Never rest your thermometer in your pot. It's resting on the hot steel of the pot's bottom, ot in your jam, and gives you inaccurate readings. In time it will destroy your thermometer's internal balance mechanism. If you use a thermometer, make sure you hold it in the liquid you're cooking, until it reads. C'mon ladies, don't slack! You risk ruining your entire batch of candy/jam if you can't hold onto your thermometer long enough (seconds) to take a proper measurement. I don't know about everybody else, but in these times of prepping, storing goods, and being food secure, I can't afford to destroy an entire batch of jarred goods $$$$$$.
