Ingredients:
3.1lbs Beef Shanks or Chuck roast meat
4 Cups Water
1 Chipotle Pepper in Adobo Sauce
3 Guajillo Chiles
1 Ancho Chile
1 Pasilla Chile
1 Cup Water
2 Bay Leaves
2 onions (one for Broth the other for tacos)
1 Carrot
2-3 Tbsp Minced Garlic
2 Tbsp Beef Bouillon Powder
1 Tsp salt
2 Tsp Mexican oregano
1 Tsp Dried Thyme
1/4 Tsp Cinnamon
1/8 Tsp Ground Clove
1/4 Tsp Sugar
1/2 Tsp Black Pepper
1 Tsp Cumin
1/4 Tsp Smoked Paprika
1/8 Tsp Cayenne Pepper
1/8 Tsp Ginger
1/8 Tsp Coriander
Corn tortillas
Mozzarella cheese
Cilantro
3 Roma Tomatoes
Half of a Diced Onion (1/2 Cup diced onion)
Juice of 2 Limes
1/2 Tsp Salt
Corn tortillas
