@@higashi6969 : No, I meant "hog leg". They have a hog's front leg without shank and trotter. The butt is the shoulder and with the picnic (?ham?) attached it is a leg. I've been butchering hogs all my life.

When I first started smoking I used Malcom's recipes and learned how to cook meat on the smoker from him. Now I watch everyone and use different recipes that I make my own.

Growing up in the south, BBQ was just part of life, then moving up north for 30 years, I can say that the onset of personal small smokers did amazing things to bring smoking back to every back yard. It is one thing that all of us have in common, great food, and there is never a stranger around the food table. Love Malcom and AB and what they bring to the table, keep up the great work men

I have been watching Malcom Reed for over a year and now I am adding AB. Living in Germany, it is nice to give my coworkers some homestyle BBQ. Nothing better then when I am asked to cook for an Airman;s or Soldier's going away because they think my BBQ is as good as any that they would get in the states
Pork Shoulder is on SALE at my local grocery store, then I see this awesome video that clearly explains how to easily create a large amount of tender flavorful meat, I say IT'S A SIGN from the BBQ GODS!! My question: If I call ahead, do you know if a grocery store butcher can cut me a whole shoulder with the neck like the one you just cooked or do I need to go to local butcher shop? Thanks!

So glad I watched this. I’d always been missing that last step cotenant with barbecue and putting it back on for 15 minutes is a big difference.
