    Homemade Marshmallows
    1/2 cup powdered sugar
    1/2 cup corn starch
    1 cup ice cold water, divided
    3 packages unflavored gelatin powder
    1 3/4 cup granulated sugar
    3/4 cup light corn syrup
    1/4 teaspoon fine sea salt
    1 1/2 teaspoon vanilla extract
    5-6 drops red food coloring
    Cooking spray
    1.Combine powdered sugar and corn starch in a small bowl. Sift half of the mixture over 3 sheet trays to coat. Reserve the other half of the mixture for later.
    2.Pour 1/2 cup cold water into a stand mixer fitted with a whisk attachment. Sprinkle in the gelatin powder and let it dissolve and soften, about 15 minutes.
    3.In a heavy bottomed saucepan fitted with a candy thermometer, combine 1/2 cup water, sugar, corn syrup and sea salt. Over medium heat bring the mixture to a boil and cook until it reaches 240F or the soft-ball stage. Immediately remove from heat.
    4.Turn the stand mixer on low and break up gelatin. With the mixer running slowly pour hot sugar mixture over the bloomed gelatin. Slowly turn the mixer up to medium speed and continue to beat the mixture for 15-20 minutes; it will become light, fluffy, white in color and triple in volume. Add vanilla and food coloring and beat 1 minute.
    5.Prepare a large pastry bag fitted with a star tip. Spray the inside of the pastry bag with cooking spray. Transfer the marshmallows to the pastry bag and pipe stars onto the prepared sheet trays, making sure to leave space between each marshmallow. Sprinkle the finished marshmallows with the remaining sugar and cornstarch mixture. Let sit at room temperature for a couple hours or overnight.

    You can also use a hand mixer to make marshmallows but you will have to whip the mixture a little longer than in the stand mixer! Safety first...Be sure to combine the hot sugar syrup and gelatin in a large, heat-proof bowl with high sides and start the hand mixer on low speed. When the mixture combines and begins to grow in volume, turn the hand mixer up to medium-high speed.

    It's best to use unflavored gelatin to make the marshmallows since flavored gelatins usually contain other ingredients that could alter the recipe. You can flavor marshmallows easily by stirring in your favorite extracts or coating the outside with crushed cookies, coconut flakes or dipping them in melted chocolate, the options are endless!

    So impressed with the styling and actually, it is why I came on UA-cam looking at marshmallow recipes - I wanted to see if it would be possible to get them round rather than square like in store bought. This is light years better! My kidlets are keen as mustard to make these stat.

    Golden syrup has more flavor than regular corn syrup. I used corn syrup because it just adds sweetness to the marshmallows and lets the vanilla come through. With golden syrup it might over power the other flavors.
    I read somewhere that they are interchangeable. Let me know if you try it! Thanks for watching.

    I followed the recipe, and whipped my marshmallows but it turned hard in the machine, it was tough to take out of the bowl i even sprayed the scraper to remove the mellow out of the bowl. I heated until 240F. What did i do wrong? Over whipped?

    Does the cooking spray not add a flavour to the mallow though? Also how do you get that sweet pinky flavour with the pink marshmallows

      caerulea0 She added bourbon vanilla to flavour, but did you know that oftentimes colours trick us into thinking flavour has been added when it is the same as plain!? So who knows, colour might be the only difference in store bough. There are studies on how colour affects flavour perception! I don't think a plain cooking spray (like canola, bad for you as it is) would have much flavour at all, but I won't be using olive oil spray. :)

    there is no way you can replace the unflavored gelatin. you can get it from any main supermarket or grocery stores and they come in different forms (hard or powder).

    She tell you to add 1/2 cup of ice water to the mixture in the bowl and the "rest of the water" to the pan on the stove. What does "the rest" mean? Half a cup? One cup? Arrrgh! She suggests a teaspoon and a half of vanilla, but it sure looks to me like she poured in much more than THAT. She is good, entertaining and to the point, which I like, but for novices like myself, every detail is important. SO … how much water goes into the pan. And if one doesn't have a pastry bag, can I just dollop or spread and cut this stuff?

      In the description it says 1 cup ice cold water, divided so half a cup mate :) and you can just pour the mixture on the powdered tray and then coat the top with the powdered mixture again get some backing paper over the top and spread it out. Let it set for 4 hours or so and slice it up :) (coat the sides again after you cut it so its not sticky)

      It doesn't matter how much water goes into the pan with sugar as long as it's enough to make a syrup. It mostly evaporates anyway and the temperature you're seeking (240F) always has the same % moisture.

      As a liqueur for flavor at the end, perhaps, since the vanilla extract is alcohol based, but not in large quantities. No more than a couple teaspoons.

      +Cat Vy Huynh you can use cooking spray as she did, or brush a lil bit cooking oil (more slippery) or rub a lil bit of unsalted butter as i did. butter make it not sticky and taste good

    I think I'm in the minority in that the nude video actually made me kinda happy. I mean, after looking at our host all day, seeing a hot naked man doesn't suck.
    Still, this is a great tutorial. I love pouring the marshmallow mixture into a big sheet tray/brownie dish and cutting out weird shapes.

    Your mom put karo syrup on your head to hold up a bow? How effective is that? Would that not attract bees, flies, hummingbirds, and holy moly an underworld of all kinds of flying creatures?!
