So I decided to give this recipe a chance as I am Jamaican (born there) and I miss Jerk Chicken so much. I obviously know it won’t be the exact same - no pimento wood was used. Any who, I followed his recipe with small changes - I used 1 scotch bonnet pepper and browning instead of Worcestershire sauce. I also marinated the meat for 24 hours. While grilling, I was really worried about the strong smell of the cinnamon but at the end when I tasted it, it wasn’t bad at all. So good job Sam! My tip to anyone looking to try this recipe is maybe use 1/2 teaspoon of cinnamon instead.

@@paradigmshift7541 Use Scotch Bonnet - not habenero. Use soy sauce instead of worcestershire sauce.. use fresh thyme... and smoke after the searing by using a BBQ with a lid

I bought this as my first propane grill. It's been a fun, learning experience ua-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.

I made this and if anyone is wondering this is absolutely some of the best chicken I’ve ever had. Hands down! It just might be the best. I made it for my girlfriend and she was extremely impressed. I took a few pieces to work and my co workers loved it too. I’m making it again for the second time, back by popular demand! Oh and i definitely sparked a fatty while making this 😂😂😂 Thank you much Sam!
I don’t get why people always complain on his videos. These are his takes on the recipes, and they’re really damn good. It may not be “traditional”, but he never said it would be.

I get that but some recipes have a tradition, he is Jewish If I made donuts and tried to pass them off as bagels that would be insulting, like when he made a Philly Cheese steak with cheddar cheese or pass french fries off as his version of popcorn.
@@cloudsstar Such as? I did a search for traditional recipes, and the only thing he didn't put is nutmeg. And he swapped peppers. The only non traditional addition was Worcestershire. Genuinely asking here as I want to recreate one I tasted before.

Found Sam's channel about one month ago. Easily my absolute favorite. What I like about Sam's video is that everything feels genuine. It is not like a production of a show but a video receipe that I can really relate to and make the dish in my household. I do not need a crazy lot of ingredients to make a dish like the other cooking videos out there. Also one thing I like about here is I could really hear the sound of cooking, the bubbling and sizzling. It is not covered by music and makes me feel genuine about it.
So Sam to say the least you have inspired me to cook again. I made this last night and was blown away by the flavor and the heat. If I closed my eyes I was back in Jamaica. Thank you so much for this channel and making it simple.

PRO TIP. If you're a guy and you've handled these peppers while cutting them etc, it is not an optimal time to go pee. Always piss first. You're welcome.

Really, you helped me to elevate my cooking to a whole new level and it feels easier and even more fun than ever before. I follow a couple of other cooking channels and I like and respect those guys too, but you, Sam, you are something else. Lots of love for you from Ukraine, your fans are everywhere.
Looks amazing, but IMO chicken drumsticks should be cooked to 185 degrees. That higher temp results in a better texture and meat that is not even the tiniest bit dry or overcooked. Now, I'd never do that with a chicken breast, but the drumsticks? Absolutely! If you don't believe me, try it.
It is better, that the temp I do chicken thighs.

I´m going to give you a great tip that I saw a Panamanian woman do in one of our islands; after making the rub, put in on a hot pan and let it simmer for 3 to 5 minute, take out, let it cool for a bit, and then rub it on the chicken. Also, Istead of brown sugar, try sugar cane honey. YOU WILL THANK ME LATER!

Sam, I just want to say thank you for the inspiration. I’ve tried a few of your recipes like the air fryer rolled tacos and slow cooker bbq pulled pork and I impress my guest and my self every time. I’m in a small apartment now with very limited kitchen space but in the process of buying a house and I have to say one of the things I look forward to the most is having a full kitchen and a yard to grill in to try some more of your recipes. Sam, you and the crew are amazing I love all your content, ignore the naysayers and keep up the good work!!!

Ate a whole scotch bonnet thinking it was a sweet cherry pepper. Nearly needed a tracheostomy for an airway. No kidding. Never forgot that day
Used them too. On a jerk sauce for a batch boneless pork loin “chops”. Within an hour of finishing the “chop”, the effect had kicked in and I spent about 14 hours thinking it would have been better go hungry. Your entire digestive tract feeling like it’s on fire, and passing that…. Boy howdie….

My family is Jamaican, I would say the recipe is really good but personally I’ve never seen anyone put cinnamon and ginger in theirs so it’s new for me 😁 color is definitely spot on though

I made this for my family tonight. This was fantastic with some basmati rice! I took the rest of the marinade and put it on the stove and reduced it to a sauce and added about another 1/4 cup brown sugar. I glazed this on the chicken at the end of the cook. UNBELIEVABLE!!!! Thanks for the Video Sam!

looks great, tip Jamaicans use something called browning, to give a more darker color.

Making this for the 6th or 7th time tonight, it's always fantastic and one of our favorite chicken recipes. We use leg thigh quarters and 5 habaneros but otherwise follow the recipe exactly. Wonderful!!!

As some mentioning below, Scotch Bonnet is traditional/better. But not available at most grocery stores.
I agree that scotch bonnet would be better, but habenero works just fine as well. It's a very similar pepper to the bonnet in heat and taste. I think the bonnet is slightly hotter and has a more fruity flavor. That said, around where I live you can find both bonnets and habeneros and most people use them interchangeably.

Looks great!. You're absolutely right chicken takes a lot of love it's hardest thing to barbecue. Anybody can throw some burger patties and hot dogs on grill but when someone's grilling up chicken they better know what they're doing!

@@ROJO25 Is a dark, thick caramel (not sweet) that gives that lovely color to the jerk chicken. You can find it at any grocery store if you don't have a Caribbean store close by.

Your technique is actually right on. Take your time and be patient. chicken skin does cook fast & people assume it’s done but it takes a lot of time.
