Made this today and absolutely loved it... The strawberry with macadamia nuts is velvety and creamy.... Nice sweetness though my last bit of maple syrup is only slightly over 1/4 cup. Worked well for me in terms of sweetness! Thanks for the excellent recipe!!

Yes, I love macadamia nuts too! You could do a mix of macadamia nuts and cashews to reduce the cost a little.

Hi Monique - if you're using frozen strawberries, make sure they're thawed out to room temperature. It would be hard to blend the filling with frozen strawberries.

It's very good. I ended up with a little leftover crust ingredients and I can't stop grabbing tiny bites of that nut mixture every time I go into the kitchen 😋. I did end up using cashews, though (because I really don't like macadamia nuts). Next I want to try it with other fresh fruit. Thank you for this simple, tasty dessert recipe!
Now that I've had time to try more of it, I'm wanting to improve the texture. It isn't as smooth or creamy as I'd like. It's definitely the result of the ingredients having been frozen that seems to be the problem, like ice crystals formed and made things less smooth. I'll work on tweaking things in future versions. Still very tasty!

Hi Pem - it varies, but I do make a lot of recipes from my dinner cookbook. A lot of blended soups, stir fries (vegetable stir fry quinoa stir fry), hummus, zucchini lasagna, cauliflower risotto, zucchini fritters... the majority of our meals are centered around vegetables :)

Any substitutes for dates(high in sugar-trying to make diabetic friendly) when making the crust?
Hi Garry - you could just use nuts, coconut oil, and a sweetener of choice. For every cup of nuts, you would need 1 Tbsp. of coconut oil, and 2 Tbsp. maple syrup (if you're making it diabetic friendly, then substitute with a liquid sweetener of choice). The crust won't be as chewy/sticky, as the one with the dates; it will be more of a graham crust.

You can use any liquid sweetener you like. I believe that Lakanto carries sugar-free "maple syrup".
Is this a frozen cake? Or from the fridge? I do not understand it
The entire process is described on my blog if you're interested. But essentially, I froze the cake to remove it from the springform pan (the harder the cake is, the "cleaner" the removal). Then I let the cake thaw on the counter for a few minutes, cut it into slices, and served it.

You can substitute the pecans with walnuts (ideally) or some other type of nut, such as almonds or hazelnuts.

Yes, you can definitely use frozen strawberries. Just make sure they are thawed out to room temperature before using them. You could use walnuts instead of pecans :)
