Total Jerk Chicken Grilled On The Weber Kettle

  • Amazing spice. Perfect level of heat. Tender, juicy chicken. This recipe for Total Jerk Chicken resulted in a perfect bird grilled indirect on the Weber Kettle.
    Jerk Chicken Marinade
    1 large bunch of scallions chopped
    2 shallots peeled and roughly chopped
    2 TBSP minced garlic
    2 inch piece of peeled ginger roughly chopped
    3 habanero peppers with stems removed
    1 TBSP dried thyme
    2 TBSP allspice
    1/4 tsp nutmeg
    2 TBSP brown sugar
    1 TBSP salt
    1 TBSP pepper
    1 TBSP cider vinegar
    2 TBSP soy sauce
    1/2 vegetable oil
    Juice of 2 limes
    Blend fully in blender and coat chicken. Let marinade for 10-24 hours. Grill indirect until nearly cooked, then finish to 165 F internal temp, direct over coals if desired to add color.

    Ha Ha Ha funny start to this awesome video, you are soo good at these cooking videos, great instructions easy to follow along with some comedy. It's been a while since I have followed any youtube channels due to work, but the last few days I have spent all day trying to catch up on my favorite channels, and this is certainly one of my favorites.

    Hello Ry........I used your Jerk Chicken recipe this past weekend.
    After cutting up the bird, I marinated it for about 18 hours. I varied the cook from your method, using my new SNS rather than the vortex. ( just got the SNS and I’m familiarizing myself with it.)
    I did use digital temp probes on the grill surface and in the breast.
    My wife and I concluded the finished bird might just be the best chicken we‘ve EVER eaten. Even the leftovers, served cold, were beyond wonderful.
    Once this Covid nightmare is behind us, this will be a wonderful treat to serve friends and family.

    Now that's what I call jerk chicken, I've seen several recipes on UA-cam but they tend to leave out the heat... I'm digging your recipe though, I love heat in my foods... Thanks for sharing👍👍

    Ry, what I like about your channel is I love watching your videos even if I won’t eat it. ( I hate jerk spice) Best rub for chicken I think, is cavenders.

    This recipe sounds like one I use to get from a Mom & Pop Jamaican restaurant when I was living in Atlanta.
    It was served over a Jasmine rice that was seasoned with milder seasoned and had some raisins and another dried fruit. I never could figure out what she put in the dish.
    When I asked her about the jerk seasoning she just said that every family had their own recipe.
    Thanks for this recipe. Going to have to try it. I wonder what it would taste like with a touch of the olive wood when cooking it... Hummmm. :)

      I've heard that people use pimento wood when making jerk chicken, so Olive might be interesting :)

    That marinade impressed me Ry I'm so making that! I did pickle brine hickory smoked chicken thighs the brine is interesting and possibly one of favorites. Maybe you could do something like that when you make your smoked egg video?

    jerk chicken is the best. in jamaica they smoke it using the bark of allspice trees, so maybe you can make a smoke from the allspice powder to achieve that effect? it looks great, thanks!

    That looked good buddy, love a bit of BBQ'd chicken. Did something very similar the other day but with more of an Indian twist! More like a Tandoori Madras chicken! Very tasty, very sweet, even if I say so my self.🧐

    The past few weeks I've been searching all over for a delicious looking jerk recipe. Go figure you'd be the one I'm definitely going to try.
    Would it be any different for pork?

    I'm curious. Have you had an issue with rust after cutting your probe wire slots in the Kettle?

      I haven't, but my kettle stays out of the elements under a covered patio when I'm not using it :)

      Cooking With Ry also, not sure if you do alot of jerk meals...,but i order the pimento leaves from pimentowood.com in Minnesota. Place them in a water bath and it takes your jerk to the next level. Good cook! 👍

    cinnamon is a big part of jerk. what you have plus cinnamon try that RY its good may need 2 more peppers . every thing else is spot on. im gonna try yours though to be fair.

    You think this marinade would work on pork “country style” ribs?

      Sure would. There are jerk pork recipes for chops and loin, and if you do some low and slow on the ribs, this seasoning would really accent it :)
