I somehow have never tried hemp hearts before. What a great idea! I’ll have to pick some up. Or maybe... I bet pulsed pine nuts to a rough chop in a chopper would work well in this too.
My wife use to make this all the time. The hemp is almost exactly like the traditional bulgur wheat!
This is great! SO Flexible! I was searching for keto tabbouleh because I wanted to make it with Carrington Farms Ground Lupin. Once I saw your recipe, I decided to make dueling bowls of tabbouleh using your recipe: one lupin and one hemp hearts. Well, they are BOTH delicious! I may even like the ground lupin a teeny bit better, but they are also great mixed! (So, if you're low on one, you can sub with the other and any ration will work fine.)
I plan to make your recipe just as written once my garden mint and parsley take off and I have enough tomato. In the mean time, I was over the moon with the result of my efforts with your recipe:
I didn't have parsley (or mint), so I used 1/2 cup of fresh cilantro with 1/2 cup of green onions. I only had 3 cherry tomatoes, so I doubled the cucumber and added some finely diced red bell pepper for color. And finally, I happened to have some whole grilled jalapenos with some nice char, so I deveined/de-seeded and chopped and added them in. It was a resounding success!
My only critique: I found the 1/4 cup oil to 3 T lemon juice too oily for our taste. I had more prepared ground lupin, so I slowly added that in and discovered that I could use double the amount of lupin. So, I then I also doubled the hemp hearts in that bowl, and both were then perfect to my palate.
I know I changed it a lot based on what I had, but I will be forever grateful for this recipe, as it really adds something new to our plates.
For anyone reading this who wonders what "prepared" ground lupin is: The hemp hearts, you use straight from the bag in this recipe. But the Carrington Farms ground lupin, has to be cooked. For this recipe, combine 1/3 cup dried ground lupin with 1/2 cup water and nuke for 3 minutes. Fluff with a fork and let cool completely before combining with the other ingredients.
I tried this and loved it! I love Tabbouleh, but haven't had it for years because I don't eat grains (Paleo) so it was so nice to find a new way to make it! I had never had Hemp Hearts before and they were very good. I'm not sure if hemp hearts are a grain, but they seem to be approved on Paleo.
