Spaghetti & Meatballs | Christine Cushing

  • I share all my top tips on making tender juicy meatballs, loaded with herbs, soaked bread and my favourite combination of pork, beef and grated Parmigiano cheese. We whip up a simple fresh tomato sauce with garlic sliced a la Goodfellas while discussing why Spaghetti and Meatballs is not really Italian. Lastly, how to maximize the flavour in your spaghetti before serving it. FULL RECIPE BELOW
    RECIPE : SPAGHETTI & MEATBALLS
    28 oz. San Marzano or good quality tomatoes (800 gm )
    2 Tbsp. extra virgin olive oil (25 ml)
    1 clove garlic, thinly sliced
    chile flakes to taste
    alternatively 2 jars of my Spicy Garlic tomato Sauce
    salt and pepper
    10 oz. ground beef (300 gm )
    5 oz. ground pork (150 gm)
    1 slice stale crusty bread, soaked in water for 1 to 2 minutes, then squeezed
    ½ small Spanish onion, grated (100 gm)
    1 egg
    1 tsp. Worcestershire sauce (5 ml)
    Salt and Pinch of red chili flakes and cracked black pepper
    1/3 cup freshly chopped Italian parsley (80 ml)
    2 Tbsp. fresh oregano, chopped (25 ml)
    Finely grated cheese - Parmigiano or Pecorino cheese
    Olive oil for frying
    Fresh chopped basil
    1 lb package good quality spaghetti (450 gm)
    sea salt to taste
    If making your own sauce, start by heating olive oil with 1 clove garlic and chile flakes over low heat until just translucent. Add the tomatoes and crush gently with wooden spoon. Bring to a simmer over medium low heat until thickened and flavourful about 30-40 minutes. Adjust seasoning .
    Meanwhile, In a medium bowl combine ground beef and pork, soaked bread, egg, red chili flakes, Worcestershire, grated onion, grated cheese and season with salt and pepper. Mix to combine. Shape gently into 1 " balls.
    In a large skillet, heat olive oil until shimmering. Arrange meatballs and fry in 2 batches for about 6-8 minutes turning to brown evenly . Makes about 20 meatballs. Remove and drain.
    Bring tomato sauce to a gentle simmer. Add meatballs and let cook, about 25 to 30 minutes until meat is no longer pink. Finish with fresh chopped basil.
    Remove the meatballs onto a plate, cook pasta according to package directions for al dente and finish in simmering tomato sauce. Serve with meatballs, more grated cheese.
    Serves 6

    Hi Christine. Spaghetti is one of the ultimate comfort foods, and it's been a while since I had it with meatballs. I might make them a little smaller or fry them in a little more oil, but your version looks delish. I think most people like to make tasty dishes with a little of their own touch. Thank you!

    Christine, you referred to The Goodfather thickness of garlic and although there is a famous scene in Goodfather when Clemenza makes Spaghetti Meatballs I believe you are thinking of a famous scene from Goodfellas where Paulie (Paul Sorvino) develops system for doing the garlic. He used a razor and he used to slice it so thin that it would liquefy in the pan with just a little oil. Manga manga

    Looks delicious!!! I can tell by the way the meatballs looked while they were being fried. As soon as you cut into them they are going to fall apart (yum). I know the feeling when I taste a dish and it's better than I thought. I say to myself, self, dang even I surprise myself.

    Wonderful.. it's how we make spaghetti and meatballs here.. except for one thing..
    In our house, the spaghetti gets a light toss with sauce and sauce is served separate.. but that's nit picking.. Great video! Thanks!

      Thank you Paula. For the bread crumbs, you have to be careful of the ones that look like sawdust, as they will make the meatballs mealy. If that's all you have , i would just add 1/4 cup (50 ml or so ) to this recipe. I hope this helps and that you also take a look at my lasagna video. I think you will love it.

    Wow! The colors really POP - always such beautiful food & photography. Must try this as I've been forever searching for soft tender meatballs like the restaurant in my old neighborhood. Maybe the bread/water without milk, or fattier pork will do it. Is egg added unbeaten?

      Why thank you so much! I love that your enjoying my food. We really try to make it look great also. I think you will love these meatballs. I did add the egg unbeaten and then mixed the whole thing together. By the time time egg is mixed is just about the right amount of time to work the meat to the perfect texture.

    One of my ultimate comfort foods. I will be trying this soon. Are dry bread crumbs acceptable, and if so, would you add any liquid such as milk?

      It's true right? Absolutely, you can use the dry bread crumbs although I would suggest the Italian style, as they seem to have more texture than the usual . I would rehydrate with water or milk , same as with bread to avoid the avoid them pulling out the moisture from the meatballs. I hope this helps.

    I also love parsley, and a great source of iron. You can improve the flavor of pepperoncini flakes by removing the seeds.

      I will never use Worcestershire sauce; I put it in Salisbury Steak, and its flavor seeped out into the sauce and not only flavored everything but added a rotten vinegar taste. It's also not very Italian. Gravy Master or Kitchen Bouquet would be better, or beef broth powder.

      Browning the meatballs is necessary so they don't break up when you are stirring the sauce.

    Christine in Mumbai, parsley and oregano are expensive. Could we use something like coriander and a leaf like basil (Tulasi). Or dried parsley and oregano would do?

      In that case, I would go for basil and dried oregano. The coriander would take it in a more eastern direction . I hope this helps and that you try them. Thank you to you in Mumbai!

      Of course you could add onion and oregano into the sauce but I just kept it super simple for the purposes of this video. Also the meatballs have so much flavour that it's not essential. Thanks for watching and hope you try this great meatball recipe.

    Question- why grate the onions and not dice them?

      That is a great question ( Pun intended ) .. By grating the onion, it will more quickly soften from the first frying , then gentle cooking of the meatball in sauce. It also adds a bit more moisture initially to the mixture because that liquid in onion is released during grating. It's how we always made it in our family and I prefer it. I hope that helps.

      You can use fresh tomatoes , when in season and if good. It’s better to use a good quality canned tomato than a tasteless fresh tomato. Thanks for watching

    Is Spaghetti and Meatballs Italian?
    The classic dish can be found in red-and-white tablecloth spots across the United States, but there’s a fascinating history behind where it got its start
    Nothing says comfort like a big bowl of spaghetti and meatballs. And, nothing says Italian food like a big bowl of spaghetti and meatballs-unless you are Italian.
    If you go to Italy, you will not find a dish called spaghetti and meatballs. And if you do, it is probably to satisfy the palate of the American tourist.
    So there you go, spaghetti and meatballs may not be Italian, but it is a symbol of Italian-American cuisine
    The first is that Anglo-American diners were accustomed to having a starch accompaniment to their proteins, namely potatoes. To satisfy the requests of their clientele, these early Italian restaurants married the main course meat dishes with pasta.

    Your recipe is delicious but, as a matter of fact, this is more an Italian -American dish than an authentic Italian pasta meal. Yummy nevertheless......
