A good old vegetable bean soup. I personally love making minestrone all the time. Black beans, kidney beans, white beans, Celery, collards, swiss chard, onion, garlic, crushed tomato, oregano, salt and more oregano!!!

In a large stockpot with a little olive oil I sauted chopped onion, carrots and celery. Once tender I added 1 cup of organic jasmine rice, 2 cups of organic red lentils and 9 cups of water. I brought to a boil then lowered to a simmer cooking for 10-20 mins stirring ever 5-10 mins. I ate this over a mixed green salad with lemon pepper seasoning. So good we couldnt stop eating it.
You poured soup (nice recipe btw) over a salad? That sounds ... like it's not salad anymore, to say the least. More like adding greens and seasoning to your soup. Is that about right, or have I been missing this innovative new soup/salad hybrid all this time?
Yes, nothing out of a can. That’s the key. I often use canned beans and tomatoes for convenience, but the most wholesome food is done with fresh ingredients and nothing out of a can.
Ok CLV, I made this soup this morning and had a bowl - ok 2 bowls - for lunch. Made a couple of minor variations, white and black pepper, red pepper flakes, and white sweet potatoes (what I had on hand). Just had some more and the flavor nearly brought a tear to my eye (peppers notwithstanding), such an amazing full-bodied, warm, savory, complex mouthful. I heretofore refer to this food gift as a bowl of hugs...and everyone could use a bowl full of hugs. You certainly deserve many. Thank you for this gift..

I think it's interesting that not only did my body surprisingly heal after going Vegan but up until 2 years ago I wasn't taking vitamins. I only started because I thought to myself I'm old now, I should take vitamins just in case I need them. I predominantly lived on a whole foods plant based diet until I got so busy I started eating oven chips, Vegan sausage rolls & pies and I noticed I started to get hayfever which I hadn't had in 9 years....I don't know if it's the processed food or if the crop farmers nearby are using some deadly stuff. My dog has severe hayfever. Everyone here has severe hayfever. I still don't have arthritis that healed 10 years ago. Feeling blessed to have compassion. Loving my health
I've been LOVING making soups these last few weeks. Super filling, lots of water, lots of flavor 🤌🏻 Potatoes, onions, stewed tomatoes, beans or lentils, some cruciferous veg, ginger if I have it, etc. Then add some high protein tofu in there as well? Killer to eat throughout the day ☺
Blue Zone Wellness is a combination of eating, exercise and stress relief imho. I have striven to eat well and exercise all my life (age 62)but have fallen short on the stress relief in turning to alcohol. I’m dealing with this, but I’m helped by my other healthy habits. Little habits consistently are the key ❤

I made this tonight. I didn't have potatoes, so I used parsnips. I also didn't have any prepared stock, so I used the GoBio no added salt cubes and salted to taste. It was beyond awesome!!!! Thank you so much for posting the recipe - it is going on our regular rotation :)
Hi! This is not minestrone, but legumes soup. Minestrone has to have vegetables in it like zucchini. A tip I'd like to give you is to not cook pasta inside and leave the minestrone one day till you eat it because the pasta will become very over cooked. Just cook pasta in a different pot when you are going to eat minestrone. And lemon juice is really not an Italian thing in soups haha!
Thanks for the tip! The soup definitely thickens up due to the pasta over the few days haha i kinda like it though with soggy pasta, is that weird? LOL. I saw a lot of different recipes for sardinian minestrone, some with zucchini and some without. I think this will be one of those "throw in whatever veggies you have on hand" type of soups. Oh and the lemon juice is totally just me - I decided to add it cause i love boosting the flavour :) thanks for watching~
This is minestrone. My italian grandma use to make it. There are a thousand different recipes but if it has celery, beans, vegetables and pasta or rice you can pretty much call it minestrone.
For me if I leave the pasta in in the third day that's my limit its more like stew which I totally enjoy. They say to freeze without pasta so if I plan to freeze I do pasta in separate pan. Bonus to that is you get to use different pasta if you want.
I agree that minestrone is fantastic, delicious and healthy. I think its important to know that some of the blue zone areas are being questioned - there are some communities that don't register deaths in an effort to keep retirement benefits going :)

I loved this vlog so much I make soup similar to that you know what I am going to make in a few days At the moment I am eating stuffed pasta shells with tofu ricotta easy Squeeze food process add 1-2 tbl olive oil 1/2 teaspoon salt 1-2 tbsp white wine vinegar
Once every 2 or 3 months I make a tonnnnn of soup with everything that is good for you and freeze it in containers (I use yogurt containers). Cheap and not extra salt and lots of fiber. The best part is that you only have to wash the cutting board and knives and strainers and InstantPot ONCE.
I wish I could share pictures here because I just made this and it is amazing! I watched the video yesterday and stopped for the ingredients on the way home. I made enough that I will have this batched and ready to go into 2025!
CLV, I've been vegan for over 10 years and am convinced that it saved my life despite serious afib. Variying 20:27 from 35 bpm to 200 bpm.😢😢😢😢😢😢😢😢 My afib is mostly cured from whole Food vegan diet. BUT in January i tripped outside and planked on concrete and fractured my hip in two places. Found out I have severe osteoporosis. So a word of warning to you older ladies (I'm 76). Get a dexascan and take all the supplements (not just calcium and magnesium) you need for strong bones. Ive also had to add some fish and chicken 😢 to get enough protein. Thanks Rose for sharing all your joy and knowledge.
haha this is always my dilemma. sometimes i prefer to do this by hand, but sometimes i prefer to use the food processor. depends on how much i have to chop and how finely i have to dice!!

You said in the video to wash your peelings before you make your broth, but you don't wash your vegetables before you peel them. Inquiring minds want to know. Pumpernockei with Martino would be nice what do you think
@ depends on what grain you use. It’s hard to overcook but I’d suggest using sauté mode first for onions, garlic, celery and carrots - 7 minutes and stir well. Dump the rest in and turn to pressure cook high for 8-10 minutes. Quick release. Taste to see if grain is done. If you used barley, you may need to restart pressure and give it another 10. Experiment.

I think you could but yeah it might turn into chili (not the worst thing in the world lol)! haha you might just need some extra broth in that case or use canned (pre-cooked) lentils so all the broth doesn't get soaked up
Glad I watched this before reading your recipe because you are using double sized cans of beans and tomatoes which isn't mentioned, I'd be making a way less flavourful and hearty dish if I only used my 400g cans! Now I know to make it properly :D Update: Made it, needed two big pans, definitely added years to my life, will do it again once I manage to eat it all.
I lived in Napoli as a kid when my Dad was stationed there at Headquarters Nato. The American school had Italians in the cafeteria. The minestrone soup had obligatory cigarette ash flavoring from the cooks. Only in the soup! Never in the lasagna or pizza or other lunches. I suspect it was a resentment note about about Americans and a traditional soup, since we were there only 18 years after the war.

Pressure cook your dried beans - BUT I totally get it! Rice or Buckwheat or GF noodles for GF options - or skip, of course. Also, different types of vinegars (I'm extremely partial to balsamic - NOT reduction balsamics) are AWESOME "seasoners".

You could also finish it with a little balsamic vinegar. Or any other vinegar.
that's an option!! i think balsamic will be too strong for me for this soup but maybe like a white wine or red wine vinegar?

@@CheapLazyVeganI agree these veggies appeared to be shredded not diced. I bet it still worked although the soup would be less chunky. I have a chopper that dices beautifully, so I use that, I prefer my soup on the chunky side.

6 quart instant pot would be easiest and shorter cooking time. I do everything in my IP.

@ depends on what grain you use. It’s hard to overcook but I’d suggest using sauté mode first for onions, garlic, celery and carrots - 7 minutes and stir well. Dump the rest in and turn to pressure cook high for 8-10 minutes. Quick release. Taste to see if grain is done. If you used barley, you may need to restart pressure and give it another 10. Experiment.

I think you could but yeah it might turn into chili (not the worst thing in the world lol)! haha you might just need some extra broth in that case or use canned (pre-cooked) lentils so all the broth doesn't get soaked up

Glad I watched this before reading your recipe because you are using double sized cans of beans and tomatoes which isn't mentioned, I'd be making a way less flavourful and hearty dish if I only used my 400g cans! Now I know to make it properly :D
Update: Made it, needed two big pans, definitely added years to my life, will do it again once I manage to eat it all.
U can tell the cans are bigger sized, especially the tomato can.

I lived in Napoli as a kid when my Dad was stationed there at Headquarters Nato. The American school had Italians in the cafeteria. The minestrone soup had obligatory cigarette ash flavoring from the cooks. Only in the soup! Never in the lasagna or pizza or other lunches. I suspect it was a resentment note about about Americans and a traditional soup, since we were there only 18 years after the war.
I love your take on Sardinian Minestrone. You have inspired me to finally buy a food processor. I will use gluten free pasta in mine and add nooch because "nooch is life!"

Pressure cook your dried beans - BUT I totally get it!
Rice or Buckwheat or GF noodles for GF options - or skip, of course.
Also, different types of vinegars (I'm extremely partial to balsamic - NOT reduction balsamics) are AWESOME "seasoners".
Beans are gluten free.
