I cooked mine for twenty minutes but they were really brown around the edges and more crunchy. The second time i cut the cooking time a few minutes they were just starting to brown but the texture was much better.
It says to preheat your oven ... how long shud you pre heat -before outing tray in timing for 20 mins as that affects overall cooking and 20 mins can b too much and they burn - happened to me. Therefore really like to know the pre heat time ? Thanks
Tell me what wen't wrong. I have succed with another recepe. My guess is that you added the sugar to fast so that the meringue never got to stiff peaks or that your dry ingredients weren't fine enough. A tip is to pulls them in a food processor or blender.

I did this today and they turned out great! I did adjust the recipe for altitude, aka two extra teaspoons of sugar in the meringue and only baking for 10-12 minutes. I got ridges and everything!!!

to whoever that is thinking they failed...you haven't...this are not easy cookies, it requires a lot of practice and get the hang of it...keep trying, none of the best pastry chefs in the world started out being just great...they had to practice a lot too...don't be discouraged...i promise you that once you get the hang of it...you will make lots and lots always perfect..

Thanks for the tips Beth! One thing I often do is put a piece of paper underneath my baking paper with circles drawn on it. This is able to be seen through the paper, so when you're piping them, you use the circles as a guide and all of your macarons are the same size! Afterwards you just remove the paper and leave them to sit! I also often use a hair dryer to speed up the sitting process, as it makes the tops to tacky a lot faster.

+claudia miller i made this on a rainy day, perhaps i suceeded. You can turn on your oven to 100d celcius and just open it while your on the process of making these macarons. Then let it rest as long as possible, i would say minimum 30mins. When you touch the macarons and if it doesn't stick on your finger they're good to go in the oven. Hope this helps! Don't ever give up, I tried at least 4-5 times before i actually suceeded. 😊
Just made them! On my first try i suceed! :3 thank u so much. I do have a question, i used 4 baking sheets (they were too small) i baked two at a time. The two first came out perfect. The other batch came out good, however, they didnt want to come out easy. I let them cool and took them off once they cooled. But on my first batch they came out even if the cookies were hot. What happened? Also my buttercream came out horrible, next time ill follow the recipe lol

I followed your recipe to the letter and they came out BEAUTIFUL!! They were so good and so addictive! I colored my macaroons pink and used a strawberry Swiss meringue buttercream filling. Thanks for these instructions; they were perfect for a first time macaroon baker. ❤️

No macaron recipe is truly foolproof, there are too many variables where things can go wrong. You probably need to try different recipe ratios, make sure your meringue is the right consistency before mixing with your almond mix, check your macaronage technique (the folding part), then check your oven. All four of those can be just a little off and your macarons will fail, ask me how I know! My “worst “ batch turned out to taste awesome! They were so good we ate them up. I didn’t have to mess the filling because they were screwed up. Moral of the story is you really can’t go wrong.
The size of eggs are different. The white eggs should be weight, it's essential. You cannot just say 3 eggs. It doesn't work like that 😒. This recipe worked SO much better than the other one I was using (Scranton Line). Much easier to make. Not a single shell cracked. Thought I over mixed because the batter wasn’t as thick as I expected but they turned it beautiful! New favorite recipe for sure thank you!!!!!!!
Hello Beth! I am 14 years old and I attempted to make these cookies. They look impeccable but when I break it in half, it is mostly hollow inside. I followed all of your tricks and tips but they did not turn out. I might've over mixed them but when I checked it looked fine. I can't seem to figure out why they were hollow. Do you know why?

So you’ve watched countless macaron recipe videos to know everyone says “molten lava”, but didn’t bother watching molten lava footage and still found time to complain that you don’t know what molten lava looks like? Interesting. Its 3 years later and I hope you’ve found some very rare footage of what molten lava looks like.... I hear that footage is hard to come by........ I hope you gave the macarons a shot. I took me about 6 tries to finally get the consistency right. Just make the mistakes and learn. Its simple.
in the video she says mix up a half stick of butter for the raspberry buttercream but in the description box she wrote a 1/2 CUP, which is actually a whole stick of butter. so do i just stick with a half stick (1/4 cup) like she said in the video, was that a mistake?

Welp I don't wtf happened to mine I can actually call the batter perfect in first try but it's my oven that fucked things up, it heats unevenly. the back row of the tray are uncooked, the middle row was burnt and the last row is perfect (no bumps, no cracks, have feet) one of your tips said that to not touch these babies while their cooking, got any tips? except buying a new oven?

Hi there! I've attempted these macarons NUMEROUS times, and every time I get to incorporating the dry and wet ingredients, my batter comes out like dough and never gets to that batter, molten-lava-like texture. I've made sure my eggs are room temp and my bowls are clean and still can't seem to make it work! Any advice?
Some advice is to REALLY focus on the part that you have to beat the eggs and add the salt + tartar. If you can get the eggs to come out like hers (peeked and fluffy) you should be good. When beating in the sugar and almond powder also be sure to do like she says and not overmix- she says between 60-75 stirs should be good. If you follow those steps well they will come out perfect! 😁
I really don't think these pastries are worth the effort. It takes dozens of attempt to do correctly and it only makes a dozen. For that much work, not to mention the price of almond flour, they should taste great. I'm not even sure they taste good. I feel like they're just a trendy food that people fool themselves into thinking tastes good.
Food is an art or a hobby to some people, including myself. It's the fun you have and the effort that you put into your work/food that makes it special, Macarons take a bit, yes, but it's so worth it when you see the smile on people's faces when you see them eat your food. But if you stick with that mentality about food, you might as well stick with ramen and grilled cheese, it's cheap, boring, and takes less than 2 minutes to make.
You don't have to make them at home to try them. Sucrè and Laudereè (hell if I spelled that right) make _fantastic_ French Macarons that are worth the money. I can say that from personal experience. People love macarons for the same reason they love cake. It's pretty. It's edible. Macarons are especially "pretty" due to the light pastel colors they come in so females love them more than males from what I've seen.

I absolutely love macarons. I have never made them before. I found this video and decided to try. All of your tips are so right on. Today was very humid so I was concerned that these wouldn't come out right. They did not all come out perfectly, but on most of them, I GOT FEET!!! :) I was so impressed being my 1st time making them. They are so yummy and super sweet. I used strawberries for the filling but followed the same butter cream recipe. I LOVE this recipe. Thank you so much for sharing and for the tips.
So I tried making these...mixing the egg whites and sugar...I literally not even kidding mixed for 45min and it would not get stiff....:/ what am I doing wrong???
1) if you arnt using an electric whisk it's VERY hard, you have to do it very fast 2) if you are using an electric one are you sure it's a whisk? Try speeding it up too Hope that helps
I blink a lot too! It started when I switched to contacts as a teenager and gets bad if I’m concentrating or public speaking. I had it pointed out to me as a teenager, while young and impressionable and I remembered trying so hard not to do it. Soon I realized that it was involuntary and there wasn’t much that I could do about it so I let it go. Beth, I never noticed you blinking, but I’m one in the same! Hopefully I’ll share in your baking skills too!
I'm so happy i succeeded with the first try. I have been planning to make these cookies for a long time. I think the key is the egg whites have to be really stiff. Make sure to beat them long enough and the mixing is also important.

Humidity makes them crack and it won't puff up correctly 😭. I made them on a rainy day, despite everyone saying not to.
+claudia miller i made this on a rainy day, perhaps i suceeded. You can turn on your oven to 100d celcius and just open it while your on the process of making these macarons. Then let it rest as long as possible, i would say minimum 30mins. When you touch the macarons and if it doesn't stick on your finger they're good to go in the oven. Hope this helps! Don't ever give up, I tried at least 4-5 times before i actually suceeded. 😊

I do have a question, i used 4 baking sheets (they were too small) i baked two at a time. The two first came out perfect. The other batch came out good, however, they didnt want to come out easy. I let them cool and took them off once they cooled. But on my first batch they came out even if the cookies were hot. What happened?

No macaron recipe is truly foolproof, there are too many variables where things can go wrong. You probably need to try different recipe ratios, make sure your meringue is the right consistency before mixing with your almond mix, check your macaronage technique (the folding part), then check your oven. All four of those can be just a little off and your macarons will fail, ask me how I know! This recipe worked SO much better than the other one I was using (Scranton Line). Much easier to make. Not a single shell cracked. Thought I over mixed because the batter wasn’t as thick as I expected but they turned it beautiful! New favorite recipe for sure thank you!!!!!!!

Hello Beth! I am 14 years old and I attempted to make these cookies. They look impeccable but when I break it in half, it is mostly hollow inside. I followed all of your tricks and tips but they did not turn out. I might've over mixed them but when I checked it looked fine. I can't seem to figure out why they were hollow. Do you know why?

It's work. It'll just take longer. It can be quite a workout actually!
I don't think it's worth it! I bought a mixer at Walmart for 20$ and trust me, it's a life saver! So save the effort and just buy a handheld mixer!

I hope you gave the macarons a shot. I took me about 6 tries to finally get the consistency right. Just make the mistakes and learn. Its simple.
in the video she says mix up a half stick of butter for the raspberry buttercream but in the description box she wrote a 1/2 CUP, which is actually a whole stick of butter. so do i just stick with a half stick (1/4 cup) like she said in the video, was that a mistake?

Welp I don't wtf happened to mine I can actually call the batter perfect in first try but it's my oven that fucked things up, it heats unevenly. the back row of the tray are uncooked, the middle row was burnt and the last row is perfect (no bumps, no cracks, have feet) one of your tips said that to not touch these babies while their cooking, got any tips? except buying a new oven?

Hi there! I've attempted these macarons NUMEROUS times, and every time I get to incorporating the dry and wet ingredients, my batter comes out like dough and never gets to that batter, molten-lava-like texture. I've made sure my eggs are room temp and my bowls are clean and still can't seem to make it work! Any advice?

Some advice is to REALLY focus on the part that you have to beat the eggs and add the salt + tartar. If you can get the eggs to come out like hers (peeked and fluffy) you should be good. When beating in the sugar and almond powder also be sure to do like she says and not overmix- she says between 60-75 stirs should be good.
If you follow those steps well they will come out perfect! 😁

This recipe is by far the best, ever. I didn't have cream of tartar so I omitted it, they turned out perfect.
I really don't think these pastries are worth the effort. It takes dozens of attempt to do correctly and it only makes a dozen. For that much work, not to mention the price of almond flour, they should taste great. I'm not even sure they taste good. I feel like they're just a trendy food that people fool themselves into thinking tastes good.
Food is an art or a hobby to some people, including myself. It's the fun you have and the effort that you put into your work/food that makes it special, Macarons take a bit, yes, but it's so worth it when you see the smile on people's faces when you see them eat your food. But if you stick with that mentality about food, you might as well stick with ramen and grilled cheese, it's cheap, boring, and takes less than 2 minutes to make.
You don't have to make them at home to try them. Sucrè and Laudereè (hell if I spelled that right) make _fantastic_ French Macarons that are worth the money. I can say that from personal experience. People love macarons for the same reason they love cake. It's pretty. It's edible. Macarons are especially "pretty" due to the light pastel colors they come in so females love them more than males from what I've seen.

I absolutely love macarons. I have never made them before. I found this video and decided to try. All of your tips are so right on. Today was very humid so I was concerned that these wouldn't come out right. They did not all come out perfectly, but on most of them, I GOT FEET!!! :) I was so impressed being my 1st time making them. They are so yummy and super sweet. I used strawberries for the filling but followed the same butter cream recipe. I LOVE this recipe. Thank you so much for sharing and for the tips.

So I tried making these...mixing the egg whites and sugar...I literally not even kidding mixed for 45min and it would not get stiff....:/ what am I doing wrong???
1) if you arnt using an electric whisk it's VERY hard, you have to do it very fast
2) if you are using an electric one are you sure it's a whisk? Try speeding it up too

You should mix for a total of 8 minutes; 4 min with just the egg whites, and 4 min slowly adding the sugar.

I blink a lot too! It started when I switched to contacts as a teenager and gets bad if I’m concentrating or public speaking. I had it pointed out to me as a teenager, while young and impressionable and I remembered trying so hard not to do it. Soon I realized that it was involuntary and there wasn’t much that I could do about it so I let it go. Beth, I never noticed you blinking, but I’m one in the same! I'm so happy i succeeded with the first try. I have been planning to make these cookies for a long time. I think the key is the egg whites have to be really stiff. Make sure to beat them long enough and the mixing is also important.
