  • This super easy protein cinnamon cake great for breakfast or any time of the day.
    Ingredients:
    1. 1/4 cup quick oats
    2. 1 egg white
    3. 1 scoop vanilla protein powder
    4. 2 tsp sweetener (erythritol)
    5. 1/2 tbst cinnamon
    6. 1/3 cup water
    Method:
    1. Preheat the oven to 325F (165C).
    2. Spray a small non-stick pan or bowl 11 cm (4.5 inches across) with non-stick cooking spray.
    3. Blend the oats, egg white and water until smooth consistency.
    4. Pour the mixture into a bowl. Whisk it together with the protein powder and 1 tsp erythritol. The mixture should be like thick pancake batter.
    5. Pour half of the batter into prepared bowl and sprinkle with two-thirds of the cinnamon plus 1 tsp of erythritol. Pour the remaining batter and sprinkle with the rest of the cinnamon.
    6. Pull a knife through the batter a few times to slightly mix in the cinnamon and erythritol.
    7. Bake for 25 minutes and let it rest for a few minutes before serving. Makes 1 serve.
