I added two apples into the boiling squash. Somehow I made a mistake and grabbed ground cummin instead of cinnamon lol 🤷🏾♀️ but added some at the end with a little heavy whipping cream. Thankfully it is forgiving with seasoning lol. It was lovely.

I agree! Sadly my husband refuses to try it. I'm like, "you're missing out!! I promise it is delicious!" But he won't.give it a try because he doesn't like squash. I love it. At first I stopped making all squash after we were married because I'm the only one who eats it but now I'm like, so what! I will eat it all by myself. My advice to any parents...please don't make your kids eat everything on their plate before they can leave the dinner table. It ruined the enjoyment of food for my husband. Food should never be a punishment nor should it ever be forced upon a child. My parents made food a joyful experience and we had a garden too, which really gets kids involved in eating things they grew. My brother and I have a wide palette and love all vegetables. I feel sorry for my husband because he is picky and won't try new things. I believe it is because of his bad experiences with food as a child.
@@mygirldarby Re Your picky hubby. There are foods that I smell and am completely turned off by them. It may be an individual chemistry thing, over which we have little control. Example: Italian parsley smells and tastes like soap to me. This happens to other people, too. Or, as you mention about kids and food, forced eating can be a type of trauma. Once an adult, with autonomy, ‘no’ is a power word. LOL!

We love butternut squash soup in our house! Our favorite recipe is flavored with apple (or pear) and thyme, and definitely includes a little heavy cream. We like to garnish with fresh chives, chopped walnuts, and blue cheese crumble. Sometimes we broil a steak and include medium rare strips in the soup. So hearty and satisfying on a cold day!
I try to go as easy as I can on the cream just because I want to taste all the vegetables and sometimes cream covers up the taste. This recipe is really just so simple.
Great recipe! I didn't have an apple so I used apple cider. I prefer the immersion blender, you don't have to wait for the soup to cool, you can blend it in the pot, and no extra dishes :)

This recipe will go so well with the Buttercup that we just picked. It’s a little sweeter & dryer (drier?) than Butternut, but your balance of ingredients sounds perfect. We’ll garnish with a pat of butter and toasted pumpkin seeds. Thanks again for your lovely palate.
Very good, but roasting cubed butternut squash tossed with olive or avocado oil first takes the soup to a whole new level. Next time I make it, I'm going to add cinnamon and nutmeg. Sounds like a yummy addition! 😋
It's true...I used to live by a squash farm in college and survived off that stuff. By the time I graduated I could no longer eat it but my mother started asking me, "could you make your father and I some squash soup? I just can't make it as good as you." I tried to teach her but she said the roasting was "unnecessary; just throw it in the microwave." Now I just sigh... Lol. But ---a couple more secrets! I like to cut the squash in 2-4 big, flat pieces with skin on and after scooping out the seeds i rub the insides with sea salt, Evoo, crushed garlic, black pepper, and a tiny pinch of nutmeg; I roast it until the garlic and the edges of the squash begin to carmelize. Then, before I start making it into soup, I make a separate small pot of simple, homemade cinnamon-applesauce to add some extra sweetness. I only use 1-2 apples for this. I peel and cut them into smaller pieces and cover them with water, bring it to a simmer and cook it down until the sugars start breaking down. Once it turns a golden color, I add a dash of cinnamon and cook it for another couple minutes. Finally, I make the soup---either with homemade or low sodium organic chicken stock and at the very end I stir in a small splash of real cream. While my Squash-Thief days are over, I promise this will be the best soup of your life! (Plus, your kitchen will smell lovely...)

It's better if you roast the butternut squash, apples and onions in the oven. Then do garlic and add broth and the blended ingredients. I add coconut cream and sweeten a little with some maple syrup and some cayenne. So good.

Butternut squash soup can be fickle. But this version with the apple is genius! That sublte flavour of the apple and the thyme sent me to the moon! Absolutely delightful and perfectly constructed. I never subscribe to channels but this one definitely. Thank you chef!👌👏

I always bake my squash whole, for about an hour (or more depending on size) at 400 degrees, then it is soft and easy to de-seed and the squash just scoops right out of the peeling. Easy!
Butternut squash soup is decadent, delicious & soul satisfying. Personally I like my soups to spoon with a broth like consistency. When the blended butternut squash holds dips & peaks it reminds me more of a dip like hummus… (also good)
I have zero upper body strength so I’m not able to slice up a raw butternut squash so I throw it in some boiling water for a while which makes it easier to peel the skin and also to slice. One of my favorite soups!! So good. I add savory spices to mine (including curry powder) since I don’t like my butternut squash soup sweet.

And im glad to say that I just made this today, it took about 30 minutes from start to finish with my instant pot, with a few tweaks here and there this soup will be perfect for this fall and winter.
wonderful. close to a native american recipe i made a while ago. i kept making predictions that came true. i was waiting for ginger to get in there, but the curry suggestion was a close second. roasted red pepper is another great idea. whenever i make soup with potatoes i just roast them separately and add later. (after the blending for sure!) i would also garnish with roasted pecan, almond, or i guess for wisconsin (where i am) walnut would be seasonally appropriate. great simple base on its own, but the embellishing suggestion is so so true. i watch these with my daughters aaall the time. we love your style and technique. just made your pumpkin whoopie pies (with a bit of dark cocoa added to the frosting) and they were a-MAZING.
Awesome recipe, we love this, especially with coconut milk. One thing I do recommend though, is getting the Vitamix immersion blender. Just as creamy as the container blender, but no risk of burns, and way easier with less cleanup.
When I make mine I use oregano tyme chopped up cilantro and vegetable seasoning and some garlic when I have the puree mixture part of it I had and some heavy cream and the most loved ingredient of them all for me, nutritional yeast. Oh my God it makes it taste amazing. I also add chunks of butternut squash, so apart from being puree you will find chunks of butternut squash in my soup it actually makes it feel more filling and heartier. Mine version is a slightly more runnier but not too much then the one you made

Roasted my squash first (because I had lasagne in the oven). The nutmeg made such a difference and I added a few chilli seeds. Too good with crusty bread and a bit of feta. Thank you for the recipe.

Love butternut squash. Some times I roast the vegetables and sometimes boil them. And I use a stick blender because for me it’s easier. And I love how creamy the soup is without adding any milk.
@@chelseacco6 roasting is one method and boiling another. If you want to try a roasted butternut squash soup search online for a recipe. Generally cut squash in half and roast at 425 for 40 minutes.

My family's recipe is almost identical. The only difference is that, sometimes, we add a little maple syrup to caramelize the onions and squash before adding 2 or 3 apples then the broth. It's a nice twist to a classic.

I love to add some apples and freshly grated ginger! Ginger adds heat as well as some of that fall mood. Toasted pinenuts make a beautiful garnish, if there are no allergies. I am throwing away my recipe and replacing it with yours. Thank you, John!
@@tabithaspence8801 Tabitha, on a jelly roll pan lined with parchment, I put my peeled and seeded squash, a peeled and quartered onion, a seeded and quartered apple (SweetMango), a peeled inch of ginger, and two cloves of garlic unpeeled. I drizzle everything in olive oil, and sprinkle with salt and cinnamon. I bake at 375 for 45-60 minutes (when squash is fork tender). Into my Vitamin, I squeeze the garlic, and add everything else, including any oil from the paper. I then add the 3 cups of broth, a dry bay leaf, some fresh rosemary, freshly ground nutmeg (for Mr Townsend), and a pinch of cayenne (for Chef John) - but no MSG for Uncle Roger - and blend until smooth. I add the cup of cream (or milk or broth) and adjust the seasonings. It still must be reheated UNLESS you are using scalding hot broth (which is dangerous in a blender). I garnish with chopped pecans and minced chives.So it's Preppy Kitche's ratio (gracious, I love anything John makes and bakes), but done in an oven.
It also makes it easier to cut in half. I always had trouble cutting those big squash in half but after I saw someone microwave one for a few minutes and then slice right through it, I've done it that way ever since. It's so much easier and safer!

But ---a couple more secrets! I like to cut the squash in 2-4 big, flat pieces with skin on and after scooping out the seeds i rub the insides with sea salt, Evoo, crushed garlic, black pepper, and a tiny pinch of nutmeg; I roast it until the garlic and the edges of the squash begin to carmelize.
Then, before I start making it into soup, I make a separate small pot of simple, homemade cinnamon-applesauce to add some extra sweetness. I only use 1-2 apples for this. I peel and cut them into smaller pieces and cover them with water, bring it to a simmer and cook it down until the sugars start breaking down. Once it turns a golden color, I add a dash of cinnamon and cook it for another couple minutes.
Finally, I make the soup---either with homemade or low sodium organic chicken stock and at the very end I stir in a small splash of real cream.
While my Squash-Thief days are over, I promise this will be the best soup of your life!
(Plus, your kitchen will smell lovely...)

I have actually had butternut squash soup, but it is very rich and needs some sort of starchy bread type thing to balance it out. When we had it they made us a cheese scone and it was phenomenal!

I love the fall, eatable pumpkins, squash and carrots are all over. my favorite tricks are to individualize the soup with garlic, ginger and chilis.
I’m going to use the Hokkaido squash from my garden and also sour cream from cashews. I used this sour cream in few others recipes.

It's better if you roast the butternut squash, apples and onions in the oven. Then do garlic and add broth and the blended ingredients. I add coconut cream and sweeten a little with some maple syrup and some cayenne. So good.

Butternut squash soup can be fickle. But this version with the apple is genius! That sublte flavour of the apple and the thyme sent me to the moon! Absolutely delightful and perfectly constructed. I never subscribe to channels but this one definitely. Thank you chef!👌👏

I always bake my squash whole, for about an hour (or more depending on size) at 400 degrees, then it is soft and easy to de-seed and the squash just scoops right out of the peeling. Easy!
Butternut squash soup is decadent, delicious & soul satisfying.
Personally I like my soups to spoon with a broth like consistency.
When the blended butternut squash holds dips & peaks it reminds me more of a dip like hummus… (also good)
I have zero upper body strength so I’m not able to slice up a raw butternut squash so I throw it in some boiling water for a while which makes it easier to peel the skin and also to slice. One of my favorite soups!! So good. I add savory spices to mine (including curry powder) since I don’t like my butternut squash soup sweet.

whenever i make soup with potatoes i just roast them separately and add later. (after the blending for sure!)
i would also garnish with roasted pecan, almond, or i guess for wisconsin (where i am) walnut would be seasonally appropriate.

Awesome recipe, we love this, especially with coconut milk. One thing I do recommend though, is getting the Vitamix immersion blender. Just as creamy as the container blender, but no risk of burns, and way easier with less cleanup.

When I make mine I use oregano tyme chopped up cilantro and vegetable seasoning and some garlic when I have the puree mixture part of it I had and some heavy cream and the most loved ingredient of them all for me, nutritional yeast. Oh my God it makes it taste amazing. I also add chunks of butternut squash, so apart from being puree you will find chunks of butternut squash in my soup it actually makes it feel more filling and heartier. Mine version is a slightly more runnier but not too much then the one you made

Love butternut squash. Some times I roast the vegetables and sometimes boil them. And I use a stick blender because for me it’s easier. And I love how creamy the soup is without adding any milk.
I was thinking of roasting and boiling for the depth of flavor-how does roasting first compare, and what time and temp do you roast/boil?
@@chelseacco6 roasting is one method and boiling another. If you want to try a roasted butternut squash soup search online for a recipe. Generally cut squash in half and roast at 425 for 40 minutes.

My family's recipe is almost identical. The only difference is that, sometimes, we add a little maple syrup to caramelize the onions and squash before adding 2 or 3 apples then the broth. It's a nice twist to a classic.

I love to add some apples and freshly grated ginger! Ginger adds heat as well as some of that fall mood. Toasted pinenuts make a beautiful garnish, if there are no allergies. I am throwing away my recipe and replacing it with yours. Thank you, John!
@@tabithaspence8801 Tabitha, on a jelly roll pan lined with parchment, I put my peeled and seeded squash, a peeled and quartered onion, a seeded and quartered apple (SweetMango), a peeled inch of ginger, and two cloves of garlic unpeeled. I drizzle everything in olive oil, and sprinkle with salt and cinnamon. I bake at 375 for 45-60 minutes (when squash is fork tender). Into my Vitamin, I squeeze the garlic, and add everything else, including any oil from the paper. I then add the 3 cups of broth, a dry bay leaf, some fresh rosemary, freshly ground nutmeg (for Mr Townsend), and a pinch of cayenne (for Chef John) - but no MSG for Uncle Roger - and blend until smooth. I add the cup of cream (or milk or broth) and adjust the seasonings. It still must be reheated UNLESS you are using scalding hot broth (which is dangerous in a blender). I garnish with chopped pecans and minced chives.So it's Preppy Kitche's ratio (gracious, I love anything John makes and bakes), but done in an oven.

Just made this last weekend. Love butternut squash! I microwave the squash for a few minutes and it’s easier to peel. Yummmmy
It also makes it easier to cut in half. I always had trouble cutting those big squash in half but after I saw someone microwave one for a few minutes and then slice right through it, I've done it that way ever since. It's so much easier and safer!
