If you use the clips from the Onlyfire pizza and rotisserie assembly it will rase your great higher into the kettle top and the chicken cooks even better (crispier). I never take my clips off anymore, I use them on all grilling that I do.. P.S. I truly enjoy your Chanel. I like your background I like how you present your work and slight and not so strong western accent there is a western actor that you look and sound just like him, he was the Rancher on City Slickers. Also you should get a long meat poker or fire place pokers to use when setting up your grills. Great video as usual.

I really enjoyed this video. Big fan of that duck fat as well. Been using it for years. They sell it at ace hardware and Meijer if anyone wants to know. Little tip i use to make things quicker, cotton gardening gloves with nitrile gloves over them so you dont burn your hands. You can handle hot food without burning yourself. Im sure that would make flipping those wings a breeze. I didnt flip mine last time and the bottoms seemed to be a little charred from the dripping fat i assume
First, thanks for watching! I appreciate that! I, too, wear cotton liners under my rubber outer gloves. That helps immensely, no doubt. One thing you may try is just moving the wings on the grate about half way through. It may help prevent charring on some of them as temps fluctuate within different parts of the kettle at times. I flip mine sometimes. There’s no real rhyme or reason why I flip them one time and not another. Just mood, I guess! Thanks again and thanks for the comments!
Thanks for this! To me the vortex was the clear winner! I wouldn’t feel comfortable trying to get the flat thingy installed 17:09 over an open flame like that. I definitely think they should weld or bolt on a couple of handles. I haven’t done wings on my Weber kettle yet but my plan is to use the Weber char baskets, one on each side and cook the wings in the indirect zone in the centre. Have you tried that method? I’ve used the baskets but never on wings in the way you’re describing. That’s not to say that it wouldn’t work but you might be better off putting the baskets together in the middle of your kettle and putting the wings around the outside edge of your grate. This way the heat is going straight up to the peak of the lid and then cascading down onto the wings. The natural curvature of the lid is well designed to do that. By putting the baskets on the outside, on each side, the heat will go up and across to the other basket, basically missing the wings in the middle. They would cook, no doubt, just not as fast and you might not get very crispy skin. I hope I explained that well. Thanks again for watching!

BTW, have you ever slow cooked the wings on the vortex at 280-300f and then wait about 20-25 mins flip, then wait another 20-25 mins, glaze, then remove the smoking wood from the center. And then start flash grilling the glazed wings in the center to finish them off with a strong char? That's my method for vortex
I would add a stainless eye hook in that center hole on the fire dial, with the eye toward the cooking grate. It would give you a handle to place it over the coals a lot easier, and still not interfere with the cooking grate.
Those look awesome! I cook alot on the very same weber and love it. Got a cast iron grate off amazon thats been a game changer. Ive struggled with the crispy crispy wings without deep frying, so im gonna try your method for sure! Maybe i missed it, but what was the total cook time? Cheers from Mississippi

The vortex is my favorite way to do any chicken. I don't have a cast iron grate but have seriously considered one. Can you share a link for the one you got? Thanks! And thanks again for watching!
@grumpysgreatoutdoors They have a 22" one just like this, the link showed the smaller. There's a few different patterns out there too. Just do a search for 22in grill grate. It sure make a steak look good with the perfect sear marks. I ordered up a vortex, excited for the outcome! Thanks for sharing 👍

Does the fire dial work on the weber original Kettle. I don't have the premium weber Kettle
Yes, if you have the 22" kettle this fire dial will fit and work great whether it's the premium or original. Thanks for watching and for the question!

Just fill the vortex with coals and then light two charcoal starters.
