    I love your cooking. However, I've tried a very similar recipe twice, but the final results had a crunch because the walnuts were not soaked to softness. I tried it a 3rd time, soaked the walnuts and bingo, soft ground. 😊

    I tried this recipe today- Mother’s Day Dinner and it came out great. I substituted sunflower seeds for the walnuts. Served it up with roasted turnips, beets and sweet potatoes. Delicious. Your recipes are giving me the encouragement to go full vegan. Thank you for simple, easy to follow instructions and delicious foods.

      I have just about quit watching cooking vids because the recipes are no longer being posted with the vid. Thank you Javant.     I am 74 and been an omnivore my entire life. My daughter is a vegan and in the last few years I have added more plant based meals, days, weeks to my eating plan. My biggest problem was weird ( to me ) ingredients and lack of flavour.
    I made this today and even ad I was prepping the Spice list gave me good sense that this would be tasty. And.. it is ! Can hardly wait to use it for Mexican dishes and a company Shepherd's pie. Unfortunately I can't upload a photo here, but it looks so much like cooked ground meat and give a nice mouth feel.

      This is the real challenge for folks just moving into plant-based eating. How do you.replace the old familiar dishes that we are so accustomed. Getting over that hump is key and so much that you are sharing helps move us to that place. Thanks for all that you do!

    I made this today for tacos. Everyone loved it. My youngest son asked for another plate and he’s the pickiest eater ever. He hate mushrooms and didn’t even know it was in the recipe. Thanks so much for sharing. Tomorrow I’ll try burgers ☺️

    Tried this recipe last night and was very impressed. You wouldn't know it had any meat at all. I followed the recipe as close as possible and added a few of my own seasonings. Also, I soaked my walnuts the night before to soften then up. Highly recommend and will definitely be a part of my cooking moving forward.

      Why do you prefer no oil. I thought natural oils (olive, grapeseed, coconut, avocado) are good for us?

    I made this Monday for my son and I this week! I didn't have a food processor, so I cut everything up. It was delicious! I'm glad you told us about the water. I would've been discouraged. We made tortillas! I picked up a food processor yesterday to make your carrot cake! It was delicious! I never thought that I'd be one of those people who love the cooking channels!     Let me tell you something, sir. I'm not even religious, but I declare you are doing the Lord's work! I just made this, and it is A-MAY-ZING. I made it in preparation for your meatball gyro recipe, and I had to MAKE myself stop eating it so I can have some left for the gyros. It's THAT good.I am approaching vegan life as a complete newbie. I had been looking for recipes and came across your channel. SUBSCRIBED without hesitation! Oh, and yes, I followed the advice of some of the other commenters, and soaked the walnuts first (I soaked them overnight). Also, I made a small error in technique. I added everything to the pan at the same time, including the walnut mixture. I forgot it was supposed to be added later in the process. Turned out perfectly anyway. Actually, I think it's easier getting everything mixed together doing it that way. Looking forward to making those gyros and other vegan masterpieces!

    I can’t believe I just now came across your channel! It has been so challenging finding truly HEALTH promoting, whole food plant based recipes that are actually delicious and bring that FLAVOR!     I stop eating meat and transitioned to eating plant-based foods. I must admit, when I stop eating meat, my body went through withdrawals and I become sick--after a few weeks of just eating plant-based foods, I started to see a difference in my body and skin.

      I think that’s a major issue that people do not discuss enough! The transition should be done gradually. In my personal experiences it gives the body time to adjust and also gives you time to learn about a completely new diet to make sure you’re getting the right nutrients!

      I chose plant based diet because I was already sick and I also got worse, much worse, during the detox period but then I got whole lot better. I wouldn’t any other way. Instead of gradually adjusting for months and years and still be sick, I suffered for a few months and then gained my life back.

      If you sick you must drink herbs teasuch as rosemary , basil, fennel , thyme, oregano, parsley, coriander and mint all in powder forms , just add every these in one spoon into a teapot add ginger a bit, drink it 4 times a day as a tea, good lucks all the best

    OK I made the recipe and it is a keeper. I soaked the walnuts as suggested. To get the best consistency and texture I highly recommend using a food processor or Cuisinart. It’s hard to describe the taste of all the flavors but they blended together nicely. The texture is consistent with ground beef and at first take it kind of looks like ground beef. I was making tacos and was tempted to put shredded cheese on it but said nah, that defeats my purpose so I just ate it plain on corn tortillas. It had cooled down and I thought it needed to be heated up but that wasn’t the case. Tasted fine slightly warm. Because the taste is versatile I can see using it in a variety of dishes.

    This is a keeper. There is so much room to play with this...customizing the spices to make it more chilli or taco flavoured...adding salsa, buffalo sauce, mashed beans.....Love that the base is so healthy and nourrishing. Thank you!! Worked awesome in a tortilla with a little vegan cheese and salsa verde!

      You are right. Beans would probably thicking it up more. I can then just make some oatmeal tortilla wraps I saw online and just eat it like a borito; since I saw a recipe with some organic vegan cheese.

    Thank you so much! I made your Veggie Ground and used it to make your No-Beef Patties. It was absolutely delicious! As a plant based eater for three years, I was getting discouraged. I missed the foods I used to love and my cooking is very dull. I don’t know what seasonings work well together. Although I only eat foods with clean ingredients, I couldn’t separate myself from using olive, avocado and coconut oil. I thank God He directed me to your channel. As a subscriber I look forward to watching your videos and making your dishes. I now ceased using all oils. Thank you for caring about our health and showing us that plant base eating is exciting.     I've been plant based for 12 years and have tried many different "meat" replacement recipes as well as buying store products which usually have way too much oil added to them. I just tried your recipe last night and I'm so pleased with the results. Not only does it have ingredients that I can feel good about, but the texture and flavor are great. The final test was if my husband would eat it....and he loved it. In fact he's in the kitchen making himself a burrito out of it right now. Thank you so much!     I made this today and all I can say is WOW! I soaked my walnuts overnight and used 6 cups of frozen cauliflower rice to replace the fresh cauliflower. It was delicious!!! It does make a lot so hopefully it freezes well. Thank you so much for this awesome recipe!!

    I make this every other week now. I bought square soup molds for the freezer and freeze them in packages. Just like you get in the grocery store. Tried it on my husband on his nachos, he asked me why the meat tasted so good. I have used this as a substitute for all his favorites, and he continues to love it. Moved on so many of your other recipes today I am making the hamburger buns.🥰🎉

    Thank you to Chef Aj for having you on her show, I saw you and decided to try it. I love this, I made it recently for my son's birthday. I prepared a taco bar for our family and friends, and everyone absolutely loved it. They were shocked that vegetables could taste so good. It is helping me to transition into becoming vegan, I am currently vegetarian.

      @@heidibrummett3499 You want more protein? ​​⁠ You need to incorporate maybe some into your side dishes than. For instance ​if you are having tacos you can make beans and rice as your side for more protein, if you are making Lasagna or spaghetti you can make a salad with spinach and chick peas to serve on the side( both have protein) , burgers serve with veggies and hummus , get creative, you can figure it out. 😊

      @@SusieLybarger I've always found that freezer bags let in too much "freezer bite" and ice, so I use glass pint-size canning jars. I guess it depends on how long you're going to store the food item.

    I’ve made something similar but this looks even better. My husband loves the meat substitutes but I don’t because I just prefer legumes and whole foods so this seems like a great compromise and the fact that we can freeze it too is just the icing on the cake. THANK YOU!!!

    I wanted to make this recipe months ago, but my food processor quit on me. Once I got my new processor, this was the first thing that I made. The veggie ground tastes even better the next day once all the spices have had to chance to settle. I threw it on some vegan mac and cheese and the taste is fantastic. My wife loves it. I'm not a vegan, but I am striving to get more plants into my diet. Thank you so much for sharing. It was definitely worth the wait.

    New follower/fan. Made this last night and it is a-m-a-z-i-n-g! I kept testing it as it cooked and I was worried that the spices were too much for me and I might need to cut them back in the future. But when you mix in the tomato paste and walnuts: MAGIC! I love it! I made tacos with it last night and again for breakfast this morning, it's that good. I've got so many ideas...Thank you for your great instructions and demos. No wonder it's getting noticed!

      I just made my first batch also. Half is for tacos tonight, and the other half I seasoned up for breakfast sausage to go with some oat waffles.
      I make a fake queso out of cashews that fooled my teenage son.

    On a low FODMAP diet so I substituted: broccoli heads for cauliflower, leek tops for onions,didn’t have oyster mushrooms(can’t have the other ones) so I omitted the mushroom, added a little vegan Worcestershire sauce, and low FODMAP stock cube to replace the garlic. Still good!

    Love love love what your sharing, your recipes are on point! I started living in a Vegan community in Peru for 3 months, healed my fatty liver, drpped 40 pounds. Upon returning to Canada, I started eating junk vegan, I was lazy and oh my body did not appreciate it. I feel better eating clean again, thank you :)

    Oh man this is fabulous so much Umami flavors! Made it for taco Tuesday, added red curry paste in place of tomato paste, 2 jalapeno chopped and 2tbls of taco seasoning, cilantro with lime juice.
    I am not missing any meat in this at all. Great job with the recipe man! ❤❤

    We are not vegan but are trying to bring more vegan (WFPB) into our diet because the health benefits. I have tried so many meat substitutes and they are always off putting to me.     I just made some, but I could only find a small head of cauliflower, at the second store I went to, so I cut the recipe in half. Smell delicious and a sample taste so GOOD. I'm going to try it with tacos. Thanks once again.

    This recipe is absolutely divine. Thank you so much for coming up with it. I have been trying to incorporate more vegetables into my diet and this absolutely fills the bill. I even mistakenly added the walnut paste at the same time as the vegetables were cooking. Whoops! 🤦🏻‍♀️. Wasn’t paying attention to the recipe instructions but it still turned out just fine. Will do it right next time. Can’t wait to try your carrot cake recipe next. 🤗. PS: I soaked the walnuts overnight as suggested by one of the other comments

    I have made this several times and love the texture that the unsoaked walnuts give the veggie ground, especially in a burger or spaghetti sauce. I would say adjust according to your taste. He’s done the groundwork for us.

    I just finished making mine! I soak my walnuts. I was afraid it was not going to taste good because people take the make things and say it good and I throw it in is good and you the garbage. Mine is good. I not add salt and will salt may I mixture to can be careful of the salt but I can salt it to my finished dishes. Thank you sir for taking up the time to make this just us.

    Javant, I did it. At first I thought this recipe was too much me, but I got all the ingredients and got work. This veggie ground meat substitute is the MAC DADDY. My family was skeptical at first but they tasted it and went crazy. I then made the vegan breakfast sausage and that was spot on. Delicious and healthy. TWO THMBS UP!!!

      I'm so eager to try my hand at vegan cooking. After having a healthy eating class after church this afternoon. It was a seventh day Adventists church. Every Saturday they have vegan lunch. Yummy. So today I made a stir fry all veggies with cumin, rosemary, Himalayan salt cyane pepper. Very light touch of olive oil. Thanks so much for all your help.       I’ve kept it in the fridge for up to 5 days. It freezes very well, so I recommend keeping some on hand for quick, diverse meals👌🏾

    I love this man. I just finished making this without a food processor; I instead used my Ninja Auto IQ smoothie machine. I needed to do batches of veggies. It tastes so fresh. I will add Worcestershire for burgers, taco seasoning for tacos and more Italian for meatballs and meatloaf at the time when I cook each. I made three pounds at a total cost of $13.00. The same amount of unhealthy beef would have cost me over $20.00. I just made tacos by adding water and taco seasoning and wanted to update. It tasted great! Also, that price is deceiving because one pound of this veggie ground makes at least twice as much as one pound of beef would. Winner. I used my 12" cast iron skillet in two batches then threw it all in my large enameled cast iron pot with lid on to sit for 20 minutes to marinade. Wonderful recipe!

      Thanks for the taco idea. I will surely try it! I also don't have a food processor that is full size, so I made it with my little mini food processor and it took awhile, but it was well worth it! And I soaked my walnuts, too. I have been getting lots of fresh zucchini and spaghetti squash from my garden and I have been serving it with the veggie ground and drizzling it with a bit of hemp/cashew cream and it's been so good!

    I can stop eating this from the pan!!! It is absolutely, positively, beyond a shadow of a doubt delicious!!!!
    And I honestly didn’t think that it would! I figured that I would have to do what I always do…. to make new recipes palatable!
    And to be honest I didn’t change a thing in this recipe, but rather made a substitution. I’m trying to cut back on my salt so In savory dishes so I use mushroom powder. It adds Unami to any savory dish!
    This recipe is definitely a keeper! Thank you soo much!!!

    I made this today, and wow it was amazing, tricked my friend into trying it, and she didn't realise at all, only thing I would do differently next time, is leave out cumin, I don't like the smell of it, but that's my choice, you don't really taste it in cooking, also you do get the occasional crunch from walnuts but I didn't mind that, I knew it wasn't real meat, so didn't bother me, I made a spaghetti bolognaise, and it tasted exactly the same as if I made it with meat, it is a big batch, so rolled up some meatballs, and separate containers, for more spaghetti bol, and chilli concarne, so all good, thank you

    OMG this recipe is delicious! I omitted the walnuts in mine, but kept the rest of ingredients. So far I have used it for spagetti bolognaise, lasagne and chilli with rice and over tortillas. Cannot get enough! It tastes just like beef mince and bonus keeps well in the fridge for 5 days. in original form. I added extra ingredients when cooking my final meal. Thank you 😁

    I freeze mine into portions. I made a tomato based veg soup (V8 juice)…day 3 I added yr veggie ground round to it and it became a delicious stew! Thanks again for this amazing recipe.

    I have been vegan mostly whole food for 9 years. I was in such a hurry last night to make this for the first time that I mistakenly mixed the walnut/tomato paste mix as the the veggies were cooking. When I first tasted it, my brain said, well this just tastes like a mixture of veggies. Good but not really different. Then, I kept putting spoonfuls in my mouth and couldn't stop. LOL. I made stuffed bell peppers with it and now I'm hooked. Thank you so much for this recipe! And shame on my brain judging before my taste buds could really vote!

    This is so awesome! Thanks! My first attempt yielded about 3 pound of ground. I used the first pound in a vegan version of a dirty rice today. I plan to use another pound in stuffed peppers later. The third pound is patiently waiting in my freezer, possibly for lasagna. This recipe is gold!

    Just tried recipe for first time. Mine was a. Little too crunchy also.
    I put part of the mixture back in food processor and pulsed a little longer in ordet to get desired texture. I will soak the walnuts next time as someone suggested. However; love love this recipe. This is my all time favorite "not burger" recipe!!
