    My first age legal job was at a New York style Jewish delicatessen. I started on my 16th birthday and worked there for four years while in high school. Of all the wonderful foods that I was exposed to, the chicken liver pate was one of all time favorites. Unfortunately it's hard to get good authentic pate anywhere now unless you make it and this recipe is spot on. I'll be making it soon. Thanks Joel.

    The addition of the green peppercorns is GENIUS... THANK YOU. We don't eat pork so I always feel like I'm missing out, but the peppercorns has made up for that.

    Joel, thank you for reminding this recipe. I adore this pate on toasts with onion marmalade or plumb chutney. Absolutely simple to cook and fantastically gorgeous to enjoy.

I love Liver Pate and that looks absolutely divine, with an added bonus of a perfect Appetiser .... 'Wonderful Perfection' ...... And a 'BIG' treat for darling Whiskey ..... What's not to love .....     We love chicken liver pâté !! Yours is a very nice recipe Joel, the green peppercorns are a great idea/addition👍Of course the caramelised onions will be divine with it and the lovely crunchy croutons, oh yes not forgetting the cornichons.

    My cholesterol went up just watching this! Butter, bacon, cream, more butter - definitely not something you want to eat regularly, but a great special occasion treat. Looks delicious!

      Actually, it’s sugars, starches, processed food, fructose that produce fatty liver and triglycerides. Pate is nutrient dense and as long as your not consuming the above mentioned it won’t even cause fat gain. The liver makes cholesterol and if consumed, the liver will make less. Sadly there’s so much misinformation regarding nutrition, cholesterol etc.

      @@NightTimeDay sure one can overeat on anything, however, the pate is very nutrient dense and satiating, so it’s unlikely one will overeat. Other than mother’s milk no natural food contain both sugar and fat….that’s a real culprit to fat gain.

    OMG you’ve done it again! Yummmmm the best pâté I’ve ever had.. and home made organic 🤤 And my first flambé! What an amazing aroma from the flaming brandy. The hardest part is getting it all out of the Vitamix and trying not to eat it all at once 😂👍👍

    I always let the liver soaked for a 10-15 minutes in milk. My mom would make pate this way. My experience is it helps to get rid of the excess blood. Just different taste.Nice recipe, as always.

      The Vietnamese make a pate but it is nowhere near as good as this. My Viet wife recently made a vegetarian pate whose primary ingredient was nut butters.

    I only buy liver to make dog biscuit treats. This looks like something the whole family would like. Whiskey makes a grand entrance at 1:28 and nails the finale. Never seen this recipe before, looks healthy.

    I just made a double batch, it's DELICIOUS! Wow!
    I left out the bacon, green peppercorns and brandy,
    because I didn't have any on hand and left out the
    added salt, because I never use much salt and the
    salted butter is plenty salty for me. It was so good
    I had to lick the bowl.😋
