    Forget the beans just cant eat them but have inspired me with the onions/spinach, then top off squash mixture with crumbled bacon...sounds like a winner to me

    I bake it in halves with a little butter and honey. So good! You can then put some roasted walnuts on for protein and call it a meal.

      that is for sure true--especially with butter--butternut squash gets creamy and desserty real quick

      we like using the smoked sun dried tomatoes...it's really a nice flavor and texture in contrast with the creamy squash

    Oh, my goodness! This looks amazing. I'm going to make it this week for sure!! We raise butternut squash every year and I process the cooked squash in 2 c packages and freeze. We make pies in the Fall and think they are much better than pumpkin pies!! Try making one with your favorite pumpkin pie recipe! Have a great week, you two!!

      That's a great idea using butternut squash for a pie...sweet potato pie is a favorite of mine, as well. The fall will be here before we know it! (although I might be jumping the mark a little bit since it's not even summer yet...just feels like it here in Florida)

    The Butternut squash has features similar to pumpkin! I like how you use the memories at school to give you strength while cutting this. The serving suggestions are great too, Egg, vegetables, and even mayonnaise + mustard sauce! Thank you for sharing, Chef Buck and CG! Have a great weekend!

    I make pumpkin bread, but with butternut squash . . . we're past the spinach season, but I have literally a field of lambs quarters! I'm betting those leaves would go into this beautifully!

      Butternut squash is sweet enough already, I think...apples might push the dish out of the savory zone and over into the sweet zone (that's where CG likes her dishes!)

    Yum. Love Squash of any kind. CG was spot on adding the Mayo/mustard combo….like potato salad mix. Adding spinach is healthy too but can’t do the kidney beans…not a fav. Thanks

    CG, I am so right there with you! I use Veganaisse, Dijon, and lemon juice to make my poor-man’s Hollendaise (never could spell it). If I’m industrious I heat it in a pan but that takes time and it’s another pan to clean and Jen’s already pushed the button on Death In Paradise so yeah, right outta the bottles expedites the whole thing. You put that on AND an egg and you’ve got Butternut Squash Benedict.

    Oh my favourite wsy with them is slice 2cm thick brush with oil sprinkle salt pepper onion powder garlic powdet roast 280 °C for about 40 mins delicious

      we're in a house sit...this kitchen is bigger than 1/2 the commercial kitchens I've cooked it...seems like everything in new houses gets bigger and bigger...I like little dinky, older homes and kitchens, but I think CG isn't as thrilled with the little dinky, older idea

      it's a Ninja Foodi Digital Air Fry Oven FT102CO ...CG is loving it and prefers it to the regular oven, but I haven't used it other than in this video...it seems pretty narrow to me

      I know...that's my feelings exactly, although another commenter made the mayo comparison with a potato salad, so it makes CG seem a little less crazy in my book now (just a little)
