  • From Quarantine Kitchen: In these extreme times of social isolation and quarantine, I want to show you how to make the most of a few simple ingredients in your pantry, like dried chickpeas or any bean, simple vegetables and some extra virgin olive oil. This rustic chickpea soup is very cost effective, nutritious, easy to make and most of all delicious. The idea is to use up whatever you have in your pantry and fridge. FULL RECIPE BELOW
    RECIPE - CHICKPEA SOUP
    1 cup dried chickpeas (250 ml), or other beans
    2 tbsp. olive oil (30 ml)
    1 carrot, diced
    1 small onion, diced
    1 rib celery, diced
    2 cloves garlic, chopped
    5 cups water (1.25 litres)
    1 tsp. dried Greek oregano (5 ml)
    ½ tsp. ground cumin (2 ml)
    2 bay leaves
    Grated zest of 1 lemon and juice of ½ lemon
    Sea salt and freshly cracked black pepper
    fresh chopped dill , optional
    Squeeze of fresh lemon juice, to finish soup, optional
    Splash of olive oil, to finish soup, optional
    Soak chickpeas in water for 4 - 6 hours. Drain and rinse with cold water.
    Sauté onions , carrots, celery in olive oil on medium heat until golden, about 2 to 3 minutes. Add garlic and cumin and Greek oregano and continue to cook 1 to 2 minutes more or until garlic is golden. Add chickpeas, lemon zest , bay leaves and water. Bring to a boil, cover and reduce heat to low. Simmer for about 40 to 45 minutes or until chickpeas are tender. Season the soup with salt and pepper. Add chopped fresh dill, lemon juice and olive oil. Serve soup hot.

    Made it from recipe. Served with sheep’s feta on baguette. Yum!! I thought I didn’t like chickpeas! Thank you, Christine. This was as easy as you said, and tasty enough to go into regular rotation.

    I going to cook tomorrow. will go and buy some garlic bread. I love garbanzo beans. I am a senior and I get monthly food bank and they give time to time dried beans. I cannot wait to try it. thank you for sharing.

      Elizabeth thank you. It super helpful , especially with feathery dill. I now do it throughout the winter for most herbs. It’s so practical to just open freezer
      And be able to sprinkle from a Variety of herbs. Hope you are keeping well

    I also freeze fresh herbs - it’s especially great to have my own, homegrown, fresh herbs in winter. I take a different approach: I chop them up fine and put them in ice cube trays, fill the tray with water then freeze. After their frozen, I put them in a freezer bag and voila! For soups you can just drop a cube or two in the stock. You can also thaw in a microwave and drain the water; I usually drop the cube(s) in a glass measuring cup to do that, then run through a strainer. You can also freeze your own homemade pesto - just put the pesto in a freezer bag and put it in the freezer.

    I love the look of the chickpeas soup and wished to be there to help you eat it. After viewing some of your videos my interest in cooking more at home have increased over the days and my pantry is being cleared of items I have had for some time. I love soups and that one does look great even though I am not Greek. I hope you are keeping busy at home during these weird times and not getting depressed as you avoid going out and staying away from the crowds.

      I have made the soup and enjoyed making it. The recipe opens our mind to other possibilities by using vegetables you have in your fridge such as leeks and adding a parmesan rind. Great idea!     Nice easy chick pea soup! Love it for Autumn season coming up. I love how easy it is and quick preparation. And could use dill or spinish as well so yes GREAT idea . Invest in quality olive oil too. Greek foods are new for me . So makes for new seasoning and use of hello! Lemmon. I sometimes use green limes. In my Mexican American soups.

    This is the kind of confort food we have in Spain every lunch. If you like this type of meal you should try the “cocido madrileńo”. That’s heaven in your table😇😇😋😋😋. Thanks for sharing

      MyFavouriteFoods ChristineCushing I made this yesterday, doubling the recipe. 35 minutes in the Instant Pot was perfect. I even went out and bought fresh dill to accompany it. This will definitely be a regular recipe for me now. Hearty and nutritious. Love the tang the lemon gives.

    Hi Christine. Loved watching you on TV from years ago, and so excited to find all these recipes on You Tube. Family and I love all the new Greek recipes I've tried so far, except for my 2 young grandchildren. As much as I love my Italian meals, I've always loved trying new recipes, yet, keeping our likes and dislikes in mind . I'm about to make this again, and want to send some to my Greek son-in-law's Mom. She's over 80 and quarantined alone, since she's, understandably, afraid to come stay with us. Can I freeze this soup so he can bring it to her? I personally have never liked freezing prepared food, so I'm not comfortable doing so, even though I know my sisters-in-law and friends do it all the time. What do you think?

    What a great recipe😋, I will be making this for my family.     A question, about the chickpea soup. I've been told to add the salt at the end of the cooking process. Does adding the salt early on make the chickpeas difficult to cook? Even if they are soaked?

    That was great. Just realized we have quite of bit of canned chickpeas, so this is perfect right now for the quarantine.
    Do you think if I added bit of saffron to the sautéd vegetables, it would completely change the flavour?

    Always like to soak whatever dried bean until it begins to sprout. Not Hard. Start the day before. A[art from flavour look at what is in can, beside beans..?

    Good recipe but i wd use way less oil as its so fattening it ed take hours of running to run it all off the hips etc eh!
