    I fix cauliflower rice by slightly heating the cauliflower rice and spread it on a flat cotton towel to drain. Squeeze out excess water. Heat a large skillet (cast iron is best) until HOT. ADD cauliflower to hot dry skillet and stir. You want to cook out all moisture and to brown (not burn) throughout. Use seasonings fit for your recipe. It's fantastic. Looks like rice and feels like rice in your mouth. It's perfect for my jambalaya.

      Too many steps just buy riced cauliflower. There’s no moisture to drain and you can cook it stove stop. I buy the organics brand. LOVE IT!

      @@mariabarbaramarquez4698 Frozen Riced Cauliflower still has excess moisture just from water being extracted from being frozen. Still have to steam off the excess in a skillet otherwise the ice crystals just melt in the pan and leave water.

      Not a big Rice fan anyway, but I had always been looking for ways too incorporate more veggies like Broccoli, Cauliflower, Brussel Sprouts, etc. into my daily.
      I started buying frozen Cauliflower Rice when it became an easy buy, and to easily add it in… (so proud of myself!)😊
      Then it had to happen… I noticed in one bag of C. Rice these small white…worms? Looked like baby tapeworms. But whatever they were, I just haven’t wanted Cauliflower Rice since… Dang it! 🧐😂

    Keto Twins ran a Ketogenic Woman carnivore pasta video some time ago. It's 3 eggs, 4 tbsp cr ch, 3 tbsp dust-o-pork-rind, 1 tbsp parm cheese. Blend, like a runny pancake batter, pour on big rectangular baking sheet w silicon mat on it - 350 deg for 8 min. You got a big sheet of "pasta" now. Good for lasagna or wraps. Roll up and slice into noodles. Or - roll up and slice into angel hair pasta size - then slice again into "rice". This stuff is good carnivore/keto rice. I've made the caul. sushi from your old video w cauliflower - and it's very good. But it is pretty good with this "rice" too.

      My grandmother would reach into the bottom cabinet to get out a pan to cook with, and all the grandkids would giggle because it sounded like a garbage truck dropping its entire load onto the street. LOL!

    Anyone interested in making the egg rice: after ricing, let the egg rice cook at a low temperature for an hour(spread it thin). Check it to make sure the temp is low enough to not burn it. Sulfur is a volatile compound and will be cooked off, leaving a much milder tasting egg rice.

      I used to like cauliflower mash more than mashed potatoes, but frankly, I got really sick of it. Now I can barely stomach it. I still use cauliflower chunks for faux potato salad, though, and that's fine. I still like cauliflower, just not cauli mash.

      I don't know why people praise the taste of cauliflower. It smells and taste like dirty, wet gym socks. It is not bland to me. It is nauseatingly pungent. That's the thing about people, they have different responses to smells and flavors.

    I made the "wild rice" pilaf tonight. Only I used the recipe from Ruled Me site. It has diced mushrooms and sliced almonds. It was very good! I will be making it on a regular basis.

    I've been making hemp seed pilaf for years, and no, you don't need much because of the fiber content of hemp seed hearts (that's where all the carbs come from). It's delicious! I also use hemp seed hearts in place of bread crumbs in meatloaf. Adds a fresh, green taste to it.

      On the hemp heart package it says 3 tablespoons contain 1 net carb. So you could eat 2 or 3 times more than that and it would be a pretty good serving. Of course it would be 540 calories and 45 g fat.

    I think cauliflower rice would get much improved by mixing it with the hemp pilaf. That way it wouldn't be such a calorie bomb, either.

    I just use canned bean sprouts rinsed, dried and snipped with clean kitchen scissors into rice-sized pieces. Saute and use like you would regular rice. It is cheap, low calorie and convenient. Works for me!

    I like cauliflower rice. I make grits out of hemp hearts. A quick chop in a blender, get your butter, heavy cream , salt and pepper heated and combined to taste. Dump in the hemp hearts. It works for me.

    You are indeed a ray of sunshine in this crazy world. I love listening to you, especially when I have had an overdose of political commentary. Whew! I really like hemp hearts, and recently found a recipe (of sorts) on Keto Twins. I added my own bone broth, after sauteing a bit of onion/sliced almonds, and the hemp hearts. I just add as much bone broth as looks okay to me, then let the liquid simmer off. Thanks Wes.

      Thank you for the kind words… that means a lot! I saw the Keto Twins test the recipe from RuledMe that has the slivered almonds, and it looked delicious! I wanted to test a different recipe and not “step on their toes” so I chose the Atkins recipe, and was pleasantly surprised! I’ll be trying the other recipe soon with my new bag of hemp hearts. :-)

    Hemp hearts are also high in gamma and other linolenic acids (a good thing, and difficult to get out of nutrition in other ways). A little goes a long way. To me, they taste something like pine nuts, so I use them to make beautifully creamy pesto. Really appreciate your take on these recipes!

    I think the secret to getting the eggy flavor out is to cook it beyond the jiggly egg texture.
    I allow it to cool stirring frequently... reheating and cooling several times... while I am doing other things.

      I chop up celery and sometimes nuts to add to this. Great side dish and if you do IF, then the additional calories aren’t a problem. I also stretch it with riced cauliflower.

    interesting note is that Chris had not seen or heard of maria's version.. it was a bit dog in the manger situation... while I think Maira has some good stuff there are others that are just as creative and if you have not been in the "Keto" crowd for very long...you might not have heard of her... I love that Chris has some very creative ideas... ie the shrimp based mac and cheese,
    and that later lots of others dream up a similar recipe... I also loved the Keto Twins version of the Hemp hearts.

    I've done them both. The hemp tastes better but the serving is so small that I've only had it a couple of times. The carnivore rice is much more practical. I use it with curried chicken and stewed meat and it's great! I want to do arancini next because the 'rice' is a bit sticky already and you can easily make it to form a ball by adding some cheese and a filling.

    The hemp heart recipe is the bomb. I make it with toasted almond slivers and thyme, and I serve it with grilled bacon wrapped shrimp skewers brushed with a little GHughes spicy sweet bbq sauce.

    I prefer the recipe of Maria, is cheaper and lower in calories. Hemp seeds are quite expensive were I live and I have to buy them online.

    That first recipe from egg whites would be a great solution to my making crawfish etouffee!
    The etouffee is very simple and can be low carb, but the "rice" that it goes over was a problem - until now!!

    Love your taste tests. Thanks for trying these. I use the aviate rice (orzo) as a bed of rice for beef or chicken and it tastes good.

    Got an idea: Mix them up together. Less calories than hemp, less eggy than egg. Might work. I suppose you'd make each separately, then mix. But who knows, maybe there could be a pre-cooked version where you mix ingredients to create an even better "rice"..

    A suggestion I have seen and intend to try is combining cauliflower and hulled hemp seeds. Pan drying the cauli and cooking it with hemp seed rice is said to work really well.

    Great video Wes. If I might suggest, Chris Cooking Nashville has a 2nd rice recipe that he uses for carnivore fried rice. It is easier to make than the first one and has an outstanding taste ( no egg taste). You can keep it as a plain white rice, which we use for keto Cajun dishes, or make it a fried rice for keto Asian dishes. Really good stuff. Love your reviews as always. 😇😋👍

    I have these low carb dry angel hair....though they call it spaghetti noodles by Liviva (controversial soybean ingredient). Liviva makes dry, as well as, the wet shirataki style. I order them from Amazon Canada.
    I broke them in small basmati rice-sized pieces and boiled them in a beef broth (with a smidge of butter) until barely cooked. I opened/washed/dry fried shirataki rice and set it aside. I fried out some finely chopped onion and bell peppers. Then added the chopped noodles and the shirataki rice, some scrambled egg bits, chinese 5 spice and coconut aminos.
    It is a higher carb side.... great for partial carnivore days or OMAD.

      I use Liviva also. Their spaghetti, penne, fettuccine and rice shaped pasta are made with oat fiber and konjac flour. No soybeans. I haven't seen their angel hair version and don't care for angel hair. But their others are fantastic!

    Hmm, maybe a tablespoon or so of the second combined with 3X as much of the egg rice might work well…Then a bit of sauce?

    I made a hemp heart version a couple months ago. I wasn’t a fan. Its too earthy for me, which is surprising because I normally love earthy food profiles.
    The egg one Id like to try adding to cabbage rolls!

    I am really good at deciphering. What is in some thing I’m eating. The best ancient green I ever ate was Farro. This very fancy restaurant served it as a side. I can tell you it had very find chopped onion, and the little sweet peppers that are like orange and yellow and red. Chopped very finally. And barely sautéed and added to the cooked Farro. And it was finished with an acid and it just to me tasted like lemon. So I bought some and traded at home and it was delicious. It tasted so much like the restaurant version. What I’m thinking is that hemp would be really good to try that with.

    I’m currently in Italy and I found a Konjac rice I hate shiritaki stuff but this brand actually dries the rice and it is soo good has the bite that makes it special

      They're literally the same thing. There's some with different preservatives though that you need to drain and boil to remove the flavor and smell.

      @@methanial73 I’ve had both the dried one is better because you can cook it just enough to keep it al dente and there’s no funny smell from the liquid the normal ones are stored in.

    I buy the brand ‘Eat Water’ konjac fibre as rice pasta and noodles, they are fine when mixed with sauces and herbs etc. but I’m definitely going to try these ones! 🎉

    I love substituting hemp hearts for rice or grits. Slivered almonds that have been soaked overnight is a great addition . If I want it to look like wild rice i add cooked grated mushrooms . I don’t care for Quinoa (I can’t get past it looking like bug eggs either).

    I've tried the hemp and didn't hate it but I've never made it again. I like your idea of combining the two recipes with cauliflower rice. Might give a textural compliment plain cauliflower rice needs. Thank you for testing and suggestions!😊

    There are so many recipes for just egg whites, or just egg yolks (hollandaise) that I save egg whites/ yolks in jars rather than pay for low nutrition carton egg whites. I also make my own egg white powder by whipping egg whites and dehydrating a couple hours.
    I don't eat much in a meal so high calorie is good maybe.

    Well dang if that ricer isn't a great tip! That poor thing hasn't seen the light of day in an age with no potatoes on the menu! You know, I wondered if using toasted gelatin with the egg white recipe would enhance the flavor to remove some more of the egginess. I haven't gotten around to trying that just yet. That pilaf came out just beautiful!

      Toasting the gelatin like the Chris Cooking Nashville does for his Mashed “Potatoes” might be an excellent option! I’d suggest checking out his rice video as well… he adds a few more steps that apparently help cut the egginess.

      This is what Chris Cooking Nashville does, and adds a bit more gelatin to the cooked rice. I encourage you to check out his technique in his video… very similar idea!

    I don’t like cauliflower rice, but I mix cauliflower rice and hemp hearts together so it’s not as caloric and it goes a lot farther. I don’t really taste the cauliflower rice that much at all in it😊

    Not a big Rice fan anyway, but I had always been looking for ways too incorporate more veggies like Broccoli, Cauliflower, Brussel Sprouts, etc. into my daily.
    I started buying frozen Cauliflower Rice when it became an easy buy, and to easily add it in… (so proud of myself!)😊
    Then it had to happen… I noticed in one bag of C. Rice these small white…worms? Looked like baby tapeworms. But whatever they were, I just haven’t wanted Cauliflower Rice since… Dang it! 🧐😂

    The hemp seed recipe that you showed looks more like a risotto to me. I wonder if it can be used like that.

      Very likely! It probably won’t be as “creamy” as a regular rice-based risotto, but I can think of some good options to add a bit of that creaminess into the final result!

    Hey, Wes! Question for ya. Since going on keto 10 months ago, I’ve had an almost uncontrollable craving for chicken soup with rice. Tried it with cauliflower rice and it was a fail…it disintegrated, and really tasted like cauliflower. Do you think this egg white rice with the gelatin would hold up in hot chicken broth, or might it turn into mush and just thicken the broth?

      I think it would hold its shape in the hot broth. Think about how ramen is often served with a hard-boiled egg. It holds up beautifully. This is essentially the same thing - just without a yolk and chopped into smaller pieces. Definitely worth a shot!

    First, your baby-talk is freaking adorable.
    Second, I'll have to take a look at the Atkins site .
    Third, I've seen some true doozies in comments on recipes. One of the worst was on the American diabetes site (I'm not going to put the actual site name). It's for a "teriyaki" type dish. It has a load of sugar (something like 2 tablespoons), and is recommended to be served with white rice.
    Can anyone explain to me how that is supposed to be healthy for a type 2 diabetic?

      And you are correct about the unusual options some of the websites and “experts” provide. Sort of like being in the hospital. The food is often less healthy than some restaurants and fast food, with poor options. Don’t get me started! 😤

ALL of the food was the same coIor, rather beige, nothing fresh, and nothing decent to choose from.
