    This is an amazing idea. Love the simplicity of this. I wanted to build one which packs down and can take camping so I can use as an oven as well. Also multipurpose so I can use as a barbeque as well. Ypur idea has helped me so much. Thanks

    This is the best wood-fired portable pizza oven idea I have seen.
    Looks very light-weight, which makes it very portable, imho.
    Bonus points for low-cost and ease of DIY.

    Nice build! Simple design and works well. A little thicker stone and bigger coal bed with a little less flame on the fire and I think you’re in the zone. Great job!

      BrainRight I make my own fire brick for my pizza ovens using sand and water glass, you can make it any size very cheap. You could even make it the same size as your space in the pan for more thermal mass.

    This is exactly what I was looking for. Literally as simple as it gets and I could set this on top of my weber kettle or maybe even on my gas grill.

      Glad you found it useful. I think it would work okay on a grill but probably wouldn't get as much heat on top (from flames washing over the roof) so would probably make more like a conventional oven and would probably take a bit longer to cook. When I use a grill I just put a pizza stone right on the grill grate and it makes good pizza that way so you might want to try that before building something like this.

    Could you simplify it by offsetting the two pans instead of cutting the big hole? Maybe cut slots for the threaded rods instead of holes so you would not have to remove the thumbscrews, just loosen them a bit to disassemble it. Finally, would some kind of insulation on the top make it more efficient and a bit safer?

      Those ideas sound like they could work. The insulation might make it harder to pack into a small size (which is important in our new camper van) and efficiency isn't a big concern when it's fueled with sticks. It actually seems to be fairly well balanced in terms of producing good pizza with a "medium-sized" fire so a design change would take some experimentation to get it dialed in. We just took it on an overlanding trip and it worked great making pizzas for 6 people.

    Ottimo inizio ma usare il gpl per creare la fiamma è molto meglio, più pulito più pratico e più semplice anche perché ottieni lo stesso risultato senza mangiare una pizza nera. Si vede che non riesci a controllare il calore a differenza di un uso della fiamma regolata dal rubinetto del gas. Provare per credere. Comunque complimenti per l'impegno.

    Jay, thank you for this excellent video. Brilliant idea, using those standardized food pans. I had expected a lack of thermal radiation from above the pizza, but there seems to be enough coming from the flames?

    Great idea ! I wonder if it’s the newspaper that’s putting all the ash in the pizza oven , also I wonder if drilling a whole lot of small holes around the outside instead of having one big hole at the back will help with ash and control of heat ( kind of simulate the Ooni pizza oven ( I know they are gas )

      I think it's mainly the wood fire that's bringing ash into the oven, and it (usually) lacks the super-high heat that tends to burn off all the ash in a large wood-fired oven. It's no big deal for us though, because we assemble our pizzas on parchment so the pizza never contacts the pizza stone directly and doesn't accumulate any noticeable ash on the top during the brief cooking time. Using parchment is a tradeoff but it has worked out well. Having lots of small holes could certainly work, though it wouldn't get the flames washing over the roof like we do so it would probably behave more like a conventional oven and less like a broiler.

    great job!! i wonder how good a propane stove(like the one's they use for cooking in chinese cuisine) would work here, it's easier to use than wood when it comes to maintaining temperature

      Thanks. I'm sure you could make a good pizza oven that uses propane, and no doubt it would be easier to maintain temperature. But I prefer using wood for a portable oven to take hiking and camping because I don't need to carry fuel with me.

      I think that any oven with a fire inside is going to be bigger and less portable. That's a tradeoff I made, to make the oven itself as light and portable as possible.

    wood fired pizza ovens run on beech, as other wood create ash that is flying around the oven and ends up on the pizza, ruining the taste

    This is great! Question: do you think adding stainless steel mesh to the opening of the bottom tray, above the fire would cut down on the amount of ash coming into the oven?

      Thanks! A stainless mesh might reduce the ash, but if it's fine enough to make a difference I think it would also cut the airflow and might make it harder to get flames passing above the top of the pizza. I do get some ash coming in but it's not much different than a typical wood-fired oven in that regard.
