Notes on making this! 1. When placing the crust into the mold, make sure to TIGHTLY STICK the dough together. Mine had a lottttt of cracks and I had to patch them up with a mixture of flour, sugar, and melted butter so the filling wouldn't leak out. And try to cut as little as possible to decrease the possibility of forming cracks 2. The dough quantity is a lot. I had a 21cm mold so i doubled the recipe and I was still able to make enough dough for an 8in tart mold. 3. The cream cheese was a bit difficult to work with so I placed it over a water bath to melt it a bit to mix easier. Make sure to strain it to make it silky smooth even if you think you've squished all the cream cheese. 4. I didn't have the stones that was used in the video so I used uncooked rice instead and it worked perfectly. For those that don't know what the purpose of the stones, it's to prevent the dough from rising and it keeps the shape of the tart. 5. The tart itself was delicious. It had the consistency of an egg tart but the taste of a cheesecake. It wasn't too sweet so it was perfect. I didn't add the caramel anymore because I was worried I might ruin it but even without the caramel it turned out perfect.
