When I go to Judy’s Sichuan cuisine in Chesapeake, VA I usually order V17 which is the eggplant in garlic & ginger sauce but they don’t have pork. I’m definitely making this soon!

@@rackoflam made it 3x during the holidays. Excellent comments from the guests. Note the semi-fatty pieces taste much better than the no fat pieces. Look forward to a fried rice recipe for Uncle Roger to critique....hiyaaaaa.

what can you use in place of dark soy sauce? is dark soy sauce the same as “regular” or full sodium soy sauce?

There’s a specific name for the roll-cut method in Japan, Rangiri ! Not sure if it originated from Japan.

Thanks for the recipe! I made it once according to the recipe and the second time I tweaked it slightly by grinding up a 50/50 blend of pork butt and some spring black bear meat. It turned out great! I would like to claim that it was some clever fusion cuisine but really I was just cleaning out my freezer.
    Happy accident.
    Cheers
