They are CHEAP ADDITIVES that give products a creamier consistency which allow the food companies to use less of an expensive ingredient. A good example is ice cream. Carrageenan is used in most ice cream brands today because when it is used, less cream is required to make the ice cream creamy. Cream is very expensive but Carrageenan is dirt cheap. While Irish Moss is used to make Carrageenan it is not the same as people who promote it's use try to say. The Irish Moss changes when processed and becomes a whole new chemical. Carrageenan is also used in labs to induce inflammation in lab animals when the goal is to develop anti inflammatory drugs. Carrageenan causes nflammation plain and simple. Carrageenan is not used in high quality ice cream such as Häagen-Dazs and some flavors of Breyers. A lot of misinformation has been put online from the big food companies. They try to say that it's the same as Irish Moss, which it is not. The other gums mentioned by this video also can cause health problems. Xantham gum can have a laxative effect among other things. If Carrageenan was good stuff then why wouldn't Häagen-Dazs have it as an ingredient?

Gellan gum gives me the same horrendous headaches that carrigeenan does. Highly inflammatory.
