Ingredients and preparation of the lemon cream:

1:31 cornstarch (30g / 3 tablespoons).

This looks so simple and delicious: lemon curd and whipped cream blended. The only change I recommend for us lemon addicts 😋 is this: before you slice the lemons to juice them, remove the zest to add in during the step where you combine the lemon curd with the whipped cream. DON'T cook the zest! It will be delicious piquant with zest in.

As a professional chef of 35 years I can tell you that it doesn't make a difference. The physical beating of the cream is what thickens it, not the chilling effect of the cold beaters and bowl.

I do wish you had given the measurement for the lemon juice since lemons vary in size and juiciness.

You could have used the zest. Put it in the sugar and rub it with your fingers or back of a spoon. Or put the zest in the juice and muddled it. Or if you like the zest just grate it. It will take your lemon flavor to the next level.

This is good as a frosting for an angel cake, then chill cake, so refreshing on a hot day
A little grated zest of the lemons added would be nice.
For a change instead of using lemon juice use the same amount of freshly squeezed orange juice. Mum would do this as a change from lemons, great if you serve in a slightly larger serving dish with meringue piped over the top and either browned under a grill or with one of those torch thingys chefs use.

We did not have the benefit of computers and the internet of course, in 1962, but I was 5 then myself, and started learning to cook at that age, from my mother and my aunt! My uncle made me a stepstool just my size to be able to reach the stove, to turn the pancakes, stir the scrambled eggs, and such, and reach to the sink when it was time to wash the dishes.
I have fed my family from scratch-cooked recipes for many years, and my husband and kids prefer MY cooking and recipes to anyone else's! (Even his mothers!😮)

Thank you for such a easy recipe. It will be perfect for the vegans in my family who won't eat anything with eggs in it. I'm going to substitute coconut cream for the dairy cream. I'm sure it will taste delicious. Oh! I just noticed you also offer a creamy orange dessert too. It's probably made the same way this lemon one is.
