef but thank you. That's mostly what cooking is. Eventually as you learn you can get more creative like some chefs do but to start just follow the directions and any good recipe will take you there! I've only made 1 thing so far but it was so good I fully trust what this lady says. I live in the southwest and it was the best fajitas I ever had in at least a decade maybe forever.

i always change up the order of how i make chicken fajitas and my main dilemma is always whether to cook the chicken whole or cut it into pieces. i definitely think this is the best way to do it because you achieve actual browning and better flavor! great method!

Finally somebody that can actually explain Mexican cooking I made your rice recipe and it came out Flawless the only thing I would say is it took 10 more minutes for cooking on low because a different pan it was non stick with the lid but really great recipes Roxanna

I tried this Fajita recipe tonight. It's my first time making a Mexican dish! My Fajita was a little bit oily as I only used half pound chicken breasts and miscalculated the mixture olive oil and sunflower oil. It still turned out great. I even cooked dogs meal with the leftover marinate with chicken skins. The dogs love it.

So the marinade will last in fridge for about a year?
or.... you could pour the marinad on and stick in fridge for maybe 30 minutes. soaks up flavor faster when u chill it
