Panko is Japanese bread crumbs widely used for recipes that call for bread crumb coating. There are various blends of Panko. Some with larger flakes and and some with smaller flakes. For vegetarian cutlets I would say buy medium size panko crumbs. For fish too medium size. For non veg as in meats buy small size flakes. The Japanese don't fry meats as cutlets unless it's pork mainly. They feel it's greasy to fry meats as they use Tempura batter which is different from Indian batters. The Tempura flour is a mix of rice flour and corn flour. Indians use AP flour and corn flour and Indian rice flour. It's not the same as the rice flour used in Japan is different. Every rice grown in every country is different as the seed, soil natural fertilizer and water is different. Hence we can't get it quite the same as Japanese people. In any case, the Panko is right. Using large flakes can make is extremely crisp but it will hurt the palate gums and tongue when we eat. Sharp. Do not use large flakes for children and elderly.

Please correct the Tamil spelling... It is Paneer... Not Panneer... Panneer is rose water
