    Hey! This was a great video! I did it exactly as you did,and it came out great!! To all of you commenting about time, recipe and such....learn to improvise!! When the thermometer reaches the correct temperature for what you're cooking,then it's done!!

    If you would take the IT temp to 205 you would finf it will turn out much better! I have over 142 butts cooked in infrared to date and always go to 205. OBTW yours does look very good!

    Did you have it on high or low? I out mine in a basket that raised it higher for more heat and ended up burning it pretty badly... I'd definitely put it in the bottom of the basket next time for less heat, but do you recommend putting the flame on low?

    How big was the piece of meat and how long did it take you to cook it to the correct temp?

    185° - 190° is safe but 195° - 200° is tender enough that you can pull it apart with a fork.

    For those who ask for time it takes to finish, just remember meat is meat and it's done when it wants to be done. I find 4 to 5 hrs for an 8-9 lb butt and 5 to 6 for an 10 lb. Just keep in mind there is a lot of fat/tissue that needs to melt down and that will cause it to cool as it cooks. Like to learn more about these, comment here?

    I agree with IT temperature and not time. But, 30 min. per pound is a good start. Enjoy!!!

    Big easy is too hot for a full smoke. Im gonna smoke mine for an hour and finish in the crock pot for another 4 hours.
