I would like to say “thank you” for sharing your recipes. My sister in law married into a Hispanic family, she would NOT share the recipes she learned, the spices she used. I love cooking, and I appreciate so much your sharing!!!
Was she really doing the cooking or just bringing dishes the family had cooked? I knew someone like that once and we later found out she never cooked a single dish but had someone else cook for her. She had no clue what the recipe was because she could not cook boiling water!
Andy's is my favorite restaurant of ALL TIME (I used to eat it several times/week when I lived in Houston) and this is my favorite meal of all time. Thank you!!
I don't know Andy's but our favorite local restaurant makes the best cheese enchiladas I have ever had and I have been looking for a copycat gravy recipe for years. I made your gravy recipe today and used Monterey Jack like they do and it is spot on! Thank you so much!
I made these a month ago, then once more yesterday cause they were sooo good. I added a spoonful of Nacho Cheese to each one cause a friend claimed a restaurant did that and I didn't believe him until I saw another recipe where someone did. But I prefered this recipe, so I followed everything except for adding a little nacho cheese and it might sound odd but it tasted SO GOOD!!!
I made this tonight for dinner. I didn't use Velveeta, instead I used a Mexican cheese blend. Will definitely make again. Everyone enjoyed it and my son was spooning the sauce out of the pan lol Thank you again for sharing your recipes 😊 also, really appreciate the short to the point videos 👍
I am so grateful you decided to give this recipe a whirl. I've been wanting to know for years (30), to be exact how you make these enchiladas. I was raised in the Houston Heights area and we were regulars at Andy's Cafe. When I visit my sister, we always end up at Andy's and the nostalgia is vivid and my go to plate is always cheese enchiladas. Thanks a bunch !!! I will be making these today and I am super excited! Mil gracias!!
I love Andy's and you're dead on with the velvetta cheese. It's very creamy. So good. My mom used to make them like this. I never got her recipe before she passed. I'm making this today. Thank you.
I'm DEFINITELY going to make. And saving your recipe so I can always find it. I'm from Channelview Texas. Really Houston Texas, also. My Granddaughter and Grandson are Spanish, so I try to make Spanish food for them. When I can. They love my cooking, and they live with me with my Daughter.
I think this dish falls into the Tex-Mex category. It is certainly not Spanish. I doubt shredded velveeta is even sold in Spain....I may be wrong but I dont think so. 🤠
I have been following you for about a year and I like your VLOG very much. I used to live near Andy's and ate there at least once a week for years. YOU NAILED IT!!!!!! These are what I remember them being. The sauce is perfect. Now if you get their greens salsa recipe. Mucho caliente, but delicious. A big fan.
I craved these just after watching your video, so I went strait into my kitchen and made them. They turned out to look just like yours and they were delicious.
I made the enchilada sauce just now. She is correct when she tells us to season to our preference. I used her measurements, tasted and decided I wanted more chili powder. The cheese enchiladas are in the oven now.
Im retired, live alone, grow my own food, and thanks to you, Im a damn good cook, if I do say so myself. You make cooking enjoyable, economical and delicious.
Your recipes are right on...I have always made my grave with blend of dry chili, rehydrated in hot water, then blender time with garlic, onion, chicken bullion and spice...I'm going to try this and see how it is...It hard to teach this Abuela new ways...lol
Light chili powder is made from California red chili pods and is milder and sweeter Dark chili powder is made from New Mexico red chili pods and is more robust and a little hotter.
Thank you for your recipes. They have helped me become confident in the kitchen. My husband cooks really well so I have always felt intimidated making food for him, but lately with your recipes everything has turned out SOOOO delicious.
So this might sound weird but trust me the cheese and the sauce cover it up well. I made the recipe with one small change, instead of corn tortillas I used sushi nori. It’s not as bad as it sounds.
I'm making this tonight. We've been excited all day lol thanks mama we love your recipes soo much and I love to cook so you make me so happy :) thanks again!! Oh..also, I am using dark colored chili powder cuz I couldn't find light :( but I'm gonna look more in the future for it! Also, I couldn't find the velveeta shreds, so I have velveeta in a block..and i have Tillamook cheddar. So wish me luck! ♡
Omgosh! YES!! Andy’s Cafe enchiladas are my absolute favorite! My mom used to eat them when she was preggo with me and now are regulars at Andy’s ... Thank you so much for this recipe!! My Mom was like WOW ! Definitely making these tomorrow 🤗🤗 so excited to try this recipe
These look so good! Cheese enchiladas are my favorite! Gebhardt was my go to brand my entire adult life. We moved to Idaho three years ago and it's nowhere to be found up here, not even online. Well, not for a decent price.
I have never been to Andy’s Cafe. Actually never heard of it. I will add this to my must try places. I live in Houston and just stumbled upon your channel a few weeks ago, and I love your videos. They make me so hungry 😋!!
I love your content and I know that it is a lot of hard work to do what you do. Major respect. Please keep it up. I only make like one of ten recipes you post but every one I make is so good
The sauce is so yummy and perfect! I just made these and I thought they were so delicious but my son wasn’t a fan of the cheese (more for me 😆) but I’ll just use real cheese next time and use your enchilada gravy and it will be perfect for us. One question though, I noticed several parts of the bottom of my tortillas got really hard and we couldn’t eat the bottom side. Did I not put enough sauce on the bottom of the pan? Or was it because I only microwaved them to make them pliable and skipped the oil part? Thanks so much! Just found your channel today and I’m so excited to dive in.
Cheese and onion enchiladas from La Zona Rosa cafe, long since closed, were my absolute favorite. Haven’t had a better one since. Onions were inside the enchilada, I think. Sadly, I just remember I loved them, but don’t remember what they tasted like so I cannot duplicate. Believe me I’ve tried.
Looks just like my moms except she uses sharp cheddar. we also do a thing we can quick enchiladas where all you do is add chili powder to the oil and lightly fry the tortillas then add cheese and roll up and microwave it till melted. Takes almost no time hence the name lol.
Hi Simply Mama! I was wondering if you could do an interpretation of Luby’s Cafeteria’s enchiladas they are very delicious. I had previously seen their recipe online but as far as cooking I rather see your videos it’s easier for me. Thanks!
These look so delicious 😋. Reminds me of mine . I get so many want some . I got burnt 🥵 out bc I made them so much & mac & cheese . My father taught me to make this sauce home made . I don't do chix flav nor cumin garlic 🧄 no. Salt 🌶️ powder . Yes I fried my torts too. . No velveeta . Sharp colby .YumO

I’ve been trying to make restaurant style cheese enchiladas for so long and you finally showed me how! Thank you so much!
My mother in law use to work there ... for 15 plus year till she got sick and now she is one of our angels
So sorry for your loss.

I made this tonight for dinner. I didn't use Velveeta, instead I used a Mexican cheese blend. Will definitely make again. Everyone enjoyed it and my son was spooning the sauce out of the pan lol

I love Andy's cheese enchiladas with a fried egg on top! 😍😋
Thank you so much! I was always curious about how that specific enchilada sauce was made!
Your recipes are right on...I have always made my grave with blend of dry chili, rehydrated in hot water, then blender time with garlic, onion, chicken bullion and spice...I'm going to try this and see how it is...It hard to teach this Abuela new ways...lol

I made these they were SO good!! I make them often now!
Gosh .. I can almost tastes these YUM
This is exactly how my Tejana mom made these and so do I.
I like mixing a can of chiles or jalapenos with the Mexican shredded cheese from Sam's because it has a high content of Jack, making it really melty.
I love Andy's lol. The cheese enchiladas are good there. I eat there at least once a month
So good I will try since I never been to Andy’s Cafe since I live in New York. I will bring Andy’s here. 😋
When your cookbook pops up at end of show, does that mean the recipe is in there? Happily received it.
Looks delish! I've never seen the shredded Velveeta in my grocery store...although I see it is available from Walmart and Target
I looked it up and I’m only 15 minutes from there lol. Definitely checking it out! Thanks

You are correct about the Velveeta cheese! It's what they used in the famous Dart Bowl cafe enchiladas in Austin.
This looks a lot more like the San Antonio style TexMex gravy I prefer. Thanks! :)
Thx.
Always great.
