    Also the older overripe bananas are best for things like banana bread as they are sweetest. Underripe (green) bananas are primarily complex carbohydrates (starch) and thus rather floury and not very sweet, but as the banana ripens, these starches are broken down into simple carbohydrates (sugars). This continues until the stach is completely broken down into sugars around the same time that the bananas turn

    I use the word “manky” and I am Canadian. But I do have a British vibe.

    Yes, we use "manky" in the States. It means icky, dirty, old, nasty, less than optimal or unappealing.
