I live in Southern Idaho and grew up working in grandma's restaurant and our enchilada sauce is just like your second one ive been making this for over 50 years...Lillie
You are my go-to for your variety of cooking both mexican and chinese food. I only make your fried rice recipes and enchiladas. You always have the perfect ratios. Thank you for your videos and teachings ❤
I love that you do real Tex-Mex cooking. My best friend was Texican, I am TexCzech. I can cook Tex-Mex and she can make Kolaches.....our moms taught us both to cook. When our Grandmother's were giving the instructions, my friend would translate from Spanish to English and when my Grandmother was doing the teaching I would translate for her from Czech into English. My friend is still my best friend and we are in our 60's now. She swears she makes better Česnečka than I do. But my enchiladas are better than her's. LOL P.S. The lady across the street was Cajun. She taught us to make Gumbo, Hot water corn bread etc. The thing is, she did not have a daughter our age and she spoke very little English. We could not understand a damn thing she said but boy could she COOK. We both love cajun food to this day and can make a mean Gumbo. I love Texas....Texas is like taking a world tour on every block of the neighborhood.
I am so glad you are back. Mamita, you have to keep going. Do not stop making videos. I a m so sorry that I had not been watching your videos. It does not mean I don't like them. It is because, I have been busy working to make ends meat. I take care of the Elderly. That is how I get paid. I'm a Home Health Aide. I work 7 days a week. When I have time, then I see some of my favorite videos. God Bless you Mamma. Be safe. Maria.❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤❤
I make mine similar! I usually boil my onion and garlic with chicken stock then add the Chiles after I turn off the water. It just makes the blend easier for me. Add Badia Chile lime seasoning, salt and a small squeeze of ketchup to finish. I love watching you videos. Your food looks amazing!
So glad you posted these! I make mine just like your Tex mex one love it ! I’ve seen so many recipes that call for tomato sauce are you kidding me hopefully people will try and realize that you don’t put tomato sauce in Tx Mex enchilada sauce !! Thanks!!
Awesome recipe! First one I’ve seen that didn’t include tomato sauce/paste which tweaked my interest. Substituted the water for low sodium chicken broth. They taste even better on the second day. This will be my go to recipe. Thank you soooo much!
Born in Texas my grandmother made the gravy style type. But we lived on the west coast for many years and also enjoy “Colorado” style sauce as well. Going to try making some today. Thank you for sharing your video.
I love your channel, Angelica. I watch all your videos when they pop up on my phone. Instead of water, can you use chicken or beef broth? Or will this throw off the recipe too much? Thank you, and have a great New Year.
I’ve been making the gravy style enchilada sauce since the first video you made and myself and family love it! Unfortunately my mother in law had passed away and I she would just eyeball all her ingredients and I really never had a written recipe until I found your channel so long ago and I’m definitely going to purchase your cookbook because we love so many of your recipes. Thanks for all you do. God bless!
I have made this twice. It’s crazy delicious and I’m not crazy about red enchilada. The kids finish off the platter before the adults can get a bite. It’s that good. I did have ONE BITE. Perfect to make & freeze for later meals. I use 1/2 to full chicken depending if you are making one for later. Of course Costco rotisserie chicken at $4.99 rocks plus a nice sliver of velvetta in each corn tortilla. I use Asian knorr chicken bouillon because it’s a perfect balance and not as salty as knorr Mexican style pollo de caldo.
❤❤❤❤❤❤🎉🎉🎉🎉🎉I did your grandma’s recipe and joined it with re fried beans, sour cream and used homemade tortillas. It was delicious I was so surprised. Next time I’ll put 1 spoon of bouillon because I made a smaller portion because it was a tad salty but with the sour cream it made it perfect. Thank you I will be looking for more recipes. P.s My fiancé came home from work and he already like them by smelling the house when walking in.
I'm Korean, and my husband was born and raised a Texan. We're having a sudden craving for enchiladas. I'm going to make the traditional sauce using dried ancho because that's what my local store had available. I sometimes make a Korean/Tex-Mex fusion. It's comfort food for people who like it on the spicy side.
I always use your 2nd sauce when I make enchiladas. We love them. You and your recipes have made me more confident in the kitchen. Thank you so much ❤️😊
I am making the second gravy and use my oven to make some enchiladas and warm up our tummy’s and the house it’s brutally cold in New York. Thanks this was great like everything that you do.
Just bought your cookbook! Been watching your channel for a while and have made many of your recipe and they are simply great! You cook just like a neighbour we had when I was young. She and my Grandmother exchanged recipes all the time! We were Italian and they were Mexican. I grew up in the best of both worlds! We still make her pork tamales every year for Christmas. Wish my Grandmother could have written down Mrs Benevidez recipes, but neither of them could read or write in English! Bless you for writing a cook book! Bet your family were from the same area of our neighbours, because you cook just like her!
I made the gravy style sauce. It came out great. My chile powder was nothing special, just a store brand, but it worked! I had some ancho powder but didnt use it because it tasted bitter alone. So maybe I'll experiment with that one another time...TYFS!
After making a sauce recipe from another channel I knew I couldn't use it as it turned out awful! I quickly/desperately searched for an easy sauce and landed on your channel. The gravy sauce was SO EASY and delicious and saved the dinner! Thank you. It'll be my go to enchilada sauce from now on and I'm subscribing to your channel and going to binge on your videos tonight. Thank you!
You are the best!! I just made your gray style sauce and it's perfection!. I added a tiny drop of liquid smoke. Wowza. so good and so easy. Thank you very much!
I tried a recipe I found somewhere else that is similar to your gravy sauce. OMG it called for like 3 teaspoons of comino, it was an overwhelming flavor. I am definitely trying this one. You have never let me down. Thanks Mamá A🤩🥰
I just now made the gravy version wow it taste great.. I was thinking it needed tomato paste or something but it does not.. love it... thanks been wahtching you since the other channel. love your recipe's. thanks..
Made the gravy enchilada sauce this evening and it was a hit! Thank you very much for sharing this recipe…I looked forward to trying the traditional sauce in the future!!
I just made the second one, which I got from another video and I’m so glad I watched your video as you made the one with guajillo also .Thats what I had in my head when looking for an enchilada sauce recipe. While it was good, it was definitely more Tex-mex style as you said. I’m glad I now know how to make both styles and not have to rely on canned 😂. Thank you
Thank you so much! I have for years wanted to remember how to make my mom's sauce (you call it gravy).. It was the absolute best! This video nailed it... I got so much picture memory of her making it... I'm trying it out tomorrow! How do I get your book?
my favorite restaurant for enchiladas is in San Antonio and it's called el bosque. they're cheese enchiladas uses both the red sauce and the gravy. it features a large circle of the gravy and then the enchiladas laid down in that and the red sauce over the enchiladas in a smaller circle. I hope that makes sense. the combination of the two is phenomenal. make a trip there just for that restaurant, please you owe it to yourself. your recipes look excellent.
I’m so excited to get your cookbook totally just order on Amazon!! So excited to get.. I’ve made several of your Recipes.. my family loves them!! Thank you 🤙🏼
Actually, the chili “gravy” style is very similar to the very popular Sonoran (frontera) enchilada sauce. It’s lip-smacking scrumptious. I made it with my homemade leftover chili purée.
I watched every enchiladas video ( I think) and this one really helped. I am still learning Mexican food so this helped seal the understanding for variances. 😘
Well I was going to buy canned red sauce for shredded beef enchiladas and the store was out so Im going to make the gravy style. I usually do pork or chicken enchiladas with green sauce but found some beef chuck roast on sale and i dont make red sauced enchiladas often. Cant wait to try it.
My husband was asking me to make enchiladas for dinner and I lost my recipe. This video is perfect timing. I’ll probably need to go to the Mexican grocery store for the peppers. Thank you.
Hello! I made the gravy sauce a few times but tried different chili powders. One time was more delis than the others and I can’t remember what powder it was. Do you have any suggestions? Thank you love your videos and the time and effort you put into them ❤
I live in Southern Idaho and grew up working in grandma's restaurant and our enchilada sauce is just like your second one ive been making this for over 50 years...Lillie
Who are you again? lol
@@bobbyj3701 ???
The cheap, nasty no-skill version? 🤣
That’s awesome, I grew up in Idaho falls. I bet I’ve been to your families restaurant before.
You are my go-to for your variety of cooking both mexican and chinese food. I only make your fried rice recipes and enchiladas. You always have the perfect ratios. Thank you for your videos and teachings ❤
Ok I’m buying your cookbook! I’ve done a couple of your recipes and they never fail 😋

This is awesome! You two are blessed to have had all of this knowledge shared with you. 💜
Thanksgiving must be amazing at both of your houses! Lol

As a child growing up in Fresno, California, my favorite enchiladas always had the cheese and onion filling. Thank you for sharing your recipes!

Yes thank you! I can never find the canned stuff near me but now I’ll make some :)
It is so easy to make and once you see how easy and good you will never buy that canned stuff again. You can taste the chemicals in the canned sauce.
I have made her gravy-style enchilada sauce. It is super easy and tastes way better than any canned sauce I’ve found.
I saw this after I eat dinner. Gusse what I made for dinner? Your enchilada from your cook book. OMG we love them!
