LEMON PUDDING CAKE RECIPE
(makes 6 servings)
Ingredients:
3 large eggs, separated
1/4 cup agave nectar, or maple syrup (60ml)
1/4 cup unsweetened applesauce (65g)
1/4 cup oat flour (25g)
3 tbsp rice flour, or other gluten-free flour
1/4 cup lemon juice (60ml)
1 cup milk, dairy or non-dairy (240ml)
NUTRITIONAL INFO (per large serving):
126 calories, fat 3.5g, carb 18.9g, protein 5g
Preparation:
Preheat the oven to 320°F (160°C). Coat an 8-inch (20cm) square baking dish with butter.
In a large mixing bowl, whisk together the agave nectar (or maple syrup) and unsweetened applesauce until well combined.
Add the egg yolks to the bowl and whisk until the mixture is lightened in color and slightly thickened, about 1 minute.
Sift in the oat flour and rice flour (or other gluten-free flour) and mix to combine.
Stir in the lemon juice and slowly pour in the milk while continuing to mix.
In a separate bowl, beat the egg whites until soft peaks form.
Gently fold the beaten egg whites into the batter until just combined.
Pour the batter into the prepared pan and bake for about 25 minutes, or until the cake is golden brown on top.
Remove the cake from the oven and let it cool for 15 minutes before serving.
Spoon the cake onto plates and serve with fresh berries or a drizzle of heavy whipping cream, if desired.

Edit: It was so delicious! I didn't have apple sauce on me so I boiled half an apple (diced) until the small cubes were transparent, then added water and blended. I used whole wheat flour in place of rice flour and blended oats for oat flour. I left it in the oven about 35 mins, it didn't caramelize on top like his but it still had the soft sponge and silky lemony pudding. Next time, I would add more lemon juice as I am a lemon addict, but it was definitely flavorful and delicious!

I hope everyone understands that as far as their metabolism is concerned, the syrup and flour ARE sugar. Nothing wrong with that (I'd happily eat it) but don't delude yourself that this doesn't have sugar.
Anything sweet has sugar in it but sucrose is the one to avoid. This is what you have in refined sugar.
I would use monk fruit as sweetener!

Lemony desserts are so good! Well, I would suggest you go with whole wheat flour, but regular flour would be also fine.

That would be great! Not sure about the coconut flour, I guess you should be adding less amount like 2-3 tbsp, it really dries out the baked goods, and I don't really use it often.

Sure, that would be fine, lemony flavor is not overpowering here at all.

Yes. You can substitute any sweetener for the agave - you may want to quickly google “how much honey to substitute agave nectar”
In order to use plain white sugar you may or may not need to make a simple syrup.
Agave nectar is often touted as a healthier sweetener because it is Lower on the glycemic index. It however is extremely heavily processed to turn the agave juices into a sweet syrup so many people prefer not to use it.

Yes you can, but I would suggest you use 1/4 cup cornstarch in place of oat flour just for the structure.
How about tapioca starch? Can I use that? Sounds like it could work

Not really, I guess I was using orange juice in some of my recipes, but not really made an orange bread.
Agave nectar, maple syrup, honey etc are all just as bad as sugar, if not more so due to the additional glucose. However if you really don't want sugar and want one of those substitutes, the best option is honey because at least it has some protein and health benefits in it. But ultimately, sugar is still sugar.
It's been verified that raw unprossed honey lowers blood sugar
Sure, it's all sugar, but using maple syrup or agave I can add way less amount in each of my recipes, that's the main reason I use these substitutes.
Stevia’s the way to go than, completely natural, zero sugar,calorie and carb
By using honey you destroy all the enzymes and nutrients at such a high temperature so a total waste, really. I hear stevia is OK. This recipe looks super yummy and I am willing to give it a try :)
@@lucez205 that's great, I tried making it today without the honey and the taste was amazing but the form was almost liquidy, I don't know if my oven is the problem but I baked it for almost an hour. if u do try it out let me know how it went, I'm interested to know if it works for others
Agave nectar is as bad as sugar...not so healthy ..but i think its gonna taste good
Some people just don't get sugar is sugar...no matter the source. Doesn't matter if it's table sugar or fruit or maple syrup. It's all a bunch of sucrose and glucose molecules.
Arava has less glucose therefore the GI is lower.
Agave is actually worse than sugar it's 80% fructose vs 50% fructose of table sugar, fructose can only be processed by the liver. Rice malt syrup would be a better alternative with no fructose content.
You know, you just have to use some sweetener in order for dessert to taste good, it has to be sweet to call it a dessert. What I find good in using maple syrup or agave in my recipes is that I use way less sugar in total, because it's more sweet than sugar I can use let's say 1/4 cup instead a full cup of sugar, so at the end I can enjoy healthier dessert that is lower in added sugar.
