      Reminded me of a recipe I found in the Star many years ago. It was called Chocolate Pudding Cake worked well. I haven't seen the the mix in years, Monarch I think. All I have at my end is a GIF file so I don't know how to get it to you.

      I bet this would be incredible paired with fresh raspberries, whipped cream or maybe a cream cheese icing or glaze on top. Maybe throw in a drizzle of raspberry sauce on the side. Or poke small holes in the top and pour in some raspberry gelatin, chill it so the gelatin sets up. Mmmmm.

    This is kinda similar to a family cake we have in some old hand written recipe books. Ours is more of a sauce bottomed cake rather than anything else. and the method is slightly different, but the intended more or less outcome is the same. Sauce on the bottom and slightly mixed into the cake above.
    We make an orange sauce and pour it into the bottom of the dish, then pour the batter over the hot sauce and straight into an oven. As it bakes the sauce stays about maybe 50% at the bottom and the rest bakes into the cake. But the cake itself doesn't become super wet or anything.
    It is a recipe from my grandmother who adapted it from something similar her mother made (I don't know if I have that recipe but I believe it is an old Afrikaaner or Dutch recipe. )
    EDIT: Recipe now included below.
    Main cake recipe:
    Ingredients:
    3/4 cup self raising flour (250ml cup not packed. Sifted. I will try and convert this to grams the next time I make this)
    1/2 cup sugar
    1/2 cup milk (full cream milk is best)
    1/4 cup melted butter
    1 egg
    1/2 teaspoon Bicarbonate of soda
    1 Tablespoon Orange zest
    1/2 teaspoon salt
    Batter instructions:
    Beat eggs and sugar together and add in melted butter. Add the rest of the ingredients except milk and Bicarbonate of soda. Add those last. No need to mix a lot. Mix till it is combined nicely.
    Sauce recipe:
    Ingredients:
    1 cup water
    1/2 cup Orange juice
    1/2 cup sugar
    1 teaspoon butter
    pinch or two of salt
    Final Instructions:
    Add all sauce ingredients to a small pot. Cook till the sugar is dissolved and then for one more minute on simmer.
    Remove sauce from heat and pour into an appropriate sized dish. (There is no recommended size but something around 25cm square and 8cm deep is more than enough for this batch size. )
    While the sauce is still warm (although it can be cold), pour the batter over the top of the sauce gently.
    Some sauce will be on-top of the cake batter and that's perfectly fine.
    Bake in an oven at 175 Celsius (around 345F) for 20-25 minutes.
    Serve warm or cool.
    Personal notes. We like to double the sauce amount but only 1.5x the sugar amount in the sauce. For an extra saucy underside that isn't so sweet. But this recipe is very much up to your discretion and you can change oranges out with lemons or something else citrus.
    This is the re-written version of the recipe from my mother who write it down in 1990. My grandmother wrote her version (updated to make use of temperature controlled ovens funnily enough) in Afrikaans between 1950 and 1960.

    We call it lemon delicious in New Zealand, at work we stew Rhubarb and serve the lemon delicious with the rhubarb and pouring cream... its fantastic.

    Holy cow this is amazing. I made it twice in two weeks. The second time my lemon was pretty small so I used a lemon and a lime and added a dash of vanilla! Tasted like a lemon-lime creamsicle. This recipe goes on rotation for sure.

    Tried this a few weeks ago in a pinch to return a neighbor’s plate non-empty, and I couldn’t be happier to have found out they were on holiday. For the time and effort that goes into making it the end result is unbelievable. It’s certainly one of the best desserts I’ve had. I can’t wait to try out other ingredients like sour cherries and plums!

    I love this lemon pudding. My mother discovered it in an American cookbook when she lived in the USA back in the 60s. Thoroughly recommend it.
    PS I'd use a deeper bowl and put cold water in the Bain Marie. If it cooks too thoroughly you don’t get the sauce at the bottom.

      @Gaudia Certainis Sorry to sound so cooking dumb, but can you explain further? My wife and I had a fantastic lemon Cake with a sauce on the bottom 18 years ago on our honeymoon. I'm going to be brave and ATTEMPT to make it for her for our anniversary next week.
      I really want the sauce.

      @@JamesWSmith-sj2zg i think the original poster is saying that the whole purpose of the water bath for the cake is to slow the rate at which it absorbs heat because that's what ensures that you get good separation and sauciness at the bottom so using cold water instead of hot to start is probably better.

      Ok i just made this, it definitely came out more custard-y than sauce, even starting in cool water.. it's delicious but it might just be the recipe, i've seen others posting about their recipes for sauce bottom cakes include pouring water and sugar over the batter before it goes in.. maybe a recipe like that would result in a saucier consistency

    This was in the Soufflé recipe book my father gave me as a 'leaving home' present, 50 years ago. It was called 'Lemon Pudding Souffle' although the book acknowledged that it wasn't a true soufflé.

    Love this. Based on the old fashioned "Half-hour Pudding". Mom made them often as they were quick and easy. I remember 'Sauce 'n Cake'. Great to hear you call the seeds "Pips". Thanks for sharing.

    My sister lived in Longlac for many years, her husband worked at a pulp mill. My Grandmother made us these cakes/puddings she also made a brown sugar version and a chocolate version, brings back memories.

    In NZ this is often known as Lemon Delicious. In tough times I did occasionally serve it up as the main course with the instruction to the kids 'If you don't eat your pudding (dessert) you can't have any dinner!' It always worked. And now I live alone i sometimes tell myself the same thing, Best served with lashings of cream, the pouring variety. Go easy on buttering the pan, the crusty bits on the edges are the cook's treat, And yes, I can still manage a whole pan, but it is also great for breakfast.

    Outstanding and so simple to make. Instead of lemon, used an orange and some rhubarb to give the needed tartness. Used half Stevia, half sugar with good results. Thank you for great recipe and clear instructions.

    Lemon self saucing pudding is one of my all time faves. The chocolate one is pretty good too. Come to think of it, the butterscotch is pretty darn good as well! I’ve never seen a recipe for it though, what a treat!

    I saw this recipie on UA-cam here in Australia (A Canadian expat) and remembered those boxed pudding cakes from the 70s and thought we have a lemon tree out back and a friend who needs a pick-me-up. The cake turned out perfectly and we delivered it to our friend's door and the report was it was a success. This will now be a go-to for a simple homey cake. Thanks!

    Made this today with lemon and lime, and I used a cold water bath. Quick, easy to put together and delicious. Husband did eat most of the pan. I remember getting those boxes of sauce and cake back when I was a kid in the 80’s too and thought it was the best thing ever. Mine was still more of a custard on the bottom, but that’s okay.

    The title sure aint a lie, I can say that much!
    Had my doubts tasting the batter, honestly. Added a couple small pinches of citric acid and hoped for success. Came out wonderful!
    Flavor concentrated nicely after the bake, and 3 of us managed to demolish it

    In UK I’ve always known it as “Canadian Lemon”. I thought a Canadian cook would have called it thus. It’s a fabulous pudding.

    Just made it today (joys of working from home) and utterly delicious. Used over-ripe limes instead, because our tree is currently going crazy and they're quite mellow. As Dennis Binyon mentioned below, appears to be called Lemon Delicious in Australia. You'd think I would know that, but as a child of European parents, I have missed some of the more common Australian treats. Really simple recipe, took me 35 minutes from scratch and included some cleanup. Highly recommended.

    Greens' self-saucing puddings are a staple down under. Probably the first thing most kids learn to bake. And yes, the lemon one is the most popular.

      I was seeing if someone mentioned our good ole self-saucing pudding. A lemon self-saucing pudding was one of the first things I learned to cook, from scratch, as a lad in the early 80s. Now it's heading into winter, it's time to make them again, and serve with freshly whipped cream.

    I made this to take away for Easter. Except I substituted Swerve sweetener for the sugar and almond flour for the wheat flour. Kept to my low-carb diet. It turned out fantastically. I loved it, and apparently so did everyone else as there was none left at the end of the day.

    Make sure you clean the beaters after the butter creaming. I left them with butter on them and my egg whites didn't stiffen. Still worked really well though, definitely making again. Cheers Glen!

    Just made this. I messed up the egg whites by getting some yolk into them but I frothed them up as much as I could and incorporated them and baked it. It came out just fine and probably was slightly less airy then you got it! Great recipe. So simple with great results!

    Oh man..apple cinnamon sauce n cake..I can still remember the smell and taste from my childhood. My mom would buy those when they were on sale for $1 as a quick easy weeknight dessert..I’m 39 and that is also over 30yrs ago 😅

    We have a couple of old family recipes like this one. First something we call Lemon Fluff, very similar to this but a little saucier and maybe a little less cake. The other one is a chocolate lovers delight- Saucy Brownie Pudding. Chocolate caky thing on top and a chocolate sauce on the bottom. Delicious!

    Love Sauce and Cake it was first thing i thought of and hoped this recipe was. They were soo easy to make and soo tasty. The Cinnamon one was great also

    Hi Glen, Hi Julie. My mother used to make this dessert. She said that my grandmother said that the amount of butter should be the size of an egg! Mom also said if you needed to make it for more people, just add more milk. She also made a chocolate version. It used an orange instead of the lemon plus cocoa.

    Back in the day there was a recipe on the box of Grape-nuts cereal for lemon pudding cake and it was delicious. Oddly the Grape-nuts cereal worked in it despite their hard crunchy texture.

    Those Sauce'n'Cake mixes were delicious. I have a recipe for a hot fudge cake that is the same, just a choccolate version. Very yummy!
