    According to the manual (of the Brew-monk, at least), the idea is to regulate the wort-flow coming in at the top using the blue valve to such a level that there is NO overflow via the central pipe in the middle.
    The reason given is that you risk draining the bottom of the kettle and damage the heating-element and/or scorch the ingredients.
    Another reason to not have it happen (too much) is that you want there to be a limited amount of liquid-pressure on top of your mash-bed. The pressure differential between top and bottom can result in the grain-bed being compressed into a more dense mass; especially if you had a very fine milling-size on the grist.
    That can lead to a 'stuck mash' that becomes worse and worse as you try to push the wort through it by putting more and more 'wort-height' on top of it just to push it through. The overflow tube on the brewmonk is a good feature to prevent having wort spill over the floor, but for small mash-sizes it's likely still too much wort ontop of the mash ; a few inches (2 or 3) should be more than enough.
    Going higher can result in problems *especially* when Wheat or Rye malts are concerned. These produce an almost gelatinous substance during mashing that can be a real pain and *easily* clog up your grain bed.
    Ontop of that, there is the risk of forming 'channels' in the grain-bed, where wort will start to pass through easily and make a vertical 'tunnel' through the bed that will result in the rest of the grain-bed being left almost 'dry' without any wort passing through it (and thus not helping in conversion of starches)
    Remember that in brewing, the grain bed is BOTH the supply of starch-and-enzymes as well as your filter for clearing materials out of it. The metal screens at top and bottom would not be able to function as sieves/filters by themselves. They'd be clogged in no time at all. Be kind to your grain-bed and it'll reward you with a high conversion-rate.
    Since the idea of the Brewmonk/Klarstein is to raise the mash-bin out of the wort and flush it through with water to get the remaining sugars out, it's essential that liquid can pass through it easily and homogenously. If you've gotten vertical 'tunnels' to form, this process will not end up being very efficient at getting much sugars out at all.
    Note, however, that with smaller batches, these problems are less likely to pop up, as pressure differentials and mash-compaction are not as strong as with larger batches; but I've had it happen with a 30L mash vessel with rye or wheat in it, nonetheless. It is likely that barley-malts will result in these kinds of issues as well if you mistreat 'm.

      The machine worked well. We´ll be bottling today and have a tipple in a couple of weeks. We will have a first Impression today straight outta bucket.

    Kleiner Tipp am Rande. Für die Nachgüsse würde ich das Maischerohr nicht raus ziehen, denn dann läuft der Treber leer was nicht wirklich gut ist. und zusätzlich kommt zu viel Sauerstoff in die Würze was beim Läutern auch nicht gut ist. Besser das malzrohr kurz anheben danach sollte die Würze wunderbar laufen. Lg

    in around 3:10 as I understand it right the heated worth is pumped up with external pipe and then it goes almost immediately through middle pipe to heater again and external pipe again. Does it make any sense? Is the grain in the basket not not cicrulating with worth?

      RandomGuy The grain in the basket is surrounded by water. The pump was a bit to full on. Thats why the water was also running through the middle.

      I have the same problem like RandomGuy, the method is the same with the Grainfather too. The water is pumped to the top, it goes down immediately on the pipe, and it is pumped back to the top again. So the water is not really circulating around the grain. There is an another solution, the grain holder bucket has a silicone seal in the bottom and the water is pumped trough the grains from below, then it can flow back like in this machine.

      Beim Kochen darf die Pumpe beim Mundschenk nicht laufen, die ist nur zum Maischen geeignet.

    I have brewed 6 beers on the device, but last time the device turned off repeatedly after 60 minutes of the boiling process ( I was aiming for an 85 minite boil). There was a click as if an electrical breaker in the heating element turned off. Do you have any recommendations on what I can do to avoid that? The room temperature was a mild summer evening (25 Degrees Celcius).

      I have the same issue with similar Klarstein product: it overheats and shuts off. Stirring solves it - but is annoying

      Try lowering the heating power after you have reached boiling. Do not activate the pump during boiling.

    hi mate, what do you think is the maximum volume (into the fermenter) we can do with this brewery? I ordered one.. I see the common is to get aroung 23 liters in the end, but Im planning to have a little more (like 27 liters). I do a 60 min boil, so if start the boiling with about 32 liters (after sparge) it should do. (consdering losses of around 3 liters boils off and 2 liters trub). Just not sure if this equipment supports that. Thanks

      good question. I think more than 23 litres is hard. Dont forget the amount of malt you will need. The malt tube is the limitation i think.

    Hi, do you set 67C mashing temp and then add grain so the temp falls down and then the heater has to heat it or do you set higher temp then the actual mash temp?

      Sorry, but i don't have records about how much infusion water we used. Maybe minimum 8 liters.

      Hi, look for brew Monk, brew cat, Klarstein Mundschenk, ist all the same chinese Equipment. But it works.

    hi, could somebody tell me what is the minimum power that the Mundschenk is able to use? is see that in the video the guy lows the power to 2000W but is it possible to work with less? what is the minimum? thank you

      It is possible, but the heating and boiling time is 3x longer. From 65 C° to boiling takes 1 hour.

    Brauheld, its somesimilar with Klarstein Mundschenk. I have big problem, the malt always burns on the temperature near 50 degrees. I tried less power but the result is same. Have you some experience with it? How to avoid it? I need help)) Thanks all.

      The Brauheld also has a grain bucket. So this should make burning the malt impossible. Crazy....

      The RoboBrew is is only 30lt and you cant program the steps. Its all manual. The new RoboBrew does have a timer to heat your mash water in the morning which I like.

      Du bist ziemlich deutsch... This is a recipe for Pale Ale; not a light pilsner.
      It is of course possible to not like the taste of hops in beer, but 3-5g of hop per liter is perfectly acceptable for ales, bitters and such. India pale ales have 'permission' to go much higher than that yet.
      I like german beers, generally. There are some great brews out there, but it's sad to see just how little germany is willing to experiment when it comes to hoppy flavors; despite having a great hop-culture.
      The same is true for the belgians, for that matter.
      The dutch (yes, I am dutch) are 'lucky' that Heineken pretty much killed off all traditions we used to have, so that we are more easily able to re-invent ourselves (and hopefully get Heineken to dissapear , some day).

    Servus,Griasde! Mal ne Frage! Wenn es im Gärgefäß ist,wie sollte man diese am besten Lagern? In der Wohnung bei ca 18 Grad oder welche Richtlinien wären da nie verkehrt?

      Templerorden der Freiheit. org Bei gleich bleibender Gärtemperatur(hängt von der Hefe ab) in der Wohnung. (bei der Gärung entsteht auch etwas Wärme im Eimer!)
