    I always look forward to your recipe. It can be difficult to find good cheeses in rural areas but I stock up when I am in the city. I love Comte. I also love any sheep cheeses. I have to pay a fortune for it but....it's worth it.

      Many thanks. I totally get it about the cheese, sadly. It's such a shame because there is such a difference between these great cheeses and the factory made cheeses. I also love sheep's milk cheeses.

    French onion soup started as a hangover cure?! Who knew. You have inspired me to try making it myself. I have loved this dish as far back as I can remember. For me, it's right up there with pizza, fish & chips, and ribs.

    Hello Chef Christine. My name is Bob Petrowski, and I love cooking. Your recipe here for French onion is fab. ulous. I too love cooking it in a enamel cast iron dutch oven. Currently we are in Lima, Peru, due to no flights in or out of Peru. I am searching around for that French Comte cheese I hope we can find it, you video here made it look absolutely mouth watering.     I have never tried onion soup before. Now that I know what goes into it, I think I will be brave and try it. I love your show, Christine. You need to upload more than just once a week.

      Many thanks. You definitely have to give it a try. Good idea about more videos weekly, but right now we are working at capacity to produce quality videos. But I am working towards that and I thank you for your support in building my channel.

    Well darn now I have another thing on my menu to cook! Last year I bought beautiful onion soup bowls that are still in the box! This is next! Looks amazing but all I can smell now is that awesome Beef Bourguignon lawdy I'm in heaven already!

    French Onion soup is not only magnificent, but it's also easy to make and very affordable. It can be a good seller in a restaurant because of the fact that the customer does not want a filling soup as to leave enough room for the main course and dessert and it's pretty affordable compared to other soups. Now, the restaurant should want to sell this because of the potentially high profit margin.
    This dish/soup is really a great choice for a video.
    People ought to try this recipe. The soup is out of this world and so is its fantastic smell, which emanates from the cheese.

    Another GREAT video!!!
    When I use one of the knife sharpning sticks I dull my knife. The camera work when you were slicing the onions was awesome, I would've cut my finger completely off

    As Juan would say, “Oh Chris ....” 😂 This comes at JUST the right time. I’m headed to Paris at the end of the month for two weeks. Not only will I have some great French onion soup (bistrot recommendations welcomed!) but I’m going to bring back some comté as well as other cheeses. Then I’ll make some soup for family and friends. As a vegetarian I’ll be using my own veggie stock - I’m working on twists that add umami depth. Keep it up, Christine! - 😘

    I like onions but i never really understood the reason why people go crazy over french onion soup. Your video helped, thank you. Speaking of onions, would you do a presentation for the lebanese dish mujaddara? It calls for frying onions.

      Thank so much for watching. I prefer the simple yellow cooking onion here. You could use any variety, each will give its' own distinction. I hope you try it.

    Greetings from Turkey. I wanna give it a try this recipe with change a bit. What can i use instead of alcohol? Grape vinegar? And how much? Thanks...

      Greetings back to you and thanks for watching. If you can't use the wine, I would just add a bit of vinegar - something not too acidic. Here I would use apple cider vinegar or even Asian rice wine vinegar would work. My guess would be 30-40 ml , no more than that or the soup will be too acidic. The idea here is to balance the sweetness of the onions . I would also add the vinegar closer to the end of cooking so it doesn't reduce too much. I hope this helps.

      MyFavouriteFoods ChristineCushing One thing I’ve tried in the past is to substitute apple cider for some of the stock, up to about 25%. This may not be authentic, but it adds a little twist and seems to :brighten” the soup a bit.

    hey christine...just made the soup. Very good recipe! I added 50% more onions than you and a few yellow ones in that. I also used all beef stock to make this. The flavors are good. I bit sweet like you said. Next batch i'll use dry red wine instead for fun.

    Excellent Christine! I once had a bowl of what I described as Italian onion soup. Same idea but along with the beef broth, it had some tomato. And I think it also had some tarragon. Any thoughts?

      Yes, absolutely you can use a regular pot. Every material will respond differently to the heat, so you can just keep your eye on it and probably have to stir it a bit more. It may also take a bit longer but it will work, as long as you don't skip the first step of steaming the onions. Thanks for watching and hope you try it.

      I use kosher salt. You can freeze it , then thaw , reheat and add your cheese / bread topping. It will be perfect. Thanks for watching and hope this helps .

      Absolutely. I have gyro slotted for bbq . There is already a video for a great tzatziki sauce, although , production wise, it's a bit too bright. The process is great though. Please check it out in the Greek playlist. Thank you

    Make a roux.. add that to the mix.. Instead of raw flour. It gives the soup the proper body and flavor. More crouton to support the cheese. The cheese needs to be a lid holding the soup from boiling out. Your recipe looks tasty, I just love proper french onion soup. Its my favorite.

      What amazes me is how many diners serve this. No doubt, they take some short cuts. No fancy cheeses, usually Swiss, but I would sprinkle Parmesan on top and it would be very tasty.

      Mariya Star any kind of onion will work , as long as you don’t skip that first steaming step where you ensure onions are soft before trying to brown them. Each type of onion will brown at a different rate based on sugar content. I hope this helps. Thanks for watching !

      Naturally Joy classically it is white wine in French onion soup. The white wine is a better contrast to the sweet onion mixture and also works better with the cheese. Thanks for watching
