  • Ivor Cummins BE(Chem) CEng MIEI PMP completed a Biochemical Engineering degree in 1990. He has since spent over 25 years in corporate technical leadership and management positions. His career specialty has been leading large worldwide teams in complex problem-solving activity.
    Since 2012 Ivor has been intensively researching the root causes of modern chronic disease. A particular focus has been on cardiovascular disease, diabetes and obesity. He shares his research insights at public speaking engagements around the world, revealing the key nutritional and lifestyle interventions which will deliver excellent health and personal productivity. He has recently presented on heart disease primary root causes at the British Association of Cardiovascular Prevention and Rehabilitation (BACPR).     I'm doing keto 1 year, motivated by longevity, not weight loss. Age 63. My one craving is chocolate, satisfied with 72% or greater dark chocolate. Most often Lilly's brand. I also combine cacao nibs with butter and eurythritol. I use keto-mojo and show neuronal ketosis almost all the time. If I'm doing something "wrong" I take comfort knowing I'll die no matter (die means body is released; I don't die)and I enjoy the chocolate, the extensive exercise, my 4.5yr old son.... and the mental flexibility to avoid the idealisms of the newly converted (

    Great Podcast, cleared a few things up for me. My LDL is way up there 350 last count, my doc wanted me on a Statin, asked for CAC, but wouldn't give me one, paid for it myself and have a score of 0. Been carnivore for 2 years now at down to 11% bodyfat. I am just going to stick with this way of eating feel much better.. Only thing I have changed in the last 3 months have a bit more fatty grass fed meat, keeps me full for longer and stops the any sugar cravings.. So its high protein moderate fat. Black coffee is my only vice.

      I'd be careful with your approach. Remember as long as you are eating saturated fats your total cholesterol is a good measure of artery closure. Trigs are a secondary contributor. Maybe get a CAC scan ? ua-cam.com/video/vp1TjW28Kto/v-deo.html

      TB1M1 that is exactly what the paradigm shift we are now undergoing is proving wrong. But listen if you don’t believe that then don’t follow ivor cummins or Paul saladino of Feldman or taubes or Malhotra or anyone in this space.

      @@slikasrick There is no paradigm shift at all this is all fringe nutrition whether low carb or high carb. But even within those categories there are are healthy and unhealthy diets. But most people think high carb is high sugar while it could be if you ate grapes all day it really isn't. It is high fibre low sugar, high nutritent value. Lowish fat low protein. Most people really dont care, nor should they to be honest.

    You are living proof that good health wisdom comes way before old age. For me good health wisdom came with me living to be 69 on Keto for over a year and my current and only CAC score is 96 and my A1C has been 5.0 for 2 years and before that I was never tested, because I have a Dr that only did the test when I asked him to do it.

    I'm definitely a Saladino fan, but it is ironic that he's advertising Ancestral Supplements' beef tallow given the views on liquid fats he expressed in this discussion. The capsule containing the tallow breaks down quickly and is essentially like consuming tallow straight.

    Great Show. Thanks for the supporting information!! I too am an Engineer. That's why I didn't listen to my doctor 20 years ago about my pre-diabetes. I did as Ivor did. I did my own research. And, I came to the low-carb lifestyle quickly. I also fell into the traps of fake low-carb foods along the way. I also was brain washed into thinking we need to consume all this plant crap. Now, two decades later I eat pretty much nothing but meat (Mostly beef) and a little butter here and there.

      @@deckerdax I eat a lot of ground beef and some steaks. I eat a mixture of grass vs grain fed, but I'm not obsessed with it. I'll eat eggs occasionally. I eat 1 or 2 times a day. I just eat 'til satisfied. The carnivore diet is the simplest and easiest way of eating in my opinion. Good luck.

      @@xgenwilly8121 thank you so much for your reply. It reinforces what I think is right. Lately I just pressure cook a huge chuck roast and eat that with some eggs. My mind is still telling me that I'm hungry which of course isn't true, lol
      Coming off being a 30 year vegan.

    I collect fat from our bacon and pork to fry with. I do use butter. Eggs are best fried in bacon fat.

    My LDL is elevated also. My Ratio is 4. My cholesterol is 457. My doctor wanted me on a statin and I refused. I finally got him to order a CAC score. I’m on a carnivore diet going on 6 months. I feel so good -8 lbs down in 2 months. No pain , no meds for pain, no depression. I’m hoping for a 0 score.

      Helen Guilford how long had you fasted?
      They ask for 8 hours, but I watched a guy who talked about optimal time is 12-14 hrs.
      I waited 13 hours, my numbers were good, cac 0. I took myself off of statins around 6 months ago.
      Just makes me wonder if you aren’t fasted long enough is it accurate...

      Kamie Compton Thanks for the input. 12hrs. However my thyroid is out of whack. TSH =19. I have Hashimoto’s and found hypothyroid can raise cholesterol. I’m going to do Dave Feldman’s protocol next lab draw. Plus I drink coffee- that raises cholesterol. But glad I’m getting a CAC score. I could have damage from eating a SAD diet for most of my life. I’m 64 years old . I do workout also and lift heavy.

      Ucchi True. But I don’t have any symptoms and am very active. I worked coronary intensive care as an RN for 30 years. I’m pretty up on coronary artery disease.

    The title question is 'Does LDL cause heart disease?'. Yes, LDL winds up in arterial walls. But consider an analogy.
    Consider those 200 car winter pile-ups. Icy freeway, cars come over hill, one car spins out, then car after car after car hopelessly piles on till even the most competent and well prepared driver cannot possibly snake through and the freeway is completely blocked. No way to stop. Did the cars cause the blockage? Well, they are what physically blocked the freeway. But were they the impetus? No. The impetus was ice coating surface of roadway. The hill impaired visibility and was a factor.
    Likewise, LDL does not cause heart disease. Other factors mess up the arterial freeway (can you say, sugar). Those other factors cause the LDL to pile up. The LDL, like the car/driver, was just going along minding its own business, going where it needed to go.

      Think of cholesterol balance, trilglyceride balance.. It's not good to have high cholesterol and high trigs ( low HDL). On the other hand low cholesterol with high trigs is a problem. Aim for TC/HDL < 3.5 , LDL/HDL

Okay I’ll bite which part of that massive paper about the pathophysiology of atherosclerosis which involves mechanistic explanations (not correlation) , observational studies(correlation), clinical trails( not correlation), and genetic studies(not correlation). :) I think I’m gonna go with you have no idea what you said :). I can send you a paper on what is required for causality and a correlation is apart of that critters :). Without a correlation there is no causation :).

    When you described LDL as getting "wrapped up in the ball of wax", it sounds something like a referee in a game or fight getting caught up, and they end up taking a side and actively participating

    My doc wrote me today, “Lesley, it's good to see you again today! All your lab tests are normal except high cholesterol LDL, 145 while it was only 88 in 1/2017. Stay on low-cholesterol diet, avoid red meat, cheese (example pizza) except low fat cheese.” - I’m not showing signs of being insulin resistant; BP is 120/80, HDL is 53, triglycerides are 68, and I’ve lost ten lbs in a month. If I’m understanding The Carnivore Code correctly (listening to this podcast to reinforce understanding) then higher LDL is not a marker for heart conditions (in the presence of insulin sensitivity), but rather, is likely protecting my immune system. THANK YOU for spreading the good word 🙏🏻

      LTM ldl isn’t protecting your immune system. IR is a separate topic. Clinically LDL is important to reduce in regard to CVD. In regards to the etiology of atherosclerosis ApoB containing LDL is casual. These guys have taken you and others for fools not being well read in the literature. For your own health please listen to your doctor!

    "What do you think about this, Paul" in reference to the hyper-proliferation of seed oils.
    They "determined" that saturated fats caused heart disease and, in response, an ENTIRE industry was created to supply seed oils with the health halo of being low in saturated fat.
    Can you imagine what is going to happen when it is determined that seed oils are highly inflammatory and causal in the progress of heart disease and, perhaps, a multitude of many other metabolic illnesses.
    The restaurant industry, and the food industry in general, are going to lose their collective minds.

      Saturated fats don't cause heart disease. But they and also seed oils enable environment that harbour artery disease. For example, in most people if you eat lots of saturated fat your total cholesterol will increase and your TC/HDL ratio will increase. Or if you eat lots of vege oils your TC will drop slightly and triglycerides increase.

    This somewhat explains why alot of keto/carnivore people have issues when eating rendered or liquid fats. Tallow is real hard on my digestion and seems to induce inflammation.

    I'm back on track on carnivore after getting way offtrack for a couple years...in the last 2 weeks I've cleared up enough inflammation that I got IMMEDIATE feedback last night when I had some block Colby Jack cheese, so there were no anticlumping agents or sugars or anything sneaky like that...
    I'm DEFINITELY one of those people you mentioned, who get inflamed by dairy; I didn't even have very much and within a couple hours I started sneezing, and my nose started clogging up and I also got a wicked targeted headache in my left temple, that felt like someone had struck me with a hammer. Since I also react to at least some plant matter and eggs, due to IBS, I guess I'm going to just stick with meat fish and butter/ghee, so I'll essentially be zero carb.

    I am purposely avoiding saturated fats because it causes skyrocketing Lp-PLA2. I have never had a genetic test to find out if I have the Apo E4 gene.

      We would also need to know your HBA1c, CRP, HDL and fasting glucose to answer the question.

      HDL: 44 mg/dl
      TG: 123 mg/dl
      Total Cholesterol: 305 mg/dl
      I measure the fasting glucose with blood monitor and it's always up to 65-75 mg/dl.

      ​@@MrAbrahamkadabra Your glucose and HBA1c suggest that you are not at all at risk for prediabetes or insulin-resistance. HDL is normal. So, if you do not have other risk factors (family history of coronary heart disease, hypertension, cigarette smoking) I would suggest you are going to be fine!

    Great conversation! I would love to know how likely LDL could influence problems with patients that have HHT. Another vascular disease that affects arteries and blood vessels through out the body. It is not as widely known as atherosclerosis but is certainly important to the people who know they have it.

    When Saladino refers to dairy fat is it fat from cheese, fat from butter, or both? Both are derived from milk, so I am guessing it is both.

    It's widely known that ascorbic acid, citric acid, and malic acid all increase iron absorption. A diet high in fruits can cause high ferritin levels because those substances found in many fruits increase iron absorption from the gut. The primary dietary sources of iron are foods enriched with reduced iron and animal proteins.

    I had suffered from disbiosis of the gut for years, and that was awful! I just this month have stopped suffering and I feel fantastic for a change. I have been eating six cups of fermented raw milk and raw cheese per day for awhile. I believe that is what cured by my gut. (Been carnivore for 1.5 years and eating raw some meals for 1 year,) Dairy might be beneficial to some of us!!

    Follow up question, if the arterial wall is already damaged, the person should no longer risk having high HDL? Therefore too late to shift to carnivore diet?

      High LDL and low HDL is the undesirable marker. However if this is the case with someone it's never too late to go carnivore, but it is more that they should be careful about what exercise they do, if any, until inflammation is way down and the arteries are healing ie stronger and more flexible.

      Hard to say, it depends on your genetics. But you want your TC/HDL ratio to drop. The best diet to do this Pritikin style low cholesterol, lowish fat diet. ua-cam.com/video/4OhuQY6OKTc/v-deo.html

      Do 10 days water only fast and then go carnivore but strict one - no dairy, 0 carbs. You’ll be fine.

    So my LDL and total Cholesterol jumped with going with a ketogenic way of eating. I dropped my statin (Crestor) which I have been taking for the past 15 years. I wonder if you feel taking a statin blocks cholesterol production the body needs and could be considered negative. I am trying to get a cardiac calcium score (looking for a doctor in the US that will request it for me as I am in Canada). My Dr. Indicates that there is no reason to stop a statin just because I am on a keto diet. Wondering if you feel this is true if I am not having any side effects from the statin. Thoughts?

      Stephen, I don't know how it works up there, but here in the States it is often necessary to express willingness to pay cash for CAC/scan to induce doc to write scrip for CAC/scan. It is what I had to do as did a friend of mine.

      You Tuber My Canadian Dr requested it at Sanford in ND but they need a US Dr to request it. I would be happy to pay for a US doctor to request the procedure. I have emailed a couple of clinics but never heard back. If there is a US doctor out there that would consider helping me get the scan done, please reach out to me 😀

      The best approach in your situation is the low cholesterol, low fat diet. I don't mean no fat!! But its < 20% cal fat with lots of carbs but from natural complex fibrous sources.     You should prep people about the radical story they need to come up with at the end. It'll still be fresh to you but at least they'll have a chance to think about it before they come on. We might really get some cool stories.

    around 1h30m - I believe Rhonda Patrick takes a lot of Omega 3 because she is APOE-4. She is not a "more is better" kind of person.

    So despite eliminating seed oils and keeping insulin low, APOE4s will still develop coronary artery calcification on a high-saturated fat diet while those without APOE4 can do the same thing and lower their CAC score.
    I had to quit butter and egg yolks because of APOE4. I may have a little bit, but I'd rather have none if that's all I can have.
    Every time I see packs of butter, cheese, and boxes of eggs at the grocery store, I whisper "Damn APOE4! Do not have children!"

    Maybe Paul doesn't do much cooking. Any time you cook meat you produce tallow, lard or schmaltz. I collect it and eat it. Just me.

    Great content, but everybody keep in mind: Statins that lower LDL also do work! As these two guys said: LDL is not the cause of heart disease, but it is still required to develop it. Especially important if you have several other risk factors (e.g. Diabetes or a previous cardiovascular event).

      Yes you need either low HDL (high Trigs in the hudreds) OR high LDL. Either pattern will produce artery disease. Back when people ate lots of sat. fat their cholesterols went way up but not so much trigs. Thesedays because people eat more refined carbs and oils triglycerides increase, Cholesterol drops. But the tell tale signs are there. Focus on TC/HDL ratio. LDL/HDL ratio..

    My LDL is through the roof due to FH ;so is my apo-quota. However, my HDL/triglyceride ratio is great, my CRP is very low (below 0,8) and my HbA1c is great too. Is this still worrisome?

    I have theory about why the heart is so effected by high carbohydrate intake over any other muscles in the body. It goes like this. Glycogen is stored in muscle, when the muscle is used, the glycogen is used up. Well, what muscle in the body is used more than any other muscle? That's right the heart. It never sleeps, it never rests. It's a glycogen burning machine. So what happens when a person consumes more carbohydrates than they can store in their muscles and their cells are extra resistant to all this sugar in their blood? The body says "give it to the heart" that guy always has room. But there comes a point where even the heart can't burn it fast enough for the consumption. But the hormones don't take no for an answer and they just keep putting more and more into the heart. That's when things start to go bad for the heart and the surrounding vessels.
    An addendum to this theory too is the fact that the fats that most people are getting into their diet are processed seed oils that are rancid or just do not have biological makeup that our body knows how to process, but it's the only fats we have to work with so we use it, so we start making new cells with it. In most places it really doesn't matter, but in the heart where the cells get used more than any other cells in the body these inferior cells just don't work quite right. The poor cell quality coupled with the forced feeding of glycogen creates an environment on the brink of failure.

    I am a 58 yr old American male. 100% Western European origin. After many, many years of eating a very high fat diet and moderate animal protein, also cycling in some low glycemic carbs after workouts, I recently had a CAC test done. The score came back a ZERO. Yes, zero. I have essentially the arteries of a new-born baby. So how can cholesterol cause coronary artery disease?
    I also just had a Lipid Panel done and got the following results:
    Triglycerides - 81 mg/dl
    Total Cholesterol - 228 mg/dl
    HDL Direct - 52 mg/dl
    LDL Calc - 160 mg/dl
    VLDL Calc - 16 mg/dl
    I am eating tons of good fats, have all but eliminated all PUFA's and get plenty of good animal protein.
    So having high total cholesterol does not bother me at all because I have very good Triglyceride and VLDL levels.
