To be honest, the difficulty in scraping down the sides of the bowl with a stand mixer is one reason I dont use mine often. Looks like another great cookie, Erin.

Am going to try this tomorrow, but I’ll do half the recipe with browned butter to compare because I’ve yet to meet a butterscotch anything that wasn’t improved by browning the butter first.
I use brown sugar a lot, it sticks like crazy and makes a very heavy coating. I add a bit of white sugar and rub it together, it makes the sugar stop clumping.
Erin, I remember these cookies, but they were Ginger cookies, not butterscotch. I haven't had them for ages. and I don't remember who made them so I can't even ask for their recipe.

Started these as soon as I finished watching! I has no reason to buy dark brown sugar this week but I did, must of known this would have to be made.

What about using coarse sanding sugar and dark brown sugar to roll the cookie dough in before baking? Would that work as well as granulated sugar?

I just bought an obscenely expensive flex edge beater for my stand mixer so I WOULDNT have to scrape the bowl! 😂😂😂
